Provided by Food Network

Time 2h30m

Yield 8-10 servings

Number Of Ingredients 15

2 pkgs Johnsonville® Mild Italian Sausages (19 oz each)
2 cups dried cannellini beans
10 fresh sage leaves (separated, & more for garnish)
1 med tomato, cored and halved
1/4 cup olive oil
3 cloves garlic, minced
1 cup finely chopped onions
2/3 cup finely chopped carrots
2/3 cup finely chopped celery
1/8 tsp red pepper flakes
2 cups crushed canned plum tomatoes
1 1/2 tsp salt
1/2 tsp pepper
1 1/2 cups chicken stock
1/3 cup mascarpone cheese* (can substitute with cream cheese)

Steps:

  • Place the beans in a large bowl with water, using your hand swirl the beans around to rinse them and discard any small stones or beans that look brown. Drain the beans in a colander, rinse and refill the bowl with beans and a generous amount of water (at least 2-3 inches above the beans) and let soak overnight or for at least 6 hours.
  • Drain the beans, rinse well and place in a Dutch oven or large pot. Add 7 cups water, 5 of the sage leaves, the tomato halves and bring to a boil uncovered over med-high heat. Reduce heat to a gentle simmer and cook uncovered until the beans are tender 1 1/2 - 2 hours, be sure to test for doneness. Drain and reserve the beans, discard the sage and tomato halves.
  • In a large sauce pan, heat oil over medium heat. Add garlic, 5 remaining sage leaves, onions, carrots, celery, red pepper flakes and saute for 8-10 minutes until the ingredients are soft and translucent. Stir in the cooked beans and crushed tomatoes. Add the salt, pepper and the chicken stock. Stir together and simmer gently, when all ingredients are combined and warmed, stir in the mascarpone cheese until melted and evenly folded into the tomato and bean mixture. Add salt and pepper to taste. Cover saucepan to keep warm and turn off heat until ready to serve.
  • Cook the sausage by braising or grilling. Once the sausages are cooked, transfer them to a cutting board and cut into halves or thirds. Transfer the warm beans to individual bowls and arrange sausage pieces on top. Garnish with a sprig of fresh sage.
  • * To Serve 4-5, prepare the same recipe with 1 package of Johnsonville Italian sausage.
  • * mascarpone cheese is a mild flavored, creamy Italian cheese and can be found in the specialty cheese section of most grocery stores.

Time 45m

Number Of Ingredients 14

1 head garlic
1 teaspoon olive oil
pinch kosher salt
1 29 ounce can Cannellini beans ((white kidney beans))
3/4 teaspoon fresh chopped rosemary
3/4 teaspoon fresh chopped thyme
1/2 teaspoon fresh chopped sage
5 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt
2 tablespoons fresh lemon juice
head of roasted garlic (peeled)
1/4 cup oil packed, sun-dried tomatoes (finely chopped)
drizzle of good olive oil
sprinkle of fresh herbs

Steps:

  • Preheat the oven to 400.
  • Use a sharp knife and trim the top 1/3" - 1/2" of the head of garlic. Place the garlic in a small piece of tin foil (use the trimmed pieces as well) Drizzle with olive oil and sprinkle with salt.
  • Seal up the tin foil and roast for 30 minutes or until garlic is very tender. Remove from oven and let the garlic rest until it's cool enough to handle. Remove the garlic cloves from the peel and set aside.
  • Heat the olive oil in a small pan over medium high heat until the oil starts to moire and is hot but not smoking. Turn off the heat and immediately add the chopped herbs. The oil will sizzle because of the freshness of the herbs. Swirl the pan so that the herbs are completely coated with the hot oil and set aside.
  • Drain the cannellini beans in a mesh strainer, but DO NOT RINSE THE BEANS. Discard the bean liquid. Transfer the beans to the bowl of a food processor. Pulse several times until the beans resemble a chunky dip.
  • To the bean mixture, add the oil and herb mixture, kosher salt, and lemon juice. Pulse 4 to 5 times to incorporate the ingredients. Add the garlic and lemon juice and pulse to puree the roasted garlic.
  • Add the chopped sun-dried tomatoes and pulse 2-3 times to combine.
  • Transfer the white bean dip to a serving bowl. Drizzle a little olive oil over the top of the dip and sprinkle with fresh herbs. Serve with pita chips or fresh crudite.

