I picked this up from the Stater Bros Menu Butler program. I only tried it once but with white rice and it turned out very mushy but tasty.

5 1/4 cups canned tomatoes, italian ready cut (I used S&W Diced with Garlic, Oregano & Basil)
3/4 lb turkey sausage, sliced
1 1/2 cups chicken broth (I used Swanson with less sodium)
1/3 teaspoon cayenne pepper
3 cups brown rice (cook according to pkg dir.)

Steps:

  • Cook the rice according to package directions.
  • In a large skillet saute the turkey sausage.
  • Add the tomoatoes, broth and pepper.
  • Stir in the rice, cover and cook on low heat for 5-8 minutes.
  • Stir the Rice until all liquid is absorbed.

Quick and easy Italian Sausage and Rice Casserole. Cooks in just ONE POT! Smoky chicken sausage, juicy bell peppers, and brown rice in a zesty tomato sauce.

2 tablespoons extra-virgin olive oil (divided)
12 ounces cooked Italian chicken sausage links (not breakfast sausage, cut into 1/4-inch slices*)
1 red bell pepper (cored and 1/2-inch diced (about 1 cup))
1 orange or yellow bell pepper (cored and 1/2-inch diced (about 1 cup))
1 small or 1/2 large yellow onion (1/4-inch diced (about 1 cup))
1 teaspoon dried basil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 cup instant brown rice*
2 cloves garlic (minced)
Pinch red pepper flakes (optional)
1 cup low-sodium chicken broth
1 15-ounce can fire-roasted tomatoes in their juices
Chopped fresh parsley (optional for serving)

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick skillet with a tight-fitting lid over medium-high heat. Add the sausage slices and cook for a few minutes on each side, until brown, about 5 to 8 minutes total. Remove to a plate, blot with paper towels to remove any excess oil, and set aside. (Tip: To finish this meal in 30 minutes, prep the peppers and onions while the sausage browns.)
  • With a paper towel, carefully wipe the skillet until it is mostly clean. Heat the remaining tablespoon olive oil over medium high. Add the bell peppers, onion, basil, salt, and pepper and cook until the onion begins to soften and brown, about 3 minutes. Add the rice, garlic, and red pepper flakes, stirring to coat the rice. Cook until fragrant, about 30 seconds. Add the chicken broth and canned tomatoes in their juices, stirring well. Bring to a boil, stir again, then cover and simmer on low heat for 5 minutes.
  • Stir in the reserved sausage slices until evenly distributed, then re-cover the skillet and remove from the heat. Let stand 5 minutes, until most of the remaining liquid is absorbed and the rice is tender. Sprinkle with parsley and serve warm.

1 pound ground pork sausage
¼ cup diced carrots
¼ cup diced celery
¼ cup minced onion
2 cups reduced sodium chicken broth
1 ½ cups fresh baby spinach leaves
1 (5.4 ounce) package Knorr® Rice Sides™ - Herb & Butter
Shredded Parmesan cheese, for topping

Steps:

  • Shape ground sausage into 1/2-inch mini meatballs. Heat a large non-stick skillet over medium to medium-high heat. Cook sausage balls until no longer pink in the center, 8 to 12 minutes. Transfer meatballs to a paper-towel-lined plate. Drain all but a tablespoon of the grease from the skillet.
  • Place carrots, celery, and onion in skillet and cook over medium heat until vegetables are tender, about 10 minutes. Add chicken broth, baby spinach, and Knorr® Rice Sides™ - Herb & Butter. Cook according to package instructions.
  • Transfer meatballs back to skillet; cook until heated through, about 5 minutes. Serve topped with Parmesan cheese.

1 package (19-1/2 ounces) Italian turkey sausage links, casings removed
2 shallots, finely chopped
3 garlic cloves, minced
1 carton (32 ounces) reduced-sodium chicken broth
3/4 cup uncooked whole wheat orzo pasta
1/4 teaspoon pepper
10 cups coarsely chopped escarole or spinach
1/2 cup coarsely chopped fresh Italian parsley

Steps:

  • In a 6-qt. stockpot, cook sausage, shallots and garlic over medium heat until sausage is no longer pink, 6-8 minutes, breaking up sausage into crumbles. Drain., Add broth to sausage mixture; bring to a boil. Stir in orzo, pepper and escarole; return to a boil. Reduce heat; simmer, uncovered, until orzo is tender, 10-12 minutes. Stir in parsley before serving.

1 pound bulk Italian sausage
1 cup uncooked long grain rice
1 large onion, chopped
1 garlic clove, minced
2 cups water
1 teaspoon salt
1/4 teaspoon hot pepper sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup frozen peas, thawed

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Add the rice, onion and garlic; cook and stir until onion is tender. Stir in the water, salt and hot pepper sauce. Bring to a boil. Reduce heat; cover and simmer for 18-20 minutes or until rice is tender., Stir in tomatoes and peas; cover and cook 5-10 minutes longer or until peas are heated through.
