WHISKEY-GLAZED SWEET POTATOES



Whiskey-Glazed Sweet Potatoes image

3 pounds sweet potatoes (about 4 large)
1 cup pecans
4 tablespoons unsalted butter, plus more for preparing baking dish
3/4 cup agave syrup, preferably amber
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/4 cup whiskey
2 cups crisp apples, peeled, cored, and sliced into 1-inch pieces

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the potatoes on a baking sheet and cook the potatoes whole, do not pierce. Bake for 45 minutes to 1 hour. Lightly squeeze the potatoes - if they are soft, they are done. Let cool.
  • In a small saute pan over high heat, add the pecans and lightly toast. Add 4 tablespoons of butter, reduce the heat to medium, add the agave and spices, and allow to simmer for 4 to 5 minutes. Add the whiskey and continue to simmer for 5 minutes more.
  • Peel the potatoes and cut into 1/2-inch slices. Butter the bottom and sides of an 8 by 8-inch baking dish. Arrange the sweet potatoes, alternating with the apples. Pour the whiskey-pecan mixture over the top and place in the oven.
  • Bake for 30 minutes, basting the top with the whiskey sauce once at 15 minutes.
  • Remove and serve immediately.

DRUNKEN SWEET POTATOES



Drunken Sweet Potatoes image

A splash of Jack Daniel's is all this recipe needs to give it that extra something-something. The kids can keep their marshmallow topped sweet potatoes. This one is for the grownups.

4 large sweet potatoes, peeled
1/4 cup butter
3/4 cup granulated sugar or light brown sugar
1/8 teaspoon salt
1/4 cup Jack Daniel's whiskey
1/2 cup chopped walnuts or pecans

Steps:

  • Preheat oven to 325 degrees F. Grease a 2-quart casserole dish and set aside. Place the peeled sweet potatoes in a pan of water and bring to a boil over medium-high heat. Boil for 35 minutes or until tender. Drain the potatoes well and let cool slightly. Place the potatoes in a large mixing bowl with the butter and beat on medium speed with the mixer. Add the sugar, salt, and whiskey and mix well. Spread half the sweet potato mixture in the prepared pan. Sprinkle the sweet potatoes with half of the chopped nuts. Spread the remaining sweet potato mixture on top, then top with the remaining nuts. Place the casserole in the oven and bake at 325 degrees F for 35 minutes or until bubbly in the center. Remove from the oven and serve hot.

1 long strip orange peel, sliced
1/3 cup bourbon -
1/4 teaspoon freshly grated nutmeg -
1 3 to 4 inch cinnamon stick -
4 tablespoons butter -
1 cup brown sugar -
3 cups water -
4 large sweet potatoes -

Steps:

  • Wash and dry sweet potatoes and bake at 400 °F for one hour, until potatoes are soft to the touch. Remove from the oven and let cool slightly then remove skin from potatoes.
  • Reduce oven temperature to 350 °F. While the potatoes are baking, combine remaining ingredients in a saucepan. Bring to a boil, then reduce the heat and simmer for 30 to 45 minutes until sauce is slightly thickened.
  • Slice the potatoes 1/2-inch thick into a medium casserole dish. Pour syrup over them and return to the oven and bake for approximately 30 minutes.
  • Tip: To make this dish faster, bake potatoes the night before, leave skin on and throw in the refrigerator until ready to use.

JACK DANIELS SWEET POTATO HASH

At Gaylord Opryland, sweet potatoes are standard issue on the holiday table. Executive Chef Forrest Parker's version combines sweet and smoky flavors, with one of Tennessee's most famous liquors -- Jack Daniels.

4 slices double-smoked bacon
4 sweet potatoes
1 sweet onion
1/2 cup jack daniels tennessee whiskey
4 tablespoons butter, divided use
2 tablespoons bias-cut scallions
salt and pepper

Steps:

  • Preheat the oven to 400 degrees. Julienne and cook the bacon in a sauté pan over medium heat until crisp. Remove the bacon, reserving the rendered fat. Peel and dice the sweet potatoes. Toss them in the rendered bacon fat, lay them flat on a non-stick cookie sheet and roast until lightly browned and cooked through, about 20 minutes.
  • Peel and julienne the onion. Season with salt and pepper. Heat 2 tablespoons butter in a sauté pan over low flame. Add the onions and cook them until well caramelized, about 20 minutes. Deglaze the pan with Jack Daniels. Let the liquid simmer until it is reduced by half. Swirl in the remaining two tablespoons butter.
  • Toss together the crisp bacon, roasted sweet potatoes and caramelized onion mixture. Season to taste with salt and pepper and garnish with scallions.

Sweet Potato Pie is so much better than pumpkin pie, IMHO, LOL! In fact, if it has the same color as Pumpkin Pie it means that someone has used pumpkin pie seasonings. True Sweet Potato Pie is a bright orange, as opposed to the brownish orange hues of Pumpkin. This pie has 3 shots of Jack Daniels. I've been told that the alcohol evaporates, but I can't swear to it. 4 -5 large sweet potatoes
2/3 cup butter, softened to room temp (you can use margine, but why mess with Mother Nature?)
4 large eggs, lightly beaten
2 (15 ounce) cans sweetened condensed milk (I use Eagle Brand, but do NOT substitute evaporated milk!!!)
3 ounces Jack Daniels Whiskey (that's 2 shots)
2 teaspoons vanilla
1 1/2 teaspoons salt
2 deep dish pie shells
whipped cream (optional)

Steps:

  • Pop the sweet taters in the microwave until they are soft inside and easily pierced with a knife.
  • Put them aside and allow them to cool.
  • Preheat the oven to 350 degrees F.
  • Put the eggs in a large bowl and beat them lightly.
  • Add the Eagle Brand, the butter, the vanilla, and the salt.
  • Combine well.
  • By this time the potatoes should be cool enough to touch. The peel should easily come off the potatoes. (I have found this easier that peeling, cubing, and boiling.).
  • Add the potatoes to the Eagle Brand liquids.
  • Mash well until everything is well mixed and smooth.
  • Pour into the 2 deep dish pie crusts.
  • Bake 55 minutes or until a knife inserted into the middle comes up clean.
  • Serve with whipped cream if desired.

1/4 cup butter, softened
3/4 cup sugar
1/8 teaspoon salt

Steps:

  • In a large pan sweet potatoes in just enough water to cover.
  • Bring to a boil, cover and cook until tender, about 35 minutes.
  • Drain and cool, then peel off skins.
  • In mixing bowl mash the potatoes with butter.
  • Add sugar, salt and whiskey.
  • Spread half the potatoes in 1.5 quart buttered casserole dish. Sprinkle with half the pecans. Repeat layers.
  • Bake at 325 for 30 minutes.

¾ cup brown sugar
⅓ cup Tennessee whiskey

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Bring water to a boil in a large pot. Cook sweet potatoes in boiling water until tender, about 7 minutes; drain. Transfer potatoes to a large mixing bowl; mash with a potato masher until smooth. Add 3/4 cup brown sugar, Tennessee whiskey, 1/4 cup softened butter, cinnamon, and nutmeg to the potatoes; stir to incorporate. Spread mixture into a 1-quart casserole dish.
  • Melt 1/4 cup butter in a small skillet over low heat. Stir 3/4 cup brown sugar into the melted butter until incorporated. Add pecans to skillet; cook and stir until the pecans are completely coated in the butter mixture, 2 to 3 minutes. Top sweet potato mixture with the pecans.
  • Bake in preheated oven until browned around the edges, about 25 minutes.
