CHERRY STRUDEL

Light, crisp, flaky pastry is the perfect gateway to the luscious cherry and almond filling that's just inside this delicious dessert. Served either warm or cold, this is a classic recipe that makes a beautiful presentation with just a dusting of Confectioner's sugar as a final touch.

2 cups all-purpose flour
1 tbsp. sugar
1 egg plus 1 yolk
3 tbsp, vegetable oil
1/2 - 3/4 cup ice water
1/4 cup melted butter
Confectioner's sugar for dusting
large pastry cloth to roll out the dough on to
2 lbs. Bing cherries, washed and pitted or 2 one pound cans of cherries, drained ((Not pie filling!))
1 1/2 cups white bread crumbs or sponge cake crumbs
1 cup sugar
1 tsp. cinnamon
1 cup ground, whole blanched almonds ((you can grind them in a food processor))

Steps:

  • Preheat oven to 350 degrees. Grease a large baking sheet and set aside. While the dough is resting, prepare the filling mixture.
  • In a large bowl, combine fresh pitted cherries or canned, drain cherries. add white bread crumbs or sponge cake crumbs. Add sugar, cinnamon, and ground almonds. Toss all ingredients to make sure they are well combined. Note: you can grind the almonds in a food processor fitted with the steel blade. Set aside.
  • After 15 minutes, lay out a large pastry cloth and sprinkle it with flour. Roll out the dough onto the cloth into a rectangle and roll it as thin as you can. Brush the dough with the melted butter and spread the cherry filling evenly over the dough, leaving a 1/4 inch border. Roll the dough up neatly, into a roll, using the edges of the pastry cloth to help you ease it along. Tuck the ends under so no filling leaks out. Place on the greased baking sheet.
  • Brush the top of the strudel with melted butter and bake for 35-40 minutes or until the strudel is golden brown. Let cool after removing from oven. Dust generously with Confectioner's sugar before serving.

SEAFOOD STRUDEL

2/3 cup green olives, pitted, chopped
2/3 cup black olives, pitted, chopped
1/2 cup roasted red pepper, skinned, seeded and diced
2 tablespoons parsley, minced
4 anchovies, minced
4 teaspoons capers, rinsed, drained and minced
2 teaspoons red wine vinegar
2 cloves garlic, minced
3 tablespoons olive oil
1 pound salmon fillet, roughly chopped
1 pound bay scallops, well drained
1 pound rock shrimp, well drained
4 ounces butter, plus 1 cup butter, melted, for brushing phyllo
4 ounces flour
1 cup black olives, pitted and chopped
1 cup dry white wine
1 cup heavy whipping cream
1 package phyllo dough, thawed
2 cups heavy cream
1 lemon, juiced
Pinch saffron

Steps:

  • Combine all ingredients in a stainless steel bowl and adjust seasoning. Will hold for 5 days under refrigeration.;
  • In a large skillet melt the 4 ounces of butter, turn up the heat to full and quickly sear the fish (in batches so it doesn't leach). Add the flour and allow to cook out for 2 minutes, next add the olives, wine, and 1 cup whipping cream. Bring to a simmer, correct the seasoning and allow to cool.
  • Lightly brush one sheet of phyllo with some melted butter. Place another sheet on top of the first and also brush that one with melted butter. Cover remaining sheets and set aside.
  • Cut the 2 layered sheets crosswise into 3 equal strips. Place one rounded tablespoon of filling about 1-inch from the end of each strip. Starting at the edge, bring up the phyllo and roll it over the top of the filling, roll once and then tuck the ends in as you would an eggroll, and continue to roll the strudel until you reach the end of the dough. With end underneath, brush top with melted butter and place on parchment lined sheet pan. Repeat this until you have used all the phyllo.
  • Preheat the oven to 400 degrees.
  • Combine the 2 cups heavy cream, lemon juice, and saffron in a non-reactive bowl, correct seasoning and allow to stand (this will allow the acid time to acidulate the cream and thus thicken slightly to yield a sauce consistency).
  • Strudels will hold 5 days under refrigeration, or can be frozen for up to 4 weeks. Acidulated cream will also hold up to 5 days under refrigeration.
  • Place on a sizzle plate (2 per order) and bake for 8 to 10 minutes until hot inside and golden brown outside. Present crossed, on warm plates with sprigs of fennel fern, drizzled with acidulated cream, and olive relish sprinkled randomly around.

