3 Pound Boneless Pork Butt (- trimmed of fat & cut into 2-inch chunks)
2 TBS Neutral Oil (- such as canola or vegetable (SEE NOTES))
4 TBS Jerk Seasoning (- homemade or store-bought (SEE NOTES) )
Kosher Salt (- to taste)
1 Bunch Green Onion (- cut into 3-inch pieces)
3 Cloves Garlic (- smashed & peeled)
1-2 Jalapeno or Habanero Peppers (- stemmed & roughly chopped (SEE NOTES) )
½-inch Piece Fresh Ginger (- peeled and sliced)
¾ Cup Fresh Orange Juice (- (from about 4 oranges))
¼ Cup Fresh Lime Juice (- (from about 2 limes))
1 TBS EACH: Dark Brown Sugar and Low Sodium-Soy Sauce
1 ½ Cups Fresh Diced Pineapple
1 Jalapeno (- stemmed, seeded & finely diced)
¼ Red Onion (- finely diced)
2-3 TBS Cilantro Leaves (- chopped)
2-3 TBS Fresh Lime Juice
1 tsp Honey

Steps:

  • Season pork: On a clean work surface, pat cubes of pork dry with paper towels. Transfer pork to a large bowl and drizzle with oil (SEE NOTES). Toss to coat. Sprinkle the pork with jerk seasoning. Season with salt to taste. Use your hands or tongs to mix and toss the pork until thoroughly coated. (NOTE: You may want to wear gloves as the mixture will be spicy. Don't touch your face or eyes until after you wash your hands!)
  • Marinate: Cover the bowl with plastic wrap or transfer to a large zip-closure bag and refrigerate for at least 3 hours, or preferably overnight.
  • Add to slow cooker: Remove the pork from the refrigerator and allow the meat to sit at room temperature for 30 minutes while you prep the other ingredients. Transfer pork to the bowl of a 5-6 quart slow cooker. Add the onions, garlic, peppers, ginger, orange juice, lime juice, sugar and soy sauce.
  • Cook: Cover the slow cooker and cook on LOW for 6-7 hours, or until the pork is fork tender and falls apart easily.
  • While the pork is cooking, make the salsa: Combine all the ingredients for the salsa in a medium bowl. Season to taste with salt. Taste and adjust for seasoning. Refrigerate until ready to use.
  • Skim fat & strain liquid: Skim and discard the fat from the top of the cooking liquid in the slow cooker. Strain the cooking liquid into a measuring cup or bowl.
  • OPTIONAL to Crisp Pork: Use a slotted spoon to transfer the pork to a large rimmed sheet pan lined with aluminum foil. Arrange oven rack to the upper-middle third of the oven. Preheat the oven to BROIL.
  • OPTIONAL - Broil: Add ¼ to ½ cup of the strained cooking liquid to the pork and gently toss to coat. Broil 3-5 minutes or until crisp. Remove from the oven, flip the pork and toss with another ¼ to ½ cup cooking liquid. Broil and additional 3-5 minutes. NOTE: Watch the oven carefully as pork can go from golden brown and crispy to burned very quickly!
  • Serve: Transfer pork to a serving bowl and drizzle a bit of cooking liquid over the top. Serve hot with salsa in your favorite tacos or over rice! Enjoy!

1 cup instant rice, cooked according to package directions
2 cups diced roasted pork loin
1 (15-ounce) can black beans, drained
1 cup chopped arugula leaves
1 cup shredded Monterey Jack cheese
1/2 cup diced oil-packed sun-dried tomatoes
6 burrito-size flour tortillas, regular or flavored
1 recipe Orange Salsa, recipe follows
1 (11-ounce) can Mandarin oranges, drained and chopped
1/4 cup diced red bell pepper
2 tablespoons freshly chopped scallions
2 tablespoons freshly chopped cilantro leaves
1 tablespoon fresh lemon juice
1/2 teaspoon ground cumin
Salt and freshly ground black pepper

Steps:

  • Coat a stove-top griddle with cooking spray and set over medium-high heat to preheat.
  • In a large bowl, combine rice, pork, beans, arugula, cheese, and tomatoes. Mix well to combine.
  • Arrange tortillas on a flat surface. Top 1 side of the tortillas with pork mixture. Fold the other side over to cover filling. Transfer quesadillas to hot pan and cook 2 to 3 minutes per side, until golden brown and cheese melts. Serve with orange salsa.
  • Combine all ingredients in a medium bowl and toss to combine.
  • Yield: 4 servings

3 tablespoons butter, divided
1/4 cup peach preserves
4 boneless thin-cut pork loin chops (2 to 3 ounces each)
3 teaspoons Caribbean jerk seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 medium sweet orange pepper
1/2 medium sweet yellow pepper
1/2 medium sweet red pepper
Hot cooked rice, optional

Steps:

  • Soften 1 tablespoon butter; mix with peach preserves., Sprinkle chops with seasonings. In a large skillet, heat 1 tablespoon butter over medium-high heat; brown chops 2-3 minutes per side. Remove from pan., Cut peppers into thin strips. In same pan, saute peppers in remaining butter over medium-high heat until crisp-tender and lightly browned, 5-6 minutes. Add chops; top with preserves mixture. Cook, uncovered, until heated through, 30-60 seconds. If desired, serve with rice.

