FINNISH OVEN PANCAKES

Finnish Oven Pancakes image

Turn on the oven light while the pancakes are baking to watch large bubbles develop on the baking sheet. It's quite a show!

Categories     Brunch

Time 30m

Yield Serves: 4

Number Of Ingredients 7

2 eggs
1 tbsp ( 15 mL ) melted butter, cooled
3 tbsp ( 45 mL ) granulated sugar
¼ tsp ( 1.25 mL ) salt
2 cups ( 500 mL ) milk (1%)
1 cup ( 250 mL ) all-purpose flour
Toppings/Fillings (see below)

Steps:

  • Preheat oven to 400˚F (200˚C). Line bottoms and sides of two 15 x 10-inch (38 x 25 cm) rimmed baking sheets or jelly roll pans with aluminum foil. Brush foil well with oil using about 1-½ tsp (7 mL) per baking sheet. Place baking sheets in oven for 3 to 4 minutes just before adding pancake batter.
  • Beat eggs with electric mixer in large bowl until blended. Beat in butter, then sugar, salt and milk. Add flour, beating well until blended.
  • Remove hot baking sheets from oven. Pour 1-½ cups (375 mL) egg mixture into each. Place baking sheets in oven. Bake until bubbles form and surface browns, about 20 minutes, switching position of pans in oven after 10 minutes.
  • Remove from oven. Bubbles will deflate. Starting at short end, roll up pancakes. Cut pancakes in half or slices to serve. Top as desired.

FOUR-FLAVOR SHEET PAN PANCAKES

Four-Flavor Sheet Pan Pancakes image

Bake four kinds of pancakes on one sheet pan -- no flipping required! Preheating the oven to 500 degrees F may seem scary, but it mimics the heat of a hot cast-iron griddle, giving you an instant rise and golden brown color.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h20m

Yield 6 servings

Number Of Ingredients 17

2 3/4 cups buttermilk
2 large eggs, beaten to blend
1 1/2 teaspoons kosher salt
1 1/2 teaspoons vanilla extract
1/3 cup plus 1 to 2 teaspoons granulated sugar
2 3/4 cups all-purpose flour (see Cook's Note)
1 tablespoon baking powder
1 1/2 teaspoons baking soda
4 tablespoons unsalted butter, melted
2 tablespoons strawberry jam, preferably seedless, warmed
1/2 cup sliced strawberries
1/2 cup chocolate chips
1 banana, halved crosswise and thinly sliced lengthwise
2 tablespoons light brown sugar
1 teaspoon ground cinnamon
3 tablespoons confectioners' sugar
Maple syrup and whipped cream, for serving

Steps:

  • Position the oven rack in the center of the oven and preheat to 500 degrees F. Whisk the buttermilk, eggs, salt, vanilla and 1/3 cup granulated sugar together in a large bowl until completely combined. Whisk the flour, baking powder and baking soda together in another large bowl until completely combined. Fold the buttermilk mixture into the flour mixture with a silicone spatula until just combined (it's OK if there are a few lumps). Reserve 2 tablespoons of batter in small bowl and set aside.
  • Brush 2 tablespoons butter on a 18-by-13-inch sheet pan and pour in the batter, using a spatula to smooth out the top. Tap the tray on the counter a few times to even out and flatten the batter.
  • Stir the warmed jam in a small bowl until pourable. Imagine the batter in the pan divided into four sections (2 across and 2 down). Dollop the jam, about 1 teaspoon at a time, over the surface of one section. (You want to see red dots of jam sitting on top of the batter.) Using a toothpick or small skewer, swirl the jam into the batter, making a marbled pattern. Top with sliced strawberries.
  • Sprinkle chocolate chips over a second section of the batter. Arrange banana slices in a herringbone pattern over a third section of the batter and sprinkle the fruit with the remaining 1 to 2 teaspoons granulated sugar.
  • Mix the brown sugar, cinnamon and reserved batter together in a small bowl, and dollop, about 1 teaspoon at a time, over the last section of the batter. (You want to see a lot of brown dots sitting on top of the batter.) Using another toothpick or small skewer, swirl the cinnamon mixture into the batter, making a marbled pattern.
  • Put the sheet pan in the oven and immediately reduce the temperature to 400 degrees F. Bake, rotating the sheet pan halfway through baking, until golden brown and a cake tester inserted into the center of the pancake comes out clean, 18 to 23 minutes.
  • Brush the pancake with the remaining 2 tablespoons butter and let cool 15 minutes before cutting. Stir together the confectioners' sugar and 1 teaspoon water in a small bowl and drizzle over the cinnamon swirl quadrant.
  • Serve the pancakes with maple syrup and whipped cream.

