PINEAPPLE & PORK SKEWERS
Kids will love these pork, pineapple and green pepper skewers, marinated for added flavour and cooked on the barbecue. Serve with rice or in pitta bread

Steps:
- Cut the pork into cubes. Heat the sugar and vinegar in a pan over a low heat until the sugar melts. Add the fish sauce and cool. Tip in the pork and mix well so that all the cubes are covered in sauce.
- Heat the barbecue. If you are using coals, wait until they turn white. If you are indoors, heat a griddle pan. Thread the pork and pineapple onto skewers, alternating pieces with the pepper and spring onion.
- Barbecue or griddle the skewers for 3-4 mins each side (you may need to cook them for longer if griddling). Sprinkle with coriander, if you like, then serve with rice or slide into pitta breads.

JERK-ISH PORK SKEWERS
Fire up the barbecue to make these pork skewers, packed with herbs and spices. Pair with a rice salad and they'll go down a treat with the whole family

Steps:
- Put the pork mince in a bowl and use your hands to mix in the allspice, cinnamon, thyme, spring onions, garlic, lime zest and molasses or honey. Drizzle the olive oil over a large plate.
- Divide the mince mixture into eight portions and roll into even- sized balls. Working with one ball at a time and using wet hands, press the ball onto a skewer, forming it into a sausage shape around the skewer as you go. Transfer the finished skewers to the oiled plate and keep chilled until needed. Will keep covered in the fridge for up to a day.
- Light the barbecue. When the coals are ashen, place the skewers on the grill and cook, undisturbed, for 2 mins. Carefully turn using tongs and cook for another 5 mins before turning again. Repeat this process once more until the skewers are cooked through and browned.
- Remove to a serving platter, squeeze over the lime wedges and season. Serve with a rice salad, if you like (ours was a mixture of cooked rice, sweetcorn, red onion and herbs).

- Prepare the pineapple salsa by combining all the salsa ingredients, stir together, cover and let stand at room temperature while you prepare the pork (or make ahead and refrigerate, but bring to room temperature before serving, for best flavour).
- If starting with dry Jerk spice mix, combine equal parts of the dry spice mix with olive or vegetable oil, to form a paste. Set aside.
- Remove the silverskin and any visible fat from the pork tenderloin. Cut into thin slices, crosswise. Press down on the slices with the palm of your hand, to flatten slightly, then pierce each piece with a fork a couple of times (to allow the spice to penetrate the meat). Thread the pork pieces loosely onto skewers, then brush or rub generously with Jerk seasoning mixture. Let stand a few minutes while you preheat the grill or broiler.
