This is the tastiest soup I've ever encountered and the only one I'll ever submit. For a thicker sauce use more cream and less milk.

2 tablespoons unsalted butter
1 yellow onion, finely chopped
4 stalks celery, cut into 1/4-inch slices
1 tablespoon finely chopped fresh thyme
salt and ground black pepper to taste
7 potatoes, cut into 1/2-inch pieces
2 cups whole milk
1 (15 ounce) can fish broth
1 cup heavy whipping cream
1 (8 ounce) bottle clam juice
1 ½ pounds Dungeness crab meat, chopped

Steps:

  • Melt butter in a large pot over medium heat. Cook and stir onion, celery, thyme, salt, and pepper in hot butter until onion and celery start to soften, about 5 minutes. Stir potatoes, milk, broth, cream, and clam juice into onion mixture. Bring to a simmer; cook until potatoes are soft, about 10 minutes.
  • Pour broth mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return pureed soup to pot and stir in crabmeat. Cook until soup is hot and crab is heated through, about 5 minutes. Season with salt and pepper.

1/4 cup butter
12 Oz clam juice
4 Oz clam base
1/2 cup chardonnay
1 1/2 pounds russet potatoes (cut in half and julienned)
1 medium yellow onion (cut in half and julienned)
1 Tbs Italian seasoning
3/4 Tbs black pepper
1 half gallon half&half
1 cup of water
3.3 Oz of corn starch or little less than a cup
Half pound of Dungeness crab meat (substitute with chopped clams if fresh seafood is unavailable)
8oz sour cream
8oz mayo
1/2 cup butter (melted)
1/2 cup garlic (minced)
6oz shredded parmesan cheese

Steps:

  • Use two separate pots, in one add half&half and heat medium high (do not boil) add corn starch and whisk well.
  • Base:In the other pot all at once add water, clam juice, clam base, chardonnay, butter, Italian seasoning, pepper, potatoes, and onions. Cook at medium high until potatoes get soft and then add crab meat (or clams if crab is unavailable)
  • Once half&half+corn starch mixture is heated up and thickened, add base and stir. Able to serve right away
  • Mix all together and that's it. Spread on bread and toast or add to a steak sandwich. Mom used it for everything

Creamy, delicious New England Clam Chowder full of onions, bacon and clams. Each bite is packed full of flavor!

4 cups water
2 chicken bouillon cubes
5 medium Yukon gold potatoes (unpeeled, diced (about 1 ½ pounds))
2 cans chopped clams with their juice (6.5 oz each)
4 slices bacon (chopped)
¾ cup chopped yellow onion
3 Tablespoons unsalted butter
1/3 cup all-purpose flour
4 cups whole milk
Salt and pepper to taste
2 Tablespoons chopped parsley for garnish (optional)
Crusty bread for serving

Steps:

  • In a large pot or Dutch oven, bring water and bouillon cubes to a boil. Add diced potatoes and cook for about 10 minutes until fork tender. Drain and set potatoes aside. Rinse and dry the pot for the next step.
  • Over medium heat, add bacon and onions to the pot, cook until bacon is crispy, and onions are translucent, about 8 minutes.
  • Add the butter to the pot. Once it is melted add the flour, stirring constantly, until smooth, about 2-3 minutes. Add the milk one cup at a time, thoroughly stirring until incorporated. Allow liquid to come to a boil until thick and bubbly, and then reduce the heat to a simmer.
  • Add potatoes and clams with their liquid to the pot. Add salt and pepper to taste. Serve and enjoy!

1 yellow onion, diced
2 stalks celery, diced
4 ounces (1 stick) butter
3/4 cup flour
10 slices bacon, soft cooked and chopped
5 medium potatoes, peeled, diced and par-boiled for about 5 minutes
1/4 cup chopped fresh parsley
1/4 teaspoon paprika
1/8 teaspoon garlic salt
1/8 teaspoon celery salt
1/8 teaspoon white pepper
1 teaspoon seafood seasoning
Salt and freshly ground black pepper
1 quart milk
1 pint heavy cream
1 can corn
1 pound Maryland blue crabmeat

Steps:

  • In medium soup pot, saute the onion and celery on medium heat, with butter, until translucent, about 2 minutes. Turn heat to low, add flour, and mix well until pasty. Using a whisk, stirring slowly, add soft cooked bacon, diced cooked potatoes, parsley, paprika, garlic salt, celery salt, white pepper, seafood seasoning, and salt and pepper, to taste. Mix, and then slowly add the milk and cream, stirring constantly. Add the corn, and finally, gently fold in the crabmeat. Stir slowly. Serve hot.

1 onion , finely chopped
1 leek , green and white parts separated and sliced
2 carrots , chopped
850ml-1 litre/1.5 pints - 1.75 pints low-sodium chicken or vegetable stock
1 large potato , diced
175g/ 6oz frozen sweetcorn
170g can white crabmeat , drained
4 tbsp light crème fraîche
1 tsp chopped chives

Steps:

  • Put the onion, white part of the leek and carrots in a large pan and pour on a few tbsp of the stock. Cook over a medium heat for about 10 mins, stirring regularly until soft. Add a splash more stock if the vegetables start to stick.
  • Add the potato, green leek and most of the stock, and simmer for 10-15 mins, until the potato is tender. Tip in the sweetcorn and crab meat, then cook for a further 1-2 mins. Remove from the heat and stir in the crème fraîche and some seasoning. Add the rest of the stock if the soup is too thick. Sprinkle with the chives and serve with brown bread, if you like.

