SWEET AND SPICY JERK SHRIMP



Sweet and Spicy Jerk Shrimp image

Get a taste of island life with Jamaican jerk-seasoned shrimp, juicy pineapple, roasted veggies, and spicy jalapenos. Serve over salad greens or, for a heartier meal, with cooked brown rice.

1 ½ pounds large shrimp in shells
1 (20 ounce) can pineapple slices packed in 100% juice, drained, and cut into 2-inch pieces
2 red bell peppers, cut into thin strips
1 large red onion, sliced
1 jalapeno pepper - halved lengthwise, seeded, and sliced
2 tablespoons olive oil
1 tablespoon Jamaican jerk seasoning
½ cup chopped fresh cilantro
2 cups hot cooked brown rice
1 lime, cut into wedges

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line two 10x15-inch baking pans with foil.
  • Peel and devein shrimp, leaving tails intact if desired. Rinse shrimp and pat dry.
  • Gently toss shrimp together with pineapple, bell peppers, red onion, jalapeno, oil, and jerk seasoning in a large bowl. Divide mixture between the prepared pans.
  • Roast in the preheated oven until shrimp are opaque, about 15 minutes.
  • Sprinkle with cilantro and serve with brown rice and lime wedges.

1 cup unsweetened pineapple juice
1 teaspoon freshly grated lime zest
3 tablespoons lime juice
1 tablespoon canola oil
2 garlic cloves, very finely chopped
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
2 tablespoons jamaican jerk sauce (see Note)
20 large shrimp, peeled and deveined (about 1 pound)
3 cups cooked white rice
1 (16 ounce) can black beans, rinsed
salt & freshly ground black pepper
2 cups fresh pineapple chunks (about 1/2 pineapple)
6 thick scallions, trimmed and cut into 2-inch lengths
1 head boston lettuce, washed, dried and torn
lime slice (to garnish)

Steps:

  • Bring pineapple juice to a boil in a small saucepan over medium-high heat; cook until reduced to 1/3 cup, about 8 minutes. Remove from the heat and whisk in lime zest and juice, oil, garlic, thyme, oregano, cinnamon and allspice. Let cool to room temperature.
  • Whisk together jerk sauce and 1/4 cup of the pineapple-juice marinade in a shallow dish just large enough to hold the shrimp. Add shrimp and turn to coat. Cover with plastic wrap and refrigerate for 30 minutes.
  • Toss rice and black beans in a large bowl with the remaining marinade. Season with salt and pepper and set aside.
  • Preheat grill.
  • Remove the shrimp from the marinade. (Discard the marinade.)
  • Thread 4 long or 8 short skewers with the shrimp, pineapple and scallions. Grill, turning once or twice, until the shrimp are cooked through, 6 to 10 minutes.
  • Arrange a bed of lettuce on a large platter. Spoon the rice-and-bean salad on top. Slide the shrimp, pineapple and scallions from the skewers onto the rice; garnish with lime slices.

1 tablespoon ground allspice
1 teaspoon dried basil
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 tablespoon dried thyme
1 teaspoon cayenne pepper
1 tablespoon light brown sugar
1 tablespoon salt
1 teaspoon freshly ground pepper
1/4 cup olive oil
1/4 cup soy sauce
3/4 cup cider vinegar
1/2 cup freshly squeezed orange juice
2 tablespoons freshly squeeze lime juice
2 scotch bonnet peppers, minced (may use habanero peppers)
1 small onion, minced
3 scallions, thinly sliced
2 lbs shrimp, peeled and deveined

Steps:

  • Prepare the grill or preheat the broiler.
  • Make the sauce: combine all the dry ingredients and mix well. Slowly whisk in the oil, soy sauce, vinegar, orange juice and lime juice. Stir in the peppers, onions and scallions and mix thoroughly. Simmer for about 10 minutes over medium heat.
  • Sprinkle the shrimp with salt and pepper and grill or broil until done, a few minutes. Top (or toss) the shrimp with the sauce and serve immediately.

We have paired spicy Jerk seasoned grilled shrimp with sweet pineaple and black beans and topped it off with a cool coconut lime dressing. This salad will knock your socks off and have you dancing to the Carribean beat in no time. This recipe uses http://www.recipezaar.com/95953 for the Jerk Seasoning. Note: you may substitute Light Coconut milk or use this substitution if you can't find coconut milk. 1 cup low-fat milk + 1/4 tsp coconut extract = 1 cup light coconut milk. Also we think this salad would also be great with chicken instead of shrimp.

1/2 cup coconut milk (or lite substitute listed above)
1/2 cup plain fat-free yogurt (or sour cream)
1 lime, juice of
1 teaspoon cumin
2 garlic cloves (crushed)
2 tablespoons pineapple juice
2 tablespoons rum (or 1 t rum extract)
3 tablespoons light mayonnaise
1 teaspoon sugar
1 lb large shrimp (shelled and deveined and tails off)
2 -3 tablespoons caribbean jerk seasoning (recipe listed above)
1 (8 ounce) can pineapple chunks (drained and juice reserved)
1 large sweet pepper (cut into 1 inch chunks)
4 scallions (cut into 1 inch pieces, green tops disgarded)
1 (15 ounce) can black beans (rinsed and drained)
8 cups lettuce (shredded)
metal skewers or bamboo skewer, soaked in water

  • Set aside.
  • **Just a note of caution. When cutting hot peppers use gloves. Do not touch fingers to mouth or eyes.
  • Place shrimp in a zip top bag. Add 2 to 3 T. of jerk seasoning and alow to marinate at least 30 minutes
  • Meanwhile make dressing, by mixing all dressing ingredients and put in fridge to let flavors marry. (Pineapple juice is from the reserved juice for the salad).
  • Place 2 cups lettuce in each of four plates.
  • Divide black beans equally among plates and put in fridge.
  • Heat grill to med high.
  • Skewer pineapple, green peppers and onion equally among 4 skewers.
  • Skewer shrimp equally among 4 skewers.
  • Place pineapple skewers on grill about 5 mins before shrimp. These will take about 5 mins per side.
  • Place shrimp skewers on grill and grill 3 to 4 mins per side, or until opaque.
  • Layer one skewer of shrimp and one skewer of pineapple and vegetables on lettuce and beans, top with dressing and enjoy.
