EASY CHICKEN ENCHILADAS



Easy Chicken Enchiladas image

This is a great recipe for a quick dinner. There aren't many ingredients and doesn't take a lot of time.

1 (8 ounce) package cream cheese
1 cup salsa
2 cups chopped cooked chicken breast meat
1 (15.5 ounce) can pinto beans, drained
6 (6 inch) flour tortillas
2 cups shredded Colby-Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a small saucepan over medium heat, combine the cream cheese and salsa. Cook, stirring until melted and well blended. Stir in chicken and pinto beans. Fill tortillas with the mixture, roll and place into the prepared baking dish. Spread cheese over the top. Cover with aluminum foil.
  • Bake for 30 minutes, or until heated through. Garnish with your favorite toppings such as lettuce and tomatoes, or sour cream.

This is a recipe that I made years and years ago at a mother-daughter activity and is just your basic, simple enchilada recipe. I think I like it because it is just sooo easy and super fast to make!

1 (10 1/2 ounce) can cream of chicken soup
1 cup sour cream
3 cups cubed chicken
2 cups grated cheese
1 small can green chili
flour tortilla
14 ounces enchilada sauce

Steps:

  • Mix soup & sour cream. Add chicken, grated cheese & chilies. Mix.
  • Divide mix between tortillas, roll up.
  • Put on baking sheet.
  • Pour over sauce.
  • Bake 30 min on 350 degrees.

4 chicken breasts
2 -4 green onions (chopped)
1 (14 ounce) can cream of chicken soup
1 (14 ounce) can cream of mushroom soup
1 (4 ounce) can diced green chilies
16 ounces sour cream
1 lb shredded cheddar cheese
6 flour tortillas

Steps:

  • set aside 1/2 cup cheese.
  • mix everything else together.
  • place most of the mixture in tortillas.
  • Put the rest of it on top of the enchilladas.
  • put remaining cheese on top.
  • bake at 375 for 30 min or until bubbly.

  • Heat a large skillet over medium heat. Add 1 tablespoon oil and sautee onions and peppers for about 4 minutes. Add garlic and continue cooking for another 3-4 minutes, until all veggies are tender. Turn off heat and let cool slightly.
  • In a large mixing bowl, combine sauteed veggies, shredded chicken, all but 3 tablespoons of enchilada sauce, and green chiles. Fold in 1 cup cheese.
  • Fill each tortilla with a "strip" of filling down the center. Roll up tortilla and place seem side down in pan. Continue until you've used up all the filling and tortillas.
