CLASSIC ITALIAN MEATBALLS
This easy and simple recipe produces a soft and tender meatball. One of the best Classic Italian Meatball Recipes.

Steps:
- In a large bowl mix together the ground beef, egg, bread crumbs, parmesan cheese, minced garlic, chopped parsley, salt and pepper. Slowly add the milk until you have a soft compact mixture.Form the mixture into small balls.
- In a large pan add the olive oil, garlic, tomato puree/passata, salt, fresh basil, oregano and water. Mix to combine.
- Add the meatballs and gently mix to cover them in sauce. Cover the pan and cook on low/medium (more low than medium) heat for approximately 15- 20 minutes, uncover and continue to cook for another 15-20 minutes or until cooked through and the sauce has thickened. If you find the sauce thickening too much then add a little more water.
- Serve immediately as a main dish or over your favourite al dente pasta. Top with freshly grated parmesan cheese before serving. Enjoy!

- Preheat oven to 375°F. Mix ingredients just until blended. Shape into 30 (1-inch) balls; place in single layer in 2 lightly greased shallow baking pans. Bake 12-14 minutes or until done (160°F). Serve with toothpicks. Cook's Tips: It is easiest to mix the ingredients using your hands. Mix just until the dry ingredients are fully incorporated. Bake meatballs as directed. Meanwhile, heat your favorite spaghetti sauce in large saucepan. Stir meatballs into sauce. Serve over hot cooked pasta. Yield 6 servings (5 meatballs each)

- 1. Soak bread slices in milk; squeeze excess moisture out of bread. Combine bread and remaining ingredients together except for the olive oil; mix well. Form meatballs. I made 21 large meatballs using a 1/4 cup measuring cup. You can make any size you desire.
- 2. Heat olive oil in a large skillet over a medium heat; add meatballs and brown. Once browned, cover an reduce heat to low (just to keep warm). Prepare sauce.
- 3. SAUCE: Heat oil in a large skillet over medium heat. Add onion, bell pepper and garlic; cook until tender.
- 4. Add red pepper flakes, fennel seeds, tomatoes, tomato sauce, basil, Italian seasoning, salt and pepper; stir. Bring to a slow boil, reduce heat slighly and let simmer for 15 minutes covered. Remove lid and simmer another 15 minutes, stirring occasionally, to thicken.
- 5. Add meatballs to sauce, cover and simmer for another 30 minutes.
- 6. Plate up pasta, place 2 or 3 meatballs on top of spaghetti (or pasta of choice) and spoon sauce over top. Sprinkle with a little parmesan. Serve with a side salad and a fresh roll.
CHEF JOHN'S ITALIAN MEATBALLS
Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

- Cover a baking sheet with foil and spray lightly with cooking spray.
- Soak bread crumbs in milk in a small bowl for 20 minutes.
- Heat olive oil in a skillet over medium heat. Cook and stir onions in hot oil until translucent, about 20 minutes.
- Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined. Cover and refrigerate for about one hour.
- Preheat an oven to 425 degrees F (220 degrees C).
- Using wet hands, form meat mixture into balls about 1 1/2 inches in diameter. Arrange onto prepared baking sheet.
- Bake in the preheated oven until browned and cooked through, 15 to 20 minutes.

These meatballs are very yummy! My husband came up with this recipe all on his own, I'm very proud of him! He uses Jimmy Dean Original Breakfast Sausage, Ground Beef and Ground Turkey.

- In a large bowl place ground beef, sausage, and ground turkey. Fight the temptation to to start mixing it all together, if you do you will have very dense little golf balls for dinner.
- Beat the eggs a little add to the meat, along with the seasoned salt, pepper and breadcrumbs. Mix all ingreadients together as little as possable. The more you handle your meatball mix the tougher it will be.
- Now that that is all mixed. We use half sheet pans lined with partchment paper. I portion them out using a ice cream scoop. Then I wet my hands and form them into balls.
- We bake them in the oven set at 350 for arounf 30 minutes, longer if you make them big. You can eat them right out of the oven or put them in a crock pot to soak up some red sauce.
