BEEF AND GREEN CHILE ENCHILADAS



Beef and Green Chile Enchiladas image

Try these easy, cheesy ground-beef enchiladas, complete with sassy sauce and mild chiles.

1 lb. lean (at least 80%) ground beef
1/2 cup chopped onion (1 medium)
1 cup frozen corn
1/2 cup sour cream
1 (4.5-oz.) can Old El Paso™ Chopped Green Chiles
8 oz. (2 cups) shredded colby-Monterey Jack cheese
1 (10-oz.) can Old El Paso™ Enchilada Sauce
6 (8-inch) flour tortillas
Shredded lettuce, chopped tomatoes and additional sour cream, if desired

Steps:

  • Heat oven to 350°F. In 10-inch nonstick skillet, cook ground beef and onion over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain. Add corn; cook and stir about 3 minutes or until corn is thawed. Stir in sour cream, green chiles and 1 cup of the cheese.
  • Spread about 1/4 cup of the enchilada sauce in 13x9-inch (3-quart) glass baking dish. Spread about 2 teaspoons enchilada sauce on each tortilla. Top each with 2/3 cup beef mixture. Roll up tortillas; place seam side down over enchilada sauce in baking dish.
  • Drizzle remaining enchilada sauce evenly over filled tortillas. Sprinkle with remaining 1 cup cheese. Spray sheet of foil with cooking spray; place sprayed side down on baking dish and seal tightly.
  • Bake at 350°F. for 45 to 50 minutes or until thoroughly heated. Serve garnished with lettuce, tomato and additional sour cream.

2 pounds ground beef
¼ cup chopped onion
2 cups shredded Cheddar cheese, divided
½ cup sour cream
1 tablespoon taco seasoning
1 pinch salt and ground black pepper to taste
2 ½ cups red enchilada sauce
1 ½ teaspoons chili powder
cooking spray
1 (10 ounce) package flour tortillas
1 (15 ounce) can black beans, rinsed and drained
1 (6 ounce) can sliced black olives, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Cook and stir ground beef and onion in a skillet until beef is browned and crumbly, 5 to 7 minutes. Drain off grease. Stir 1 cup Cheddar cheese, sour cream, taco seasoning, and pepper into the beef mixture until cheese is melted. Mix in red enchilada sauce, chili powder, and salt.
  • Warm tortillas in the microwave for about 1 minute. Spoon about 1/4 cup of the beef mixture into the center of each tortilla. Roll tortillas up and place in the casserole dish, seam-side down. Spoon any leftover sauce, black beans, and olives over the tortillas. Sprinkle remaining cheese over the top.
  • Bake in the preheated oven until cheese is melted and filling is bubbling, about 20 minutes.

2 lbs ground beef
20 corn tortillas
2 (12 ounce) cans enchilada sauce (el paso brand)
1 (3 ounce) envelope taco seasoning (el paso)
1 lb shredded cheddar cheese
3 tablespoons vegetable oil

Steps:

  • Brown beef add taco seasoning, and about 1/3 cup of enchilada sauce.
  • In a separate pan, place oil and cook tortillas one by one just for a little bit -- they need to be soft.
  • After that just roll the tortilla stuffed with beef and cheese, until you complete the 20 tortillas, and when you finish bath the tortillas with the rest of the enchilada sauce.
  • Place some more cheese on top, and place in oven for about 20 min at 350 degrees.

1 ounce taco seasoning mix
16 ounces refried beans
1 (10 3/4 ounce) can campbell's condensed cheddar cheese soup
1 medium onion, chopped (about 1/2 cup)
1 cup cooked long-grain rice (optional)
12 flour tortillas, warmed (10-inch)
1 1/2 cups prepared enchilada sauce
shredded cheddar cheese

Steps:

  • Heat the oven to 350°F Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat. Pour off any fat. Stir the seasoning mix, beans, soup, onion and rice, if desired, in the skillet.
  • Divide the beef mixture among the tortillas. Roll up the tortillas and place seam-side down into a 3-quart shallow baking dish. Pour the enchilada sauce over the filled tortillas and sprinkle with the cheese.
  • Bake for 20 minutes or until the enchiladas are hot and bubbling.

1 1/4 lbs ground beef
1 onion, chopped
1 cup sour cream
1 cup frozen corn
2 cups amy's enchilada sauce or 2 cups canned enchilada sauce
2 cups shredded cheese, I used cheddar
10 (6 -8 inch) flour tortillas

Steps:

  • Brown ground beef with onion, until meat is done. Drain grease.
  • Remove from heat and stir in sour cream, frozen corn and 1/4 cup enchilada sauce.
  • Spread about 1/3 cup enchilada sauce on greased 13x9 baking dish, or foil pan.
  • Spoon about 2 TBS of meat mixture onto tortilla with about 2 TBS of cheese.
  • Roll up and place seam side down in pan on sauce.
  • Pour remaining sauce over enchiladas.
  • Top with remaining cheese.
  • At this point you can cover with plastic wrap and foil and freeze.
  • To cook now: Heat oven to 350.
  • Bake covered for 20 minutes or until heated through.
  • Remove cover and bake until cheese is melted and bubbly.