This is a basic New England clam chowder, though with leeks used in place of the traditional onions, and a splash of wine to add a floral note. Also: thyme. Very continental! It is shockingly delicious and deserves its title as best. Bacon will add a smoky note to the stew. If you use it, it may be worth it to go the whole distance and get expensive double-smoked bacon instead of the standard supermarket fare. The salt pork, which is not smoked, will take the meal in the opposite direction, emphasizing the pure flavor of the clams.

24 medium-size quahog clams, usually rated ''top neck'' or ''cherrystone,'' rinsed
1 tablespoon unsalted butter
1/4 pound slab bacon or salt pork, diced
2 leeks, tops removed, halved and cleaned, then sliced into half moons
3 large Yukon Gold potatoes, cubed
1/2 cup dry white wine
3 sprigs thyme
1 bay leaf
2 cups cream
Freshly ground black pepper to taste
1/4 cup chopped parsley.

Steps:

  • Put the clams in a large, heavy Dutch oven, add about 4 cups water, then set over medium-high heat. Cover, and cook until clams have opened, approximately 10 to 15 minutes. (Clams that fail to open after 15 to 20 minutes should be discarded.) Strain clam broth through a sieve lined with cheesecloth or doubled-up paper towels, and set aside. Remove clams from shells, and set aside as well.
  • Rinse out the pot, and return it to the stove. Add butter, and turn heat to medium-low. Add bacon or salt pork, and cook, stirring occasionally, until the fat has rendered and the pork has started to brown, approximately 5 to 7 minutes. Use a slotted spoon to remove pork from fat, and set aside.
  • Add the leeks to the fat, and cook, stirring frequently, until they are soft but not brown, about 10 minutes. Stir in potatoes and wine, and continue cooking until wine has evaporated and the potatoes have just started to soften, approximately 5 minutes. Add enough clam broth to just cover the potatoes, approximately 3 cups, reserving the rest for another use. Add the thyme and the bay leaf.
  • Partly cover the pot, and simmer gently until potatoes are tender, approximately 10 to 15 minutes.
  • Meanwhile, chop the clams into bits about the size of the bacon dice.
  • When potatoes are tender, add cream and stir in chopped clams and reserved bacon. Add black pepper to taste. Let come to a simmer, and remove from heat. (Do not let chowder come to a full boil.) Fish out the thyme and the bay leaf, and discard.
  • The chowder should be allowed to sit for a while to cure. Reheat it to a bare simmer before serving, then garnish with chopped parsley. Serve with oyster crackers.

2 celery ribs, chopped
1 large onion, chopped

1/4 teaspoon white pepper
1/4 teaspoon dried thyme
1/3 cup all-purpose flour
2 cups fat-free half-and-half, divided
2 cans (6-1/2 ounces each) chopped clams, undrained

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels to drain; set aside. Saute celery and onion in the drippings until tender. Add garlic; cook 1 minute longer. JIM'S NEW ENGLAND CLAM CHOWDER

After years of watching my New England relatives try to perfect their versions of this venerable seaside staple and several morphs and versions of my own, this has become my favorite. It yields a hearty delicious chowder that is not too thick. It is also forgiving enough that you can tweak it a bit to make it more healthy. For parties, I make this recipe as follows then place it in a crock pot on low. Guests eat it all day and there are never any leftovers!

Number Of Ingredients 10

1 (51 ounce) can clams (chopped or minced, Costco or BJ's carries these size cans)
3 lbs Red Bliss potatoes (you won't have to peel the bliss!) or 3 lbs maine utility potatoes (you won't have to peel the bliss!)
6 ounces salt pork
3 celery ribs
1 large onion
2 cups milk (I use 2%)
1/2 cup butter
1/4 cup flour
1 sprig fresh rosemary, in cheesecloth or 1 teaspoon dried rosemary, in a tea ball
salt and pepper

Steps:

  • Dice the salt pork into small cubes.
  • I usually slice it into a grid while it is still attached to the skin, then slice across the skin where it attaches to the fat and the cubes pop off easily.
  • Sauté the salt pork in a large 5 quart non stick sauce pan.
  • When the cubes are golden brown strain them from the rendered fat onto a paper bag to drain.
  • Save 4 tablespoons of the liquid fat from the salt pork,then wipe out the sauce pan with a paper towel.
  • Put the fat back in the sauce pan.
  • Dice the large onion into small pieces.
  • Slice the 3 ribs of celery lengthwise then dice it into small pieces.
  • Place the diced onion and celery into the heated pork fat and sauté until the onions are opaque and the celery is a bit soft.
  • Pour the entire can of clams (broth and all) into the onion/celery mixture and bring to a simmer.
  • Place the rosemary into the clam broth mixture.
  • Peel the Maine potatoes OR scrub the red bliss potatoes.
  • Then cut them into 3/4-inch cubes--I like them a bit chunky--and soak them in cold water for about five minutes.
  • Take the stick of butter and melt it in a small sauce pan.
  • Add the 3 tablespoons of flour to the melted butter and stir until well blended.
  • Drain the potatoes and place them into the clam mixture, simmer until al dente.
  • Next, pour the 2 cups of milk into the simmering clam broth mixture and bring back to a simmer.
  • Lastly, swirl the butter/flour roux into the chowder and simmer for about 10 more minutes until the chowder thickens.
  • Remove the rosemary and serve this chowder in big bowls with oyster crackers and the pieces of golden brown pork fat, salt and pepper to taste.
  • NOTE: I don't like my chowder too thick so you may have to adjust the butter/flour mixture.
  • You may skip the butter and use a low-fat margarine.
  • You may also substitute skim milk too (or skip the milk altogether, this is called Point Judith/Rhode Island style!).
  • You may even skip the whole pork fat thing for a healthier recipe.
  • This chowder is so hearty that it stands up well to "healthier alternative" substitutions.
