The stromboli that I make uses pre-made pizza dough. But bread dough can be used as well. Kids love this pizza creation and adults love the grown-up pizza creation. Also, I always have left-over mixture, which I use the following day with Spaghetti.

1 (10 ounce) package pizza crust dough
½ pound lean ground beef
1 cup cooked ham, diced
1 green bell pepper, chopped
1 red onion, finely chopped
1 (14 ounce) jar pizza sauce
1 (4.5 ounce) can mushrooms, drained
¼ cup butter, melted
1 (8 ounce) package sliced pepperoni sausage
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a skillet over medium heat, brown the ground beef until no pink shows; drain. Mix in the ham, bell pepper, onions, pizza sauce and mushrooms.
  • Lay pizza dough flat on cookie sheet. Distribute pepperoni slices over dough. Place a heaping pile of the sauce mixture on one side of dough (some may be left over). Sprinkle with mozzarella cheese. Fold dough over and pinch ends and sides together. Poke holes in the top and brush melted butter on it.
  • Cook in a preheated oven for 30 minutes or until golden brown. Slice into individual sections to serve.

16 ounces frozen bread dough (thawed)
1/4 lb thin sliced ham
1/4 lb sliced salami
1/2 teaspoon dried basil
1/2 teaspoon dried oregano, divided
3 ounces sliced provolone cheese
1 cup shredded mozzarella cheese
2 tablespoons garlic butter (or butter)
1 teaspoon cornmeal

Steps:

  • Place dough on lightly greased baking sheet.
  • Pat to a 15x10 inch rectangle.
  • Arrange ham slices lengthwise down the center, follow with salami.
  • Sprinkle with half of seasonings.
  • Top with cheeses.
  • Sprinkle rest of seasonings.
  • Moisten all edges of dough with water.
  • Bring long ends together at center and press securely to seal.
  • Seal ends.
  • Brush dough with butter and sprinkle with cornmeal.
  • Carefully invert, seal side down, on baking sheet.
  • Brush top with rest of butter.
  • Bake at 375° for 20-22 minutes.

STROMBOLI BREAD WREATH

1 pound fresh pizza dough
Nonstick cooking spray, for the pan
2 tablespoons olive oil, plus more for brushing
1 pound sweet Italian sausage, removed from casing
All-purpose flour, for dusting
2 cups fresh or store-bought basil pesto
4 ounces mortadella, thinly sliced and cut into squares
2 ounces pepperoni, thinly sliced and cut into squares
2 ounces Genoa salami, thinly sliced and cut into squares
8 ounces mozzarella, deli-sliced (the drier the better), cut into squares
3 sun-dried tomatoes

Steps:

  • Remove the pizza dough from the refrigerator and allow to come to room temperature, 2 to 3 hours.
  • Preheat the oven to 375 degrees F. Spray a Bundt pan with nonstick cooking spray.
  • Add the olive oil to a medium saute pan over medium-high heat and cook the sausage until brown, 12 to 15 minutes. Transfer to a medium bowl with a slotted spoon and allow to cool slightly.
  • Roll out the dough on a lightly floured surface into a long oval about 10 inches wide by 18 inches long. Spread 1/2 cup pesto in the middle of the dough, leaving about a 2-inch dough border.
  • Add the mortadella, pepperoni, salami and mozzarella to the cooked sausage and toss to combine.
  • Scoop the sausage mixture on top of the pesto. Fold both sides of the dough lengthwise around the filling to create a seam along the center of the log. Crimp the seam to seal. Place in the greased Bundt pan seam-side up. Poke holes along the top to release the steam. Bake until golden brown on top, about 25 minutes.
  • Let rest for 5 minutes. Place a cutting board on top of the Bundt pan and flip the wreath out carefully, then remove the pan.
  • Form a sun-dried tomato bow by cutting one sun-dried tomato in half lengthwise. Arrange the remaining 2 sun-dried tomatoes end-to-end, then wrap one of the halves around its center and secure with a toothpick to make the bow. Cut the remaining half lengthwise into 2 pieces and arrange them hanging down from behind the back of the bow, securing with a toothpick.
  • Serve the wreath with the remaining pesto in a bowl in the center. Garnish with the sun-dried tomato bow and gaze at the glory of the sausage wreath!

