Pan seared sashimi grade tuna drizzled in a refreshing ginger ponzu sauce and finish off with sesame seeds, this tuna tataki recipe is a delicious treat for seafood lovers. It's easy to make at home too. Don't forget to watch the video tutorial for the preparation process!

½ lb sashimi-grade yellowfin/ahi tuna
2 Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc.)
1 green onion/scallion ((1 Tbsp chopped green onion))
1 knob ginger ((1", 2.5 cm; 1 tsp grated))
3 Tbsp ponzu ((for my homemade recipe, click here))
2 tsp roasted sesame oil
1 tsp soy sauce
1 tsp toasted white sesame seeds
½ lemon
Korean chili thread

Steps:

  • Gather all the ingredients.
  • Grate ginger and slice green onion thinly.
  • Combine the tataki sauce ingredients in a small bowl.
  • Heat the oil in a non-stick frying pan. When the oil is hot, sear the tuna 30 seconds on each side.
  • When all sides are seared, remove from the heat and let it cool. Slice the tuna into ¼ inch (6 mm) pieces. Pour the sauce and serve.

Number Of Ingredients 15

2 cups teriyaki sauce
1/2 cup dry Sherry
4 tablespoons finely chopped ginger
1/2 cup chopped scallions
2 cloves garlic, peeled and minced
1/2 teaspoon cayenne pepper
2 teaspoons freshly ground pepper
1/2 cup lemon juice
4 3-by-3-by-2-inch cubes of fresh tuna, 6 ounces each
5 teaspoons olive oil
10 cups washed and stemmed fresh greens, like spinach, Swiss chard, dandelions or a mixture
1/4 cup water
1/8 teaspoon salt
Freshly ground pepper to taste
1/4 cup Japanese pickled ginger pieces

Steps:

  • Combine the marinade ingredients in a medium-size bowl. Add the tuna and refrigerate for 2 to 3 hours. Thirty minutes before cooking, remove the tuna from the refrigerator and let it come to room temperature. Preheat a grill or broiler.
  • In a large, nonstick skillet, heat 2 teaspoons of the olive oil. Add the greens and cook until wilted. Add the water, salt and pepper. Cook just until greens are tender. Set aside and keep warm.
  • Drain the tuna steaks and pat them dry. Brush with the remaining olive oil. Grill or broil until charred on the outside but still pink in the center, about 1 to 2 minutes on each side. Divide the greens among 4 plates. Place a piece of tuna over the greens. Top with some of the pickled ginger and serve immediately.

¼ cup tamari (gluten-free soy sauce)
¼ cup sesame oil
2 tablespoons mirin (Japanese sweet wine)
2 tablespoons honey
2 tablespoons rice wine vinegar

2 green onions, thinly sliced, divided
2 cloves garlic, minced, or more to taste
4 (6 ounce) tuna steaks
2 tablespoons sesame seeds, or to taste
1 tablespoon olive oil

Steps:

  • Whisk tamari, sesame oil, mirin, honey, vinegar, ginger, green onions, and garlic together in a bowl until marinade is evenly mixed. Place tuna steaks in the marinade and refrigerate for at least 1 hour.
  • Spread sesame seeds onto a plate. Remove tuna from marinade and discard marinade. Press tuna into sesame seeds until evenly coated.
  • Heat olive oil in a cast iron skillet over high heat until very hot; cook tuna in the hot oil until cooked to desired doneness, 30 seconds to 5 minutes per side.

1 tablespoon vegetable oil
1 tablespoon grated gingerroot
1 tablespoon cracked black pepper
4 (8 ounce) tuna steaks, about 1-inch thick
kosher salt
1/2 cup granulated sugar
1/2 cup water
1/2 cup rice vinegar
1/4 cup light soy sauce
4 slices ginger, smashed
2 teaspoons wasabi powder
1 tablespoon water

Steps:

  • Combine oils, ginger and pepper. Brush on steaks.
  • Sprinkle with kosher salt.
  • Marinate for 30 minutes.
  • Combine sugar, water, rice vinegar, soy sauce and ginger.
  • Stir to dissolve.
  • Bring to boil on high heat and reduce until syrupy, about 15 minutes.
  • Make a apste of the wasabi powder and the water.
  • Whisk in wasabi paste.
  • The glaze should be used at room temperature.
  • Grill tuna 2 minutes per side with lid closed for very rare - 3 to 4 minutes per side for medium-rare.
  • Use either a squeeze bottle or a fork to streak glaze over fish.
