"As snowbirds originally from Iowa, we love these tender chops and sweet potatoes with an orange sauce in the fall, no matter where we are," explains Jean Nieman from Mesa, Arizona.

2 boneless pork loin chops (5 ounces each and 3/4 inch thick)
1 teaspoon canola oil
1 medium sweet potato, peeled and cut into 1/4-inch slices
1 tablespoon butter, melted
1/3 cup orange juice
1 teaspoon brown sugar
1/8 teaspoon salt
1/8 teaspoon ground ginger
1/8 teaspoon ground mace
Dash pepper
2 teaspoons cornstarch
2 teaspoons cold water

Steps:

  • In a small nonstick skillet, brown pork chops in oil. Place in an 8-in. square baking dish coated with cooking spray. Layer with sweet potato; drizzle with butter. , In a small saucepan, combine the orange juice, brown sugar, salt, ginger, mace and pepper; bring to a boil, stirring constantly. Pour over sweet potato., Cover and bake at 350° for 30-35 minutes or until the pork reaches 160° and potato is tender. Remove pork and potato; keep warm. Pour pan juices into a small saucepan. Combine cornstarch and water until smooth; stir into juices. Bring to a boil; cook and stir for 1 minute or until thickened. Serve with pork and sweet potato.

4 pork chops, bone-in
2 sweet potatoes, diced
2 cups broccoli florets
2 tbsp. homemade ketchup
2 tbsp. coconut aminos
1/4 cup chicken stock
2 garlic cloves, minced
2 tsp. apple cider vinegar
2 tbsp. avocado oil
Sea salt and freshly ground black pepper

Steps:

  • Preheat oven to 425 F. In a bowl, combine the ketchup, chicken stock, garlic, apple cider vinegar, and coconut aminos. Season the pork chops to taste with salt and pepper. Pour the mixture over the pork chops, making sure they are well covered. Drizzle the avocado oil over the sweet potatoes and broccoli, and season to taste. Place the pork chops in a baking dish and surround with the sweet potatoes and broccoli. Bake in the oven for about 20-25 minutes depending on the thickness, or until the pork is cooked through and sweet potatoes are soft. Pork is done when the temperature reaches 145 F.

1 1/2 cups panko
5 tablespoons vegetable oil
3 tablespoons grated Parmesan
2 teaspoons dried Italian seasoning
Kosher salt and freshly ground black pepper
Four 3/4-inch bone-in pork chops (about 2 1/4 pounds)
Lemon wedges, for serving, optional

Steps:

  • Preheat the oven to 450 degrees F.
  • Combine the panko, oil, Parmesan, Italian seasoning and 3/4 teaspoon each salt and pepper in a large resealable plastic bag. Put the pork chops in a large bowl and toss to coat with 1 tablespoon water. Place the pork chops in the bag and shake well to coat, pressing the breadcrumb mixture firmly into the meat.
  • Place the pork chops on a wire rack set on a baking sheet and top evenly with any breadcrumbs remaining in the bag. Bake until the breadcrumbs are dark golden and the internal temperature of the chops registers 145 degrees F on an instant-read thermometer (avoid touching bone), 15 to 20 minutes.
  • Serve immediately with lemon wedges if using.

PORK STEW WITH PEARS AND SWEET POTATOES



Pork Stew With Pears and Sweet Potatoes image

It's nice knowing that pears, which we think of almost exclusively for desserts in this country, are often used in savory ways in Eastern European cuisines. In this stew, caraway seeds, allspice and fennel reinforce that heritage, while sweet potatoes add rich, round flavors. Although bone-in ribs seem a bit more flavorful, boneless are also fine here. You can even use a combination of both if that's what turns out to be in the package you buy at the store. Because the pears can turn mushy overnight, this is the rare stew that's actually best served the day that it's made.

