- Preheat 2 inches peanut oil in a deep-fryer or Dutch oven to 375 degrees F. Whisk the cornmeal, flour, 1 teaspoon salt, the sugar, cayenne and paprika in a large bowl to get rid of the lumps. (No one likes a lumpy hushpuppy.) Mix in the remaining ingredients, stirring well to combine.
- Dip 2 spoons into a mug of water (this allows the batter to come clean off). Scoop up about 1 1/2 tablespoons of the batter and carefully slide it into the hot oil, working in batches. Fry the scoops of batter 3 to 5 minutes, or until golden brown and cooked all the way through (test the first one for doneness). Remove and drain on a paper towel-lined baking sheet, seasoning with salt as soon as they come out of the fryer.

- Combine the cornmeal, flour, sugar, dried onions, baking powder, salt and pepper in a large bowl and mix. Next, add the hot water slowly until the mixture begins to thicken. The batter should be thick and start to rise quickly. Continue to mix and knead until the batter stops rising. Once the batter is thick enough, let it stand for 30 minutes before cooking.
- When ready to cook, add enough oil to a frying pan for the hushpuppies to be submerged. Heat over high heat to 350 degrees F. Use a spoon to carefully drop the batter into the oil. Make sure to spread them apart so they do not stick together. Fry until golden brown on all sides. (The hushpuppies will rise to the top of the oil, so make sure to turn them in the oil on all sides so they cook evenly.) Repeat with the remaining batter.

- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Mix flour, cornmeal, onion, milk, egg, celery, garlic, and Cajun seasoning in a bowl.
- Drop ping pong ball-sized balls of batter, about 5 at a time, into the hot oil. Fry until golden brown, about 5 minutes. Remove hush puppies with a slotted spoon and drain on a paper towel-lined plate. Repeat with remaining batter.

HEAVENLY HUSH PUPPIES
This is my basic, quick and easy recipe for my hubby's favorite hush puppies. He says they're better than Long John Silver's. I named them Heavenly Hush Puppies because they are so light and airy, very tender and slightly sweet.

- 1. Gather and prep ingredients.
- 2. Into a large dutch oven or stock pot, pour enough oil to fill about 1/3 of the way up to the top (do not overfill; you should have 3 to 4 inches of oil.) Position candy thermometer in oil. Place pot of oil over medium/medium high heat. Oil should be 350` to 375` during entire frying time, so keep a close eye on it. See NOTE.
- 3. In a medium size bowl, mix together milk and egg; add muffin mix, flour, cajun seasoning and onions; mix to combine, just until dry ingredients are moistened.
- 4. Drop batter, by rounded soup spoonfuls, into hot oil. Do not overcrowd; fry in batches of 6 or 7 at a time, keeping a close eye on the oil temperature. As hush puppies brown, some may turn themselves over; if not use a slotted spoon or spider to flip them over. Hush puppies are done when they are a deep golden brown, about 3 minutes (or so) total frying time.
- 5. Use slotted spoon or spider to remove hush puppies to paper towels to drain excess oil. Serve warm or at room temperature. Store leftovers in plastic bag or covered container.
- 6. *NOTE: If you have a deep fryer, by all means, use it.

- 1. In a large mixing bowl, mix together flour and cornmeal. Add egg, onion, sugar, and spices.
- 2. Add buttermilk and stir with a fork just until blended. The mixture should be fairly stiff. Add a little bit more buttermilk, if necessary.
- 3. Heat oil in deep-fryer to 375 degrees.
- 4. Drop dough by teaspoons into hot oil.
- 5. Fy until hush puppies rise to the top and are golden brown.
- 6. Remove from the fryer and drain on paper towels.