LEMON-BLUEBERRY SHEET-PAN PANCAKE

Lemon-Blueberry Sheet-Pan Pancake image

Skip the griddle! This fluffy, sweet oven-baked pancake will save you from flipping cakes for everyone. Instead, mix up the batter and bake off this sheet pan-sized pancake in the oven. While cooks will appreciate the efficiency of this recipe, everyone around the table will appreciate its flavor. The combination of fresh blueberries and lemon zest provides a pleasant, slightly tangy contrast to the sweet blueberry preserves and pancake base. This well-balanced flavor is appealing to adults and still plenty kid-friendly, too. So, whether it's Christmas morning and you don't want to miss a minute of the new-toy joy, or you're just trying to streamline the breakfast routine, it's worth adding this to your recipe box.

CINNAMON ROLL PANCAKES

Cinnamon Roll Pancakes image

Sweet and delicious buttermilk pancakes with a butter, brown sugar, and cinnamon swirl filling. These are great any time of the day and less time consuming than making real cinnamon rolls!

Provided by squeeziebrb

Categories     Breakfast and Brunch     Pancake Recipes

Time 55m

Yield 8

Number Of Ingredients 18

¾ cup milk
2 tablespoons white distilled vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 egg
2 tablespoons butter, melted
1 ½ teaspoons vanilla extract
5 ½ tablespoons packed brown sugar
¼ cup butter, melted
1 ½ teaspoons ground cinnamon
¼ cup butter, softened
2 ounces cream cheese, at room temperature
¾ cup confectioners' sugar
½ teaspoon vanilla extract
cooking spray

Steps:

  • Stir milk and vinegar together in a bowl; set aside until milk "sours", about 5 minutes.
  • Mix flour, white sugar, baking powder, baking soda, and salt together in a separate bowl. Whisk egg, 2 tablespoons melted butter, and 1 1/2 teaspoons vanilla extract into milk mixture. Slowly pour milk mixture into flour mixture while whisking constantly until batter is just moistened and evenly mixed. Lumps are fine.
  • Combine brown sugar, 1/4 cup melted butter, and cinnamon in a small bowl. Place a 1-quart resealable bag into a glass or cup. Pour cinnamon mixture into the bag; refrigerate until filling is as thick as toothpaste, about 10 minutes.
  • Mix 1/4 cup softened butter and cream cheese together in a microwave-safe bowl; heat in microwave for 40 seconds. Stir mixture with a whisk or fork until smooth. Continue heating in microwave and stirring until mixture is completely melted. Stir confectioners' sugar and 1/2 teaspoon vanilla extract into cream cheese mixture until icing is smooth.
  • Heat a griddle or skillet over medium heat and spray with cooking spray. Pour about 2/3 cup batter into the center of griddle. Cook pancake until bubbles start to appear, 2 to 3 minutes. Cut 1 corner off the center of the bag with filling. Swirl filling over pancake, leaving enough space around edges that filling doesn't touch the griddle.
  • Flip pancake and cook until other side is lightly browned, 2 to 3 minutes. Drizzle icing over pancake. Repeat with remaining ingredients, spraying the griddle with cooking spray between each pancake.

Provided by BARB MAXWELL

Categories     Desserts     Cakes

Time 20m

Yield 10

Number Of Ingredients 9

1 cup sifted cake flour
1 ½ teaspoons baking powder
¼ teaspoon salt
2 eggs
¾ cup white sugar
½ teaspoon vanilla extract
2 tablespoons 2% milk
½ cup confectioners' sugar for dusting
1 cup strawberry jam

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 10x15 inch jellyroll pan with parchment paper.
  • Sift together the flour, baking powder and salt. Set aside. In a large bowl, beat eggs and sugar with an electric mixer until thick and pale, about 5 minutes. Stir in the vanilla and milk. Stir in the dry ingredients gradually. The batter will be thin. Pour into the prepared pan.
  • Bake for 8 to 10 minutes in the preheated oven, until the center springs back when pressed lightly. Don't over bake, or it may crack.
  • Generously dust a clean dish towel with confectioners' sugar. Turn the cake out onto the towel, and peel off the parchment paper. Gently roll up the cake using the towel, and let cool for about 10 minutes.
  • Unroll the cake, and spread an even coating of jam onto the top. Roll the cake back up into a tight spiral, and remove the towel. Dust with confectioners' sugar before serving.