ELSIE'S STRUDEL

This is my Hungarian grandmother's recipe for strudel, but I suspect they were so poor when she was little they couldn't afford to buy apples to make the traditional filling. If you saute cabbage in butter and sweeten it a bit, it tastes and feels a lot like cooked apples. So I think that's why she did that. I remember her making it when I was little, but she never taught me. Later, as I was rummaging through her recipe card files, I found the secret recipe! Of course she made her strudel dough from scratch. In those days families were big with lots of children, so there were plenty of hands to stand all around the table and pull strudel dough. Nowadays, with 2.5 children and two working parents, there's no way to do it at home. I have my grandmother's white linen tablecloths from her dowry, which were always put down to cover the gigantic dining room table to pull the dough on. I think these good linen tablecloths were primarily used for pulling strudel dough versus having company over for a lavish meal, which would have been pricey then and possibly beyond my family's means.

1/2 head green cabbage, cored and shredded
1/2 cup sugar
1/4 teaspoon salt
1/2 cup raisins
1/4 cup walnut pieces, toasted
3 sheets frozen phyllo pastry, thawed overnight in the box in the refrigerator
8 tablespoons (1 stick) unsalted butter, melted
1/2 cup sugar, plus more for sprinkling
1 cup walnuts, lightly toasted and finely chopped

Steps:

  • Make the Filling: Heat the butter in a large skillet over medium-high heat. Add the cabbage and cook, stirring, until tender. Add the sugar and salt and stir to dissolve. Add the raisins and cook, stirring, to reduce the juices and let them soak into the raisins, about 3 to 4 minutes. Stir in the walnuts and spread on a baking sheet to cool.
  • Make the Strudel: Preheat the oven to 375 degrees F.
  • Arrange a parchment-lined baking sheet on the counter, so it's horizontal to your body. Place 1 sheet of phyllo on the pan. Using a pastry brush, spatter the phyllo with some of the melted butter; then brush to cover with the butter. Sprinkle with 1/3 of the sugar and 1/3 of the chopped walnuts. Repeat with the 2 remaining sheets of phyllo. Reserve the remaining melted butter and sugar.
  • Spoon the cooled cabbage filling 2 inches in from the bottom edge of the phyllo, working from left to right, leaving 2 inches bare at the left and right. Roll up the pastry, lifting the parchment paper, to encase the filling, forming a log. Move the log to the center of the sheet pan and tuck the ends under to keep the filling from oozing out. Brush the surface with melted butter and sprinkle with sugar. Bake until golden brown, about 30 minutes. Let cool 10 to 15 minutes on the pan. Using a serrated knife, cut carefully into sections and serve warm.

CABBAGE STRUDEL

Steps:

  • Filling: In a saute pan, melt the butter. Heat it to medium high heat and saute the cabbage until tender. Add the salt and sugar and stir to dissolve. Add the raisins and cook a few minutes to reduce and thicken any juices. Stir in the walnuts and spread on a sheet pan to cool.
  • Strudel: Preheat the oven to 375 degrees.
  • Line a sheet pan with parchment paper. Transfer 1 sheet of phyllo to a sheet pan. Using a pastry brush, brush the phyllo with butter. Sprinkle with 1/3 of the sugar and 1/3 of the chopped walnuts. Repeat with the 2 remaining sheets of phyllo. Reserve the remaining melted butter and sugar. Turn the sheet pan so that the phyllo is horizontal to your body. Spoon the cooled cabbage filling 2 inches in from the left hand edge of the phyllo, working from top to bottom, leaving 2 inches bare at the top and bottom. Turn the sheet pan 1/4 turn and roll up the pastry to encase the filling, forming a log. Move the log to the center of the sheet pan and tuck the ends under to keep the filling from oozing out. Brush the surface with melted butter and sprinkle with sugar. Bake until golden brown, about 30 minutes. Let cool 10 to 15 minuets on the pan. Using a serrated knife cut carefully into sections and serve warm.

1 Granny Smith apple - peeled, cored and coarsely shredded
3 Granny Smith apples - peeled, cored and sliced
1 cup brown sugar
1 cup golden raisins
1 sheet frozen puff pastry, thawed
1 egg
¼ cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Place apples in a large bowl. Stir in brown sugar and golden raisins; set aside. Place puff pastry on baking sheet. Roll lightly with a rolling pin. Arrange apple filling down the middle of the pastry lengthwise. Fold the pastry lengthwise around the mixture. Seal edges of pastry by using a bit of water on your fingers, and rubbing the pastry edges together. Whisk egg and milk together, and brush onto top of pastry.
  • Bake in preheated oven for 35 to 40 minutes, or until golden brown.
