JIFFY CORNBREAD TAMALE PIE
Jiffy cornbread tamale pie is a super easy meal to make for the family. Ground beef, melted cheese, and flavorful seasonings on the bottom, topped with Jiffy cornbread, creamed corn, and sour cream.

Steps:
- Preheat oven to 350-degrees and grease a 9" x 13" casserole dish with nonstick cooking spray. Be sure to spray the sides and bottom of the pan for easy clean-up.
- Brown the ground beef.
- Drain the grease off of the ground beef.
- Add the ground beef, green chiles, enchilada sauce, minced onion, garlic salt, and chili powder to a large bowl.
- Add the sour cream and shredded cheese and mix well.
- Pour into the greased casserole dish.
- In another bowl, add the two boxes of Jiffy Corn Muffin Mix, egg, milk, vegetable oil, sour cream, and cream corn and mix well.
- Pour over the ground beef mixture and spread it out evenly over the top.
- Bake for 50 minutes in the preheated oven or until the top is golden brown and cake tester or knife comes out clean.

Steps:
- Mix cornbread according to package directions. Cook ground beef and drain fat. Add, taco seasoning mix and water according to package. Add tomato sauce. Cook until slightly thickened. Pour meat mixture in a 8x8 cassarole dish. Add layer of grated cheese and then spread the cornbread mixture on top spreading it to the edges of the pan. Bake at 350 degrees for about 45 minutes or until brown.
- Optional: serve with sour cream and taco sauce.

- Directions Step 1 Preheat oven to 400°F. Grease an 11" x 7" pan. Step 2 Combine muffin mix, milk, egg, 1-1/2 tablespoons of taco seasoning, pepper, corn and green chilies. Step 3 Pour into pan. Bake 30 - 35 minutes. Cool for 10 minutes. Step 4 Combine chicken or pork and remaining taco seasoning. Pierce top of cornbread with fork several times. Spread chicken or pork mixture on top. Spread enchilada sauce over meat. Step 5 Sprinkle with cheese. Bake an additional 20 - 25 minutes.
REESE WITHERSPOON'S CORN BREAD CHILI PIE
I just wanted to know if anyone ever made chili with a cornbread on top, and I found this recipe. I had no idea how it would turn out, but it was phenomenal. I would make it again, and I rarely make the same recipe twice. I used sausage in my recipe instead, and I used an extra can of tomatoes and beans too so it made a lot more than listed. - Preheat oven to 375.
- In a 9 or 10 inch cast iron skillet or saute pan, heat the olive oil over medium-high heat until it shimmers.
- Add the onion and saute for 1 minute before adding the garlic. Saute for another minute and add the ground beef and pork, breaking up the meat with a wooden spoon until the meat is brown.
- Drain off any excess fat and stir in the chili seasoning, diced tomatoes, and tomato paste. Mix over medium heat for 1 minute, then pour in the chicken broth. Reduce the heat to low and simmer for 5 minutes, stirring constantly.
- While the meat simmers, make the corn bread mixture. Stir together the mix, eggs, and milk in a mixing bowl until just combined (do not overmix). I added a little more milk because I heard it made the texture better, but whatever you prefer.
- Stir 1/2 cup of the frozen corn and the cheese into the cornbread batter and set aside. Stir the remaining 1/2 cup of corn and kidney beans into the meat mixture.
- If using a baking dish or casserole dish, transfer the meat mixture from the stove top to the baking dish.
- Pour the corn bread batter over the meat mixture and bake in the oven for 35 to 40 minutes, until golden brown on top. Remove from the oven and allow to sit for 10 minutes before serving with optional toppings such as salsa, green onion, sour cream, and shredded cheese.