VERY EASY STROMBOLI

1 cup water, 75-85 degrees
4 tablespoons vegetable oil
3 1/4 cups all-purpose flour
1 teaspoon sugar
1 teaspoon salt
2 1/4 teaspoons fast rise yeast
5 -6 slices provolone cheese
20 slices thinly sliced pepperoni (to taste)
12 -14 slices hot ham

Steps:

  • Select settings for your bread machine for dough.
  • Add liquid ingredients to pan.
  • Add dry ingredients, except yeast, to pan.
  • Tap pan to settle dry ingredients, pushing some of the mixture into corners.
  • Make a well in center of dry ingredients; add yeast.
  • Lock pan into bread maker.
  • Program for dough.
  • Program timer if used.
  • Start bread maker.
  • When done, unlock pan from bread maker.
  • Place dough onto floured surface.
  • Cut in 2 pieces for thick crust, 3 pieces for thinner crust.
  • Roll out to 2 or 3 14 x 8 rectangles, place the 6 slices of provolone cheese along one edge of each rectangle overlapping each slice enough to run the 14 inch length of crust.
  • Place 3 rows of pepperoni along 14 inch edge overlapping each slice by 1/2.
  • be sure to leave 2-3 inches along opposite edge free of filling so when you roll up it will make a good seal.
  • roll to make a 14 inch loaf making sure to not wrap tightly.
  • Place diagonal slices across top about every 2 inches to vent.
  • Bake at 350°F for 30-40 minutes.
  • Place on oven broiler pan greased (no foil) so any oil from pepperoni can run to bottom pan not soaking into crust.

CINNAMON DESSERT STROMBOLI

My husband remembers this from Pizza Inn; after a Google search I found the recipe on tastebook.com. Very yummy; the bread is so soft and the sugar mixture thickens a bit upon baking! (We like it without the pecans.)

1 lb frozen bread dough, thawed
6 tablespoons melted butter
1 1/3 tablespoons ground cinnamon
5 tablespoons brown sugar
5 tablespoons chopped pecans

Steps:

  • Combine butter, cinnamon, sugar, and pecans in a small bowl; set aside.
  • Roll out bread dough into a rectangle, approximately 1/8" thick; be sure it's not longer than your baking pan! (If it springs back too much, let the dough rest before rolling some more.).
  • Spread the sugar mixure onto the center of the dough, leaving 1/2" at the ends and enough bare dough on the sides for folding over.
  • Bring the long sides in to form a seam on the top; pinch together well.
  • Fold the ends in; pinch, or press closed with a fork- it can easily open while baking and all the yummy sugar mixture will run out!
  • Bake at 350 for about 25 minutes; remove when nicely browned.
  • Let rest for 15 minutes, then slice and enjoy!

I originally made this recipe for a Superbowl party and have made it many times since for my husbands lunches. Great recipe and can be done with a wide variety of variations...Enjoy! Keep in mind the addition of too many fresh vegetables can make the bread soggy!

1 1/4 cups warm water (105 - 115 F)
1 tablespoon yeast
1 teaspoon sugar
2 tablespoons olive oil
2 teaspoons salt
between 3 1/2 - 4 cups flour
about 1/2 pound thinly sliced meats such as ham, salami, turkey, pepperoni, etc. (Cajun turkey is a favorite of mine)
about 1/4 pound sliced cheese (I like Swiss or Pepperjack)
1/4 cup grated hard cheese like romano cheese or 1/4 cup parmesan cheese
italian seasoning (I don't measure, just give it a good sprinkling)
garlic powder
onion powder
thinly sliced tomatoes
thinly sliced onion
thinly sliced bell peppers or roasted sweet peppers
or green olives
roasted garlic
1 egg, beaten
2 teaspoons sesame seeds (optional) or 2 teaspoons poppy seeds (optional)

Steps:

  • Combine 1/4 warm water, yeast and sugar in a large bowl and stir to dissolve. Let stand until foamy, about 5 minutes. Stir in remaining warm water olive oil and salt. Gradually add 1 1/2 - 2 cups flour, mixing until smooth. Gradually add enough remaining flour until you have a smooth dough that comes away from the bowl. Turn dough out onto a lightly floured surface and knead 10 minutes, working in more flour as needed. Shape into a ball, place in a greased bowl and cover with a clean kitchen towel. Let dough rise until doubled, about 1 hour.
  • Preheat oven to 375°F and grease a large baking sheet (if you have a pizza or bread stone in your oven you can forego the baking sheet and bake the stromboli directly on the stone).
  • Punch dough down and cut in half. On a lightly floured surface, roll each dough half into a rectangle about 10" x 8". Arrange fillings over dough as shown in, finishing with a sprinkling of Parmesan, Italian seasoning, garlic powder and onion powder. Roll the dough much like you would if you were making a jelly roll. Pinch the edges of the seam and tuck the ends under.
  • Cut long diagonal slashes, about 1/2 inch deep, along the top of the loaf every 3 inches or so. Brush top of loaf with beaten egg, avoiding the area in the slashes. Sprinkle with poppy or sesame seeds if desired. Bake for about 30 minutes or until bread is golden brown. Cool slightly before cutting and serving, or if you prefer to eat your stromboli cold, cool completely on a wire rack before wrapping and refrigerating. Can be served with pizza sauce or different sauces for dipping!
