UNIQUE SPINACH NOODLES
These green spinach noodles have a very interesting texture and flavor--but they taste better than store-bought noodles because they're fresh. Use in soups, or serve alone; they are great either way. This is an easy recipe, and you'll get lots of compliments because you made them yourself.

Steps:
- Combine spinach and water in a saucepan. Cover, and cook till spinach is very tender. Cool slightly.
- Place spinach and liquid in blender container. Add egg and salt. Cover, and blend till smooth. Transfer to a bowl. Add enough flour to make a stiff dough.
- Turn dough out onto a lightly floured surface. Knead for 1 minute. Roll very thin on a floured surface. Let rest 20 minutes. Roll up loosely. Slice 1/4 inch wide. Unroll. Cut into desired lengths. Spread out on a rack to dry for 2 hours.

JOAN'S GREEN NOODLE RING (SPINACH PASTA)
This is from my MIL. It sounded a little different and colorful! Note: This is made with spinach pasta not fresh spinach.

Steps:
- Boil noodles in salted water about 7 minutes.
- Drain noodles and put into a bowl with the egg yolks, cottage cheese, sour cream and pepper.
- Mix with the noodles.
- Beat the egg whites and fold into the noodle mixture.
- Grease a ring mold very well.
- Put the mixture into the mold and cover with foil.
- Place mold in another pan with some water and bake at 300 degrees for 1 1/2 hours.

GREEN NOODLES AND HAM

- Bring a large pot of water to a boil then add salt, a generous grab from your salt dish, to season up the pasta as it cooks. Carefully add pasta to water and stir then cook to al dente or until pasta is tender but it still has a bite to it in the center - in other words, do not cook it until it is mushy.
- Cut ham into thin, short ribbon-like pieces and separate them into a loose pile. Kids not so good with knives can use kitchen scissors to cut the ham up.
- Preheat a large skillet over medium heat. Add butter to the pan and melt it. Add 1 cup cream and warm it up a minute. Add about a cup of cheese, 4 big handfuls or so, and stir constantly for another minute then season the sauce with nutmeg (your SECRET ingredient) and pepper. Taste and add a little salt, if necessary.
- Turn off heat under sauce and add the peas to it. They will warm through in no time. Next, drain the pasta. Kids should have Grown Helpers drain pasta for them. Toss pasta with sauce in the skillet and use tongs to help you pull pasta through sauce until it is coated evenly. Sprinkle in the ham and toss the pasta again to combine it. You can even add a little more cheese, if you say so.
- Wow! Green noodles are even yummier than white ones when you add in the ham and cheese and peas! Yum-o!
FRESH TOMATO AND SPINACH PASTA
I got this recipe from my mom, and it's one of my favorites. It's easy, not too time-consuming, and it tastes great. It's a little bit spicy, though, so if you don't like spicy food, you might not enjoy this.

Steps:
- Cook pasta according to package directions.
- Drain; keep warm.
- Meanwhile, in a large skillet, cook onion and garlic in hot oil over medium heat until onion is tender.
- Add tomatoes, salt, black pepper, and, if desired, red pepper.
- Cook and stir over medium-high heat for about two minutes or until the tomatoes are warm and release some of their juices.
- Stir in spinach, heat just until greens are wilterd.
- To serve, top pasta with tomato mixture; sprinkle with parmesean cheese.
NOODLE & SPINACH RING
Steps:
- Cook noodles in salted water.
- Drain.
- Cook spinach in 1/2 cup salted water only until thawed.
- Drain.
- Alternate layers of noodles, spinach, crumbs and cheese in a buttered 2 quart ring mold.
- Combine other ingredients; pour over casserole.
- Bake, set in a pan of hot water, in a 350 oven for about 45 minutes.

- There are two ways to prepare the spinach when making these spinach noodles (check recipe notes for the second method).
- Add your flour in a mound onto a clean working surface and then create a well in the center and add the spinach and oil to it.
- Allow the dough to rest for 20 minutes, wrapped tightly in plastic wrap. This will let the gluten in the flour relax. This is so that when you roll out and shape the dough, it doesn’t try to spring back into shape. Once rested, it should be tender and easy to roll out/work with.
- Once rested, divide the green pasta dough into smaller, more manageable pieces (4-6 pieces). It’s now time to roll out and shape the spinach noodles.If you’re using a pasta extruder, then there is no need to roll out the dough first. Just add as much dough as possible and press to extrude the pasta shapes.Alternatively, you can use a pasta machine or roll out the dough by hand (if you have no pasta machine).
