1 lb tilapia or catfish fillets, cut into 4 serving pieces
1 teaspoon salt-free seasoning blend
1 tablespoon olive or canola oil
1 clove garlic, finely chopped
1 pint (2 cups) cherry tomatoes, cut in half
1/4 cup sliced ripe olives, drained

Steps:

  • Sprinkle both sides of fish fillets with seasoning blend. In 12-inch nonstick skillet, heat oil over medium-high heat. Add fish; cook 6 to 8 minutes, turning once, until golden. Remove fish from skillet; cover to keep warm.
  • Heat same skillet over medium-high heat. Add garlic; cook and stir 30 seconds. Add tomatoes; cook about 3 minutes, stirring occasionally, until softened and juicy. Stir in olives. Serve over fish.

4 tilapia fillets
3 tablespoons olive oil
sea salt in moderation and pepper
1 large fennel, heart finely chopped
1 small yellow onion, chopped
2 large tomatoes, peeled, seeded and coarsely chopped
100 ml chicken broth
2 tablespoons capers
1 tablespoon dried oregano or 1 tablespoon blend mixed Italian herbs

Steps:

  • In a saucepan, heat 2 tablespoon of oil and cook fennel and onion for about 1 minute. Add tomatoes and simmer for 4 minutes.
  • Add broth, capers, oregano or italian herbs and cook for 3 to 4 minutes longer.
  • Heat remaining oil in a skillet or on a grill. Cook tilapia fillets for 2 to 3 minutes per side. Season to taste with fennel and caper sauce.

1/4 teaspoon pepper
1 can (14-1/2 ounces) diced tomatoes with basil, oregano and garlic, drained
1 large onion, halved and thinly sliced
1 medium green pepper, julienned
1/4 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 350°. Place tilapia in a 13x9-in. baking dish coated with cooking spray; sprinkle with pepper. Spoon tomatoes over tilapia; top with onion and green pepper., Cover and bake 30 minutes. Uncover; sprinkle with cheese. Bake 10-15 minutes longer or until fish flakes easily with a fork., Freeze option: Cool fish mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. ¼ cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
¼ teaspoon dried basil
¼ teaspoon ground black pepper
⅛ teaspoon onion powder
⅛ teaspoon celery salt
2 pounds tilapia fillets

Steps:

  • Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
  • In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
  • Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. 1 cup Italian seasoned breadcrumbs
2 tablespoons parmesan cheese
1/2 teaspoon garlic powder
1/2 cup reduced-fat Italian salad dressing

Steps:

  • Preheat oven to 400 degrees F.
  • Mix breadcrumbs, parmesan cheese, and garlic powder in a quart size ziploc bag.
  • Pour Italian dressing in a different quart size ziploc bag.'.
  • Place tilapia, one piece at a time, into the bag with Italian dressing and shake.
  • Then put in the bag with the breadcrumb mixture and shake.
  • Repeat with other fillets. Mound any unused breading on top of fish.
  • Bake in 400 degree oven for 20 minutes, until fish is done and topping is browned.

Steps:

1 teaspoon oregano
salt and pepper, to taste
1 teaspoon parsley, finely choopped
2 garlic cloves, minced
3 teaspoons extra virgin olive oil
1 lemon, cut into 6 wedges

Steps:

  • Line the broiler pan with aluminium foil.
  • Pat the fish dry then place it on the pan. Season both sides of the fish with the salt, pepper, oregano and parsley.
  • Drizzle the fish with the olive oil then top with the garlic.
  • Set the broiler and place the fish about 8 inches away. Cook until the fish is cooked through and flaky, about 8 minutes. (Time depends on the thickness of the fillets.) Be careful not to burn the garlic.