ITALIAN SAUSAGE & CANNELLINI BEAN DIP

Italian Sausage & Cannellini Bean Dip image

Hubby drives buses for Sarasota County Area Transit, best known as SCAT. Every 4-6 weeks they like to have a potluck lunch for the drivers on duty on Sunday as a treat since a lot of local restaurants the drivers like are closed, and Sundays there aren't as many drivers on duty as the routes are modified to the most used...

Time 1h20m

Number Of Ingredients 11

2 lb bulk italian sausage, cooked, drained, and broken into bite size pieces
1 medium onion, chopped
1 red bell pepper, chopped
1 6 oz can black olives, drained and sliced
2 15.5 oz cans cannellini beans [white kidney beans] drained
1 7 oz can chopped green chile's
2 10 oz cans rotel diced tomatoes, mexican lime & cilantro flavored, undrained
4 8 oz packages cream cheese, softened
1 16 oz package sour cream
2 tsp minced garlic, or to suit your taste
2 Tbsp fresh ground black peppercorns, or to suite taste

Steps:

  • 1. Brown, and break apart while cooking, the Italian sausage in a heavy skillet on medium heat to prevent burnt meat. If you prefer something spicier, get the Hot Italian bulk sausage. Or, you can use regular bulk sausage. Once the meat is cooked through, drain fat off by letting the meat cool on paper towels.
  • 2. While the sausage is cooking, chop the onion, red pepper, slice the drained black olives into a medium bowl to add later.
  • 3. Put the 2 cans of drained cannellini beans in a large bowl with the can of chopped green chilies. I used my metal potato masher [not a small squared shapes plastic masher] to start mixing the beans and the chilies.
  • 4. Add the two cans of undrained Rotel diced tomatoes, and 1 block of cream cheese at a time, and blend it in with the potato masher until roughly smooth. Blend in the sour cream, garlic, and black pepper with the potato masher until the mixture is fairly smooth.
  • 5. Add the cooled, drained, sausage as you break the meat apart into smaller pieces. Add the bowl of chopped veggies and fold it all into the mixture until well blended. If you have a lid for your large mixing bowl, just snap it on, and chill several hours before serving. I had to divide my batch between two large rectangular containers with tight fitting lids.

Time 1h5m

Yield 4 servings

Number Of Ingredients 11

Vegetable oil cooking spray
2 tablespoons extra-virgin olive oil
2 medium fennel bulbs, outer layers removed, chopped
1 medium onion, chopped
1 1/2 teaspoons kosher salt
1/2 teaspoon red pepper flakes
One 28-ounce can diced tomatoes
One 15-ounce can cannellini beans
One 10-ounce bunch kale, center rib removed, leaves chopped into 1/2-inch pieces
1 cup low-sodium chicken broth
4 turkey or chicken Italian sausage links

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Spray a grill pan with vegetable oil cooking spray.
  • In a Dutch oven, heat the oil over medium-high heat. Add the fennel, onion, 1 teaspoon of the salt and the red pepper flakes. Cook, stirring constantly, until the vegetables are soft, about 5 minutes. Add the tomatoes (plus juices), beans, kale and broth. Bring the mixture to a boil. Cover the pan with a tight fitting lid and transfer to the oven. Cook until the vegetables are tender and the kale has wilted, 25 to 30 minutes.
  • While the stew is cooking, place a grill pan over medium-high heat or preheat a gas or charcoal grill. Add the sausages and grill, turning occasionally, until cooked through, about 20 minutes. Cool and cut into 1/2-inch-thick slices.
  • Remove the pan from the oven and add the cooked sausage slices. Season with the remaining 1/2 teaspoon of salt. Spoon the stew into bowls and serve.