2 1/2 pounds boneless or 3 pounds bone-in country-style pork ribs
2 teaspoons kosher salt
2 teaspoons ground black pepper
2 tablespoons vegetable oil, plus more as needed
2 onions, halved and thinly sliced
2 bulbs fennel, fronds removed, bulb cored and thinly sliced
1/2 cup dry white wine
2 large or 3 small sweet potatoes, peeled and cut into 1-inch cubes
2 tablespoons caraway seeds
1 teaspoon ground allspice
2 bay leaves
2 to 3 cups chicken stock
3 pears of your choice, peeled, cored and cut into 1-inch cubes
2 tablespoons lemon juice
Grainy mustard for serving (optional)

Steps:

  • If using bone-in ribs, cut away the bones and set aside. Cut pork into 1-inch cubes, sprinkle the ribs evenly with the salt and allow to stand, refrigerated, for at least 1 hour and no more than 12 hours. Move oven rack to middle position and heat oven to 325 degrees.
  • Dry pork cubes well and sprinkle generously with pepper. Heat oil over medium-high heat in Dutch oven or other large, heavy pot until shimmering. Working in batches to avoid crowding, brown the pork well (including bones if you have them), transferring to a platter as browned, adding more oil in between batches if needed.
  • Add the onions and fennel to the pot and cook, stirring frequently, until onions are transparent, 7 to 10 minutes. Add the wine and bring to a simmer, stirring to dissolve any fond on the bottom of the pot. Add the pork (and bones if you have them), sweet potatoes, caraway seeds, allspice, bay leaves and enough chicken stock to just cover the meat. Bring to a simmer, cover and place in oven for 1 hour. Add the pears to the pot, then continue to cook until meat is very tender, about 30 to 45 minutes more.
  • Remove bones from pot, stir in lemon juice, then serve stew in bowls, passing mustard separately so people can put a dollop on their stew if desired.

4 medium to large parsnips
1 1/2 pounds potatoes, scrubbed and sliced
4 pears, firm
Extra virgin olive oil
Handful fresh thyme
8 to 10 cloves garlic, skins left on
Salt and freshly ground black pepper
1 lemon, zested
4 pork chops

Steps:

  • Preheat the oven to 425 degrees F. Place a large tray in the oven to heat while you prepare your vegetables. Wash and slice the parsnips into quarters lengthwise then slice the scrubbed potatoes into 1/2-inch thick pieces and wash and slice into quarters lengthwise and add to the roasting tray. Dry them with kitchen paper, then place the parsnips, pears, and potatoes in a bowl and coat lightly with olive oil. Add some chopped or pounded thyme, all the garlic cloves, salt and pepper. Then place in the hot tray to cook in the oven for 5 minutes.
  • While the vegetables are in the oven, rub some thyme, lemon zest and seasoning onto the chops. Then place them in the tray with the parsnips and potatoes and add the pears. Cook for around 30 minutes until the meat is tender and the vegetables are golden.

2 medium parsnips (or 2 turnips or 4 carrots)
2 large potatoes
1/4 cup extra virgin olive oil
1/4 cup fresh thyme, divided
10 garlic cloves
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons butter, softened
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
4 pork chops, center cut 1/2 inch thick
2 pears, firm, halved and seed center removed

Steps:

  • Preheat the oven to 425 degrees F. Wash, peel, and slice the parsnips into 1 inch thick peices (same for carrots, but if using turnips, cut in half, then slice into 1/2 inch thick slices). Scrub and slice the potatoes into 1/2-inch thick slices.
  • Place into a large bowl and coat lightly with olive oil. Add 1/2 of the thyme (2 Tbsp), garlic cloves, salt and pepper. Pour into a baking dish and bake in the oven for 10-15 minutes.
  • While the vegetables are in the oven, mix the remaining thyme, softened butter, and seasoning. Rub onto the chops. Quarter pears and scoop out the seed center.
  • Place the chops and pears in the tray with the parsnips and potatoes. Cook about 30 minutes until the meat is tender and the vegetables are golden.

1 teaspoon garlic powder
1 teaspoon seasoning salt
2 egg, beaten
¼ cup all-purpose flour
2 cups Italian-style seasoned bread crumbs
4 tablespoons olive oil
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup milk
⅓ cup white wine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rinse pork chops, pat dry, and season with garlic powder and seasoning salt to taste. Place the beaten eggs in a small bowl. Dredge the pork chops lightly in flour, dip in the egg, and coat liberally with bread crumbs.
