Low-Fat but Still Delicious Breakfast Burrito image

This recipe is for a low-fat breakfast burrito that I have come up with. Even though everything in it is low fat it does NOT taste low fat at all!! Bacon, egg beaters, and cheese make this is one delectable burrito that is much lower in fat than other breakfast burritos. I have fat free cheese listed in the ingredients, but I admit that sometimes I will use half of a Kraft American Cheese Single to satisfy my cheese cravings. The addition of the american cheese really gives this burrito great taste, but use whatever cheese you like. Also, you can use any low fat bacon you like but I personally enjoy Oscar Mayer's Turkey Bacon...it is soooo tasty, I actually prefer it over all other bacon. Serve this burrito with fruit and juice for a yummy breakfast!

2 slices turkey bacon
1/3 cup Egg Beaters egg substitute
1 low-fat tortilla
fat free cheese
fresh black pepper
salt

Steps:

  • Cook bacon and eggs according to package directions, add salt and black pepper to your eggs if desired.
  • Layer the bacon and eggs on top of your tortilla
  • Sprinkle desired amount of cheese over bacon and eggs.
  • Roll your burrito up and cook on high in the microwave approximately 15 seconds to warm the tortilla and melt the cheese.
  • Enjoy your burrito!

I guess you'd call this OAMC......I've kind of modified it to suit my tastes, but you can put anything in these, or adjust the quanities. Soemtimes, I'll use ham, too

1/2 lb bacon
12 ounces of jimmy dean reduced-fat sausage
1 (8 ounce) bag hash browns or 1 (8 ounce) bag O'Brien potatoes
1 (4 ounce) can chopped green chilies, drained
3 dozen eggs (beaten well)
2 dozen 12-inch flour tortillas
2 cups of shredded cheese, any flavor
salsa (optional)

Steps:

  • Cook and drain the bacon and sausage.
  • Crumble the bacon.
  • Set aside.
  • Leave a small amount of grease in the pan, and cook the potatoes.
  • Be sure the potatoes are comepltely cooked, and properly browned--the texture is funny if you don't.
  • Combine eggs and green chilies.
  • Add the eggs and green chilies to the potatoes, and stir.
  • When eggs are almost done, add the meats, and continue to cook, until eggs are no longer shiny.
  • Add cheese, and remove from heat.
  • Stir to combine.
  • Spread out tortillas on counter.
  • Spoon the suficient amount of egg mixture on top of tortilla, top with salsa, and roll up, burrito style.
  • Wrap each individually in waxed paper, then place as many as will fit in a ziploc bag (I usually get 6-8 in a bag) Freeze.
  • To reheat, leave in waxed paper and set on plate.
  • Microwave 3 minutes.
  • Let sit one minute, then unwrap and eat.

Slow Cooker Breakfast Burritos image

Filling for breakfast burritos in the slow cooker. This filling is packed with bacon, sausage, cheese and veggies!

18 large eggs
1 cup milk
1 tsp. salt
1/2 tsp. black pepper
1 lb. sausage (cooked and crumbled (we use Jimmy Dean))
10 slices bacon (cooked and crumbled)
1 orange bell pepper (diced)
1 yellow bell pepper (diced)
1 red bell pepper (diced)
1 small sweet yellow onion (diced)
2 cups cheddar jack cheese (shredded (an 8-ounce bag))
flour tortillas
Toppings such as more cheese, sour cream, avocado, salsa, and hot sauce. Chopped jalapeno is great for those who like spice.

Steps:

  • In a large mixing bowl add the eggs, milk, salt, and pepper. Whisk until everything is combined.
  • Spray crock pot generoursly with non-stick cooking spray. Add the egg mixture, bacon and sausage to the slow cooker.
  • Add the bell peppers and onion and cheese. Stir.
  • Cook on HIGH for 3 hours stirring every 30 minutes to one hour to get a scrambled effect.
  • Warm the tortillas in the oven (wrapped in foil) or brown each one in a dry skillet on the stove top. Serve burritos buffet style along with toppings.
