Italian Sausage Skillet, served over rice or pasta, is a hearty favorite. "This garden-fresh dish gets extra color from a can of stewed tomatoes," Eve notes. "The Italian sausage has so many wonderful flavors you don't need to add any other seasonings."

1-1/4 pounds uncooked Italian sausage links
3 small zucchini or yellow summer squash, cubed
1/2 cup chopped onion
1 can (14-1/2 ounces) stewed tomatoes
Hot cooked rice or pasta

Steps:

  • In a large skillet, cook the sausage over medium heat until no longer pink; drain. Remove from the pan; cool slightly before cutting into 1/4-in. slices; return to the pan. Add zucchini and onion; cook and stir for 2 minutes. Stir in tomatoes. Reduce heat; cover and simmer for 10-15 minutes or until the zucchini is tender. Serve with rice or pasta.

1 pound bow-tie pasta
1 cup whole-milk ricotta
1 lemon, zested and juiced
Freshly ground black pepper
2 tablespoons olive oil
1 pound bulk Italian sausage
1 tablespoon fresh oregano, chopped
2 teaspoons crushed red pepper
3 cloves garlic, minced
1 sweet onion, such as Vidalia, sliced
1 bunch broccolini, cut into 1-inch pieces
1/2 cup jarred roasted red bell pepper strips, drained
1/2 cup yellow cherry tomatoes, halved
1/2 cup freshly grated Parmesan
10 to 12 fresh basil leaves
1 loaf ciabatta or focaccia, warmed, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions.
  • Mix together the ricotta and lemon zest in a small bowl and season with salt and pepper; set aside.
  • Meanwhile, heat the olive oil in a large cast-iron skillet over medium-high heat. Tear the sausage into 1- to 2-inch chunks and place in the skillet. Cook for 60 to 90 seconds, then flip and cook for an additional minute. Add the oregano, crushed red pepper, garlic and onion and cook, stirring occasionally, until the sausage is cooked through, about 4 minutes. Stir in the broccolini and jarred peppers. Using a ladle, remove 2/3 cup cooking water from the pasta pot and add to the skillet. Cook until the sauce is thickened and the broccolini is softened, about 3 minutes.
  • Drain the pasta once cooked.
  • Remove the skillet from the heat and stir in the pasta, lemon juice, yellow tomatoes and Parmesan. Dollop on the ricotta mixture; tear the basil leaves into large pieces and sprinkle them over the skillet. Serve the bread alongside the pasta, whole or torn into large chunks.

1 lb Italian sausage, cut into 2-inch slices
2 tablespoons olive oil
1 red bell pepper, coarsely chopped
1 orange bell pepper, coarsely chopped
1 yellow bell pepper, coarsely chopped
2 medium onions, coarsely chopped
4 large potatoes, peeled and cubed
3/4 teaspoon salt
1/2 teaspoon pepper
1 teaspoon italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon fennel seed
1/2 cup water

Steps:

  • In a large nonstick skillet, brown sausage in 1 T olive oil; remove from skillet.
  • Add remaining olive oil to skillet and saute peppers and onions for 5 minutes; remove from skillet.
  • Add potatoes, salt, pepper, Italian seasoning, garlic powder, fennel seed and water to skillet; simmer over medium heat, covered, about 5 minutes.
  • Return sausage, peppers and onions to skillet and mix well. Cover and simmer about 10 minutes, stirring occasionally, or until sausage is done and potatoes are tender.

4 cups uncooked whole wheat spiral pasta
1 pound Italian turkey sausage, casings removed
1 medium onion, chopped
1 garlic clove, minced
2 medium zucchini, chopped
1 large sweet red pepper, chopped
1 large sweet yellow pepper, chopped
1 can (28 ounces) diced tomatoes, drained
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions; drain. , Meanwhile, in large skillet, cook sausage and onion over medium-high heat until sausage is no longer pink, 5-7 minutes. Add garlic and cook 1 minute longer. Add zucchini and peppers; cook until crisp-tender, 3-5 minutes. Add tomatoes, salt and pepper. Cook and stir until vegetables are tender and begin to release their juices, 5-7 minutes. Serve with pasta.

3/4 lb Italian sausage
6 ounces Italian pasta (boxed creme-type, with seasonings, such as Pasta-Roni)
1 large green bell pepper, de-seeded and cut into strips
1/2 cup onion, chopped
1/2 cup cheese (shredded, any white blend, your choice)
1 1/2 cups water, warmed
3/4 cup whole milk, pre-warmed
2 tablespoons butter

Steps:

  • Remove any casings from the sausage and discard.
  • Crumble the sausage into a large skillet, brown over medium heat and drain, (if necessary).
  • To the browned sausage in the skillet, (over medium-high heat), add the water, milk, butter, and pasta box contents, including the seasonings that come with it. Bring to a boil.
  • As it comes to a boil, add the bell pepper and onion and reduce the heat to medium-low. Allow it to boil gently for 9 minutes, stirring occasionally -- pasta should be slighty firm at the end of the 9 minutes.
  • Remove skillet from burner, stir, and allow to stand, covered, for five minutes.
  • At the end of the 5 minutes, sprinkle the cheese over the top, re-cover and allow to stand for 3 more minutes, (to melt cheese), before serving.

Turn the heat to medium high, then sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper and stir to coat. When the skillet becomes hot and begins to sizzle, immediately reduce the heat to low. Cover and cook until the vegetables soften and brown, about 25 to 35 minutes. Shake the pan occasionally to prevent the potatoes from sticking. Remove the pan from the heat and let sit for 5 minutes, covered. Remove the vegetables to a dish or plate and set aside.
  • Return the skillet to medium-low heat. Add the sausage pieces and cook, stirring occasionally, until the sausage has begun to brown and is almost (but not completely) cooked through, about 12 minutes. To the skillet, add the quartered mushrooms, remaining 1/2 teaspoon salt, 1/4 teaspoon pepper, and oregano. Cook for 3 minutes, then add the garlic, half of the green onions, and the cherry tomatoes. Continue cooking until the mushrooms become slightly brown and the tomatoes soften and lose their firm shape, about 5 additional minutes. Check the sausage for doneness. If not yet ready, cook a few minutes longer, until cooked through.
  • Add the reserved potatoes and carrots to the skillet and mix well. Stir in the peas, then cook 2 to 3 additional minutes to warm through. Sprinkle with remaining green onions, then serve.
