JD'S ANYTHING GOES SAUCE
A recipe a friend of my mother's made up. This is fabulous as a BBQ sauce or on anything, really. We LOVE it on corn dogs. If you are using this as anything except for a grill/BBQ, cut the oil in half or third (or more - my suggestion is to mix the other ingredients and then slowly... VERY SLOWLY... add the oil as it simmers until it "looks right")

- Mix all together.
- Bring to light boil in sauce pan.
- Let simmer for about 15 minutes.
- If you want it thicker, add a few tsp corn starch.

- Combine all ingredients in a small saucepan. Bring to a boil, reduce heat and simmer for 15 minutes. Allow to cool and use as a sauce on a grilled meat.

- Preheat oven to 325 degrees F (165 degrees C).
- Cut about 1/2-inch from the top of the garlic head. Trim the roots so the garlic sits flat. Remove some of the outer layers of papery skin from the garlic, leaving enough so that the cloves stay together. Put garlic into a small casserole dish or baking dish, drizzle olive oil over it, and cover with a lid or aluminum foil.
- Roast garlic in preheated oven until the cloves are soft, about 1 hour.
- Stir brown sugar, pineapple juice, water, teriyaki sauce, and soy sauce together in a saucepan and bring to a boil; reduce heat to low and keep at simmer.
- Squeeze sides of the garlic until the pasty roasted garlic emerges. Measure 2 teaspoons roasted garlic into the saucepan and incorporate into the sauce with a whisk. Reserve remaining roasted garlic for another use.
- Stir lemon juice, white onion, bourbon whiskey, pineapple, and cayenne pepper into the sauce; bring to a simmer and cook until the volume of the liquid reduces by half and is thick and syrup-like, 40 to 50 minutes.

CHICKEN PUTTANESCA
This lovely, gutsy sauce goes wonderful with chicken that has been sauteed first, then gently simmered in the sauce to absorb all the flavours. No need to miss out on the pasta either, as green tagliatelle is the perfect accompaniment! Recipe courtesy of The Delia Collection: Chicken. We love this!

Steps:
- Begin by heating the oil in the frying pan until it's very hot.
- Wipe the chicken breasts with paper towel, then season them with salt and pepper.
- Saute them in the hot oil over a medium heat until they are a rich golden colour n both sides.
- This will take 5 or 6 minutes.
- Transfer the chicken to a plate and add the garlic and chilli to the pan and fry these briefly for about 30 seconds.
- After that, add the tomatoes, tomato puree, olives, capers, chopped basil and some seasoning.
- Stir everything well, bringing it up to a gentle simmer, then return the chicken breasts to the pan, skin side up, pushing them well down into the sauce and basting a little over the top.
- Simmer for 40 to 45 minutes, uncovered, until the chicken has cooked and the sauce has reduced and thickened.
- About 15 minutes before the end of the cooking time, put a large pan of salted water on to heat and bring it up to the boil.
- Then boil the tagliatelle according to the package directions.
- After that, quickly drain and serve with the chicken, sauce spooned over, tagliatelle on the side.
- Garnish with the fresh sprigs of basil and enjoy!
JACK DANIELS DIPPING SAUCE
This is a very close reproduction of TGI Friday's Jack Daniels Sauce. When I find a restaurant food item that I particularly like, I try to reproduce it the best that I can, so I can enjoy it at home. A lot of my recipes that I post are of those items. When I make this sauce I make several jars and hot water can them so I can have some at hand. My grand kids love this sauce on hot wings ( I bake the wings and have several types of sauces for them to choose from). This sauce takes some preparation but is well worth it.

- Cut about 1/2 inch off tops of garlic. Cut the roots so that the garlic will sit flat. Remove the papery skin from the garlic, but leave enough so that the cloves stay together. Put garlic into a small casserole dish, drizzle olive oil over it and cover with lid or foil. Bake in preheated 325 degree oven for 1 hour. Remove garlic and let cool until you can handle it.
- Combine pineapple juice, teriyaki sauce, soy sauce and brown sugar in a medium saucepan overr medium-high heat. Stir occasionally until mixtures boils, then reduce heat until mixture is just simmering.
- Squeeze the sides of the garlic until the pasty roasted garlic is squeezed out. Discard remaining skin. Add this to the simmering mixture and whisk to combine.
- Add remaining ingredients to saucepan and stir. ( I like to add just a touch more J Daniels for my taste).
- Let mixture simmer for 25-30 minutes or until sauce has been reduced by about 1/3 and is thick and syrupy. Make sure it doesn't boil over.
- Serve warm with ribs, chicken or shrimp.
