This is made just like a traditional pecan pie, with the addition of chocolate chips. It is very fudgy. It is always the first dessert to go at our family's Thanksgiving!

1 (9 inch) unbaked pie crust
3 eggs
⅔ cup white sugar
½ teaspoon salt
⅓ cup margarine, melted
1 cup light corn syrup
1 cup pecan halves
1 ½ cups semisweet chocolate chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat eggs, sugar, salt, margarine, and syrup with hand beater. Stir in pecans and chocolate chips. Pour mixture into pie shell.
  • Bake until set, 40 to 50 minutes. Cool.

This recipe originated here in Louisville. It is often served during the famous Kentucky Derby, but it's good any other time of year, too!

2 large eggs
1 cup sugar
1/2 cup all-purpose flour
Pinch salt
1/2 cup butter, melted and cooled
1 cup semisweet chocolate chips
1 cup chopped pecans
2 teaspoons vanilla extract
1 unbaked pie shell (9 inches)
Whipped cream

Steps:

  • In a bowl, beat eggs. Gradually add sugar and beat until smooth. Stir in flour, salt and butter. Fold in chips, nuts and vanilla. Pour into the pie shell. , Bake at 350° for 40 minutes or until set and golden brown. Chill for at least 4 hours. Serve with whipped cream.

A nice twist on pecan pie for chocolate lovers. You can freeze a pie if not using both right away.

1 (15 ounce) package pie crusts
5 large eggs
1 cup light corn syrup
½ cup brown sugar
½ cup white sugar
½ cup shortening (such as Crisco®)
1 tablespoon all-purpose flour
3 teaspoons instant espresso powder
½ teaspoon salt
1 (12 ounce) bag dark chocolate chips (such as Ghirardelli®)
1 ½ cups pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line two 9-inch pie plates with pie crusts; fold excess dough to form a rim and flute as desired.
  • Mix eggs, corn syrup, brown sugar, white sugar, shortening, flour, espresso powder, and salt together in a bowl.
  • Layer 1/2 of the chocolate chips on the bottom of each pie crust. Divide batter evenly between the 2 pies, covering the chocolate chips completely. Lay whole pecans on top in concentric circles or chop pecans and press under batter. Cover with aluminum foil so as not to overcook pecans.
  • Bake in the preheated oven for 15 minutes. Uncover and continue to bake until set, about 30 minutes more. Remove from the oven and let cool completely, about 30 minutes. Chill for at least 1 hour before serving.

I adopted this from the Recipezaar account. The original was called Oh So Good Pie. It called for golden raisins but I use regular ones. I haven't made the Spiked Cream yet but maybe will the next time :)

1 9-inch unbaked pie shell
1 cup raisins
1 cup chopped pecans
3 tablespoons flour
1/2 cup butter, softened
3/4 cup light brown sugar, packed
2 eggs, separated
2 tablespoons whiskey
1 teaspoon distilled white vinegar
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon allspice
1/8 teaspoon salt
1 cup heavy cream
2 tablespoons sugar
2 teaspoons whiskey

Steps:

  • Preheat oven to 350 degrees F.
  • Toss together raisins, pecans and flour in a medium size bowl until raisins and pecans are well coated with flour.
  • Beat together butter and brown sugar in a large bowl until well blended (I use my stand mixer).
  • Add divided egg yolks, one at a time, beating well after each addition.
  • Add 2 tablespoons whiskey, vinegar, cinnamon, nutmeg and allspice; blend well. Stir in raisin & nut mixture and set aside.
  • Beat egg whites and salt in a medium size bowl with an electric mixer at high speed until soft peaks form (I use my stand mixer for this also).
  • Fold whites into raisin & nut mixture. Pour into pie crust.
  • Bake for 35 minutes or until slightly puffed and set.
  • Serve warm or at room temperature with Spiked Whipped Cream, if desired.
  • To make Spiked Whipped Cream: Beat together one cup heavy cream, 2 tablespoons sugar and 2 teaspoons whiskey in a medium size bowl until soft peaks form.

When you get a call that someone is "stopping" by and need a fast, easy recipe that looks like it took you days to make, this is it! I put it in a tart pan as it gives it a nice presentation too. And it's not sweet like regular pecan pie (nor as "jelly") and that's why this is my husbands favorite dessert!

1 pie crust, unbaked
1 c semi sweet chocolate chips or chunks
1 1/2 c pecans
3 large eggs
1 c sugar
1 c light corn syrup
1 tsp vanilla extract
pinch salt
2 Tbsp whiskey

Steps:

  • 1. Preheat oven to 425 degrees. Put pie crust into pie pan or tart (I prefer the tart pan-nicer presentation) and crimp edges. Sprinkle chocolate onto crust and sprinkle pecans on top of choolate
  • 2. Whisk together eggs, sugar, corn syrup, vanilla, salt and whiskey and pour over nuts. Place this pie onto a rimmed cookie sheet before putting it in oven-it tends to "overflow" and is very hard to clean the oven after! Bake 20 minutes at 425 degrees, then reduce oven to 350 degrees and bake until pie is set but slightly "wobbly" in center, about 35 minutes more
  • 3. Let cool completely on wire rack

This double-crust pie filled with apples and bourbon-soaked raisins is turned upside down onto a plate after baking to reveal a gooey pecan topping.

1/2 cup seedless raisins
2 Tbsp. bourbon
1/4 cup (1/2 stick) margarine or butter, softened
1 cup pecan halves
1/2 cup firmly packed light brown sugar
pastry for 2-crust 9-inch pie
7 cups peeled sliced apples
1/2 cup granulated sugar
1 Tbsp. lemon juice
1 Tbsp. flour
1/2 tsp. ground cinnamon
1/4 tsp. salt
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Preheat oven to 450°F. Mix raisins and bourbon; set aside. Spread all of the margarine onto bottom and up side of 9-inch pie plate. Press pecans, top sides down, in margarine; pat brown sugar evenly over pecans. Divide pastry in half; roll out one half to 10-inch circle on lightly floured surface. Place over brown sugar in pie plate.
  • Drain raisins; discard liquid. Toss raisins with apples, granulated sugar, lemon juice, flour, cinnamon and salt. Spoon over pie crust in pie plate. Roll out remaining pastry to 10-inch circle. Place over apple mixture; crimp edges of pastry together to seal. Prick top crust with fork to allow steam to vent.
  • Bake 10 minutes. Reduce heat to 350°F. Bake an additional 45 minutes or until top crust is lightly browned. Cool on wire rack 5 minutes or until filling stops bubbling. Place serving plate over pie; carefully invert pie onto plate. Remove pie plate. Cool completely. Serve topped with whipped topping.
