My brother gave me this recipe when he was involved in a gourmet cooking group. It is simple yet delicious, especially when the beef is cooked with mesquite briquettes.

1 large onion, chopped
1 cup soy sauce
½ cup browning sauce (such as Kitchen Bouquet®)
4 teaspoons seasoned salt (such as Spice Islands® Beau Monde Seasoning)
2 large cloves garlic

Steps:

  • Blend onion, soy sauce, browning sauce, seasoned salt, and garlic in a blender until smooth.

This is a oil based marinade which is very effective in penatrating tough cuts of meat and tenderizing them.You can use either regular soy or "sweet soy" sauce (found in asian markets).Enough to marinate 2-3 lbs. Marinate for at least 3 hours..over nite if you can.

1 1/2 cups vegetable oil
1/2 cup soy sauce
1/4 cup Worcestershire sauce
1 teaspoon garlic powder
1/2 teaspoon dry mustard
1 teaspoon sugar
1/4 teaspoon five-spice powder (optional)
1 dash ground ginger or 1 dash grated fresh ginger

Steps:

  • mix all ingredients together.
  • blend until emulsified in blender/stick blender.
  • Pour into large ziplock bag with meat.
  • refrigerate at least 3 hours.

1/3 cup vinegar
1 teaspoon dried oregano
1 teaspoon dried basil
1 bay leaf
1 teaspoon dried sage
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 tablespoon dijon-style mustard
1 teaspoon Tabasco sauce
1 teaspoon minced garlic
1/2 onion, minced
1 egg yolk
1 cup vegetable oil
salt
fresh ground black pepper

Steps:

  • In a small bowl, combine vinegar, oregano, basil, bay leaf, sage, thyme, rosemary, mustard, Tabasco sauce, garlic and onion, blend well; beat in egg yolk.
  • Add oil, a few drops at a time, beating after each addition until thick and smooth, season with salt and pepper and blend well.
  • Place London broil in a shallow baking dish, pour marinade over it, cover and refrigerate overnight, turning once or twice.
  • Remove meat from marinade and place over hot coals or under broiler. Grill or broil to desired doneness, turning once, about 7-8 minutes per side for rare, slice and serve immediately.

This is a recipe provided by a chef from a company I used to work for. While it requires a 2 day marinade, it is well worth the wait. The sweetness of the pineapple juice along with the saltiness of the soy sauce makes for a fantastic flavor.

Makes a really yummy London Broil. For those who don't know (and I used to be one of those people) London Broil is a style of making flank steak. So don't look for London Broil in the meat section. Look for flat thin steak.

1/2 cup oil (I use olive oil)
1/2 cup vinegar (I use red wine vinegar)
2 tablespoons Worcestershire sauce
2 teaspoons celery salt
2 teaspoons onion salt
2 teaspoons garlic salt

Steps:

  • Marinade at least 6 or 7 hours in refrigerator.
  • I usually use a gallon size baggie to put everything in.