2 tablespoons Jamaican jerk seasoning
1 tablespoon salt
1 tablespoon ground black pepper
2 tablespoons olive oil
½ medium yellow onion, diced
4 (5 ounce) boneless pork chops, about 1 inch thick
2 medium limes, juiced

Steps:

  • Combine jerk seasoning, salt, and pepper in a small bowl.
  • Heat oil in a large skillet over medium heat. Shake about 1 tablespoon jerk rub into the skillet. Add onions; cook and stir until soft, about 3 minutes.
  • Meanwhile, sprinkle 1/2 of the remaining jerk rub onto one side of each pork chop. Use a knife to poke 4 or 5 holes in each chop and pour 1/2 of the lime juice over top. Place chops, seasoned-side down, into the hot skillet.
  • Cook until browned, 5 to 7 minutes. While cooking, sprinkle remaining jerk rub onto the top side of the chops. Poke holes as before, and pour remaining lime juice over top. Flip chops and cook until browned and no longer pink in the center, another 5 to 7 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

A speedy version of a Jamaican pork jerk favourite - loads of flavour, not too spicy

1 tbsp olive oil
3 tbsp Jamaican jerk sauce
4 small boneless pork loin steaks about 500g/1lb 2oz in total
1 chicken stock cube
50g creamed coconut (from a block)
1 bunch salad onions
2 x packets Rizzazz pure basmati rice (ready cooked rice in a vacuum-pack)
410g can red kidney beans , drained

Steps:

  • Half fill the kettle and put on to boil.Warm the oil in a large nonstick frying pan over a low heat while you tip the jerk sauce into a shallow dish and use to coat the pork steaks on both sides. Place them in the hot oil (reserve the sauce left in the bowl) and turn up the heat. Fry for 4 minutes on each side until cooked and richly glazed.
  • While the pork is frying, pour 150ml/1⁄4 pint of boiling water into a medium pan over a high heat and crumble in the stock cube and creamed coconut. Trim and slice the spring onions, holding them together as a bunch so you can chop them all in one go. Add to the pan, give a quick stir, then tip in the rice and beans. Stir and heat gently, breaking down any clumps of rice with a spoon. If the rice looks a little dry, add an extra splash of water.
  • Tip the remaining sauce into the pan to heat through with the pork. Pile the rice onto plates, top with the pork and spoon the pan juices over.

2 (1 1/2 pound) pork tenderloin, trimmed of silver skin
½ onion, chopped
⅓ cup fresh thyme leaves
¼ cup white vinegar
4 cloves garlic
2 habanero peppers, seeded, or more to taste
2 tablespoons minced fresh ginger
2 tablespoons soy sauce
2 tablespoons vegetable oil
1 tablespoon brown sugar
2 teaspoons ground allspice
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon

Steps:

  • Cut the tenderloin in half and set the thinner end to the side. Cut the thicker end in half lengthwise. You should have 3 mostly equal pieces.
  • Combine onion, thyme, vinegar, garlic, habanero peppers, ginger, soy sauce, vegetable oil, brown sugar, allspice, black pepper, cayenne pepper, nutmeg, and cinnamon in a blender. Puree until smooth, stopping to scrape down sides.
  • Pour Jerk marinade into a resealable plastic bag. Add pork tenderloin pieces, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 4 to 6 hours.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Grill pork, moving if necessary to avoid overcooking the thin parts of the meat, until dark grill marks appear and they lift easily from the grill, 6 to 7 minutes each side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

2 tablespoons Jamaican jerk seasoning in a jar (pick a brand with low carbs and sugars)
1/4 cup canola oil
4 pounds boneless pork loin

Steps:

  • Preheat oven to 350 degrees F.
  • Mix jerk seasoning with the oil in a small bowl (this will thin it and cut the heat). Trim any excess fat from the pork loin, leaving a thin-layered wide strip down the center of the top. Evenly rub the entire pork loin with the jerk seasoning mixture. Place pork loin in a shallow greased roasting pan, and bake for 20 minutes. Then reduce the temperature to 300 degrees F and continue baking for about 1 more hour, or until a meat thermometer stuck in the thickest part reads 145 degrees F. Remove from oven and let rest for at least 10 minutes before slicing.

This is a compilation of several recipes for "Jerk Pork" that I've tried. I don't claim that it has any Jamaican authenticity at all, but we really like it. It's important to find a pork loin (not the tenderloin) that has a nice fat layer on top... it really keeps the moisture in and makes for a very nice presentation when it's browned and crisp. I made this for my mother's friend birthday party, for a crew of very discriminating palates and they went nuts. Prior to that, I didn't have a written recipe for this, but I had demands for the recipe so I had to measure as I re-created it! I hope you enjoy.

1/2 cup chopped scallion
1/2 cup chopped onion
1 garlic clove, chopped
4 serrano chilies or 4 jalapeno chiles, chopped with seeds
1 teaspoon fresh thyme
1 tablespoon fresh lime juice
1 tablespoon cider vinegar
2 teaspoons ground allspice
1 teaspoon coarse salt (kosher or sea salt)
3 tablespoons molasses
1 teaspoon fresh ground black pepper
1/4 teaspoon ground cinnamon

1/4 teaspoon ground ginger
1 lb boneless pork loin, with fat layer intact or 1 1/2-2 lbs pork loin, bone-in

Steps:

  • Marinade:.
  • Put all marinade ingredients into a food processor and process until thoroughly chopped but not to the point that it turns into a paste or too liquid.
  • Put marinade into a large sealable plastic bag (like a Ziploc bag).
  • Meat Preparation:.
  • Lightly score the fat layer of the pork loin.
  • Place meat in bag with marinade.
  • Marinate up to 8 hours in the refrigerator, turning occasionally.
  • Heat oven to 375°F.
  • Remove pork from marinade.
  • Wipe most of marinade off of pork leaving some on fat layer to brown.
  • Roast uncovered, fat side up, for approximately 1 hour (until internal temperature reaches 137°F).
  • If the top gets too browned, cover for a few minutes, but uncover at the end of cooking time.
  • Allow to rest at least 15 minutes before slicing.
