BIG ITALIAN SALAD
This Italian salad pairs nicely with Italian comfort food. You'll love the homemade dressing!

Steps:
- Make the dressing: Combine all dressing ingredients in a food processor and blitz to blend.
- Place all of the salad ingredients except for the cheese in a large bowl. Right before serving, add about half of the dressing and toss well. Add more dressing little by little as necessary; be sure to dress greens very generously, otherwise salad will be bland. Toss in the cheese, then taste and adjust seasoning with salt and pepper, if necessary.
- Note: Ricotta salata is an Italian sheep's milk cheese that has a salty, slightly tangy flavor, almost like a dry Italian feta. It is not the same as the wet ricotta in the tub. You can find it at Whole Foods, gourmet grocers or specialty cheese shops.
- Note: Nutritional information was calculated assuming ½ cup of ricotta salata and all of the dressing was used.

- Preheat oven to 450°. For croutons, spritz bread cubes with butter-flavored spray; place in a bowl. Sprinkle with Italian seasoning and garlic powder; toss to coat evenly. , Transfer to a greased 15x10x1-in. baking pan. Bake until golden brown, 8-10 minutes, stirring once or twice. Cool. , Meanwhile, in a large bowl, combine romaine, tomatoes, olives, Parmesan cheese, onion and pepperoncini. Drizzle with salad dressing; toss to coat. Top with croutons.

- In a small bowl, mix together the garlic salt, onion powder, sugar, oregano, pepper, thyme, basil, parsley, celery salt and regular salt. Store in a tightly sealed container.
- To prepare dressing, whisk together 1/4 cup white vinegar, 2/3 cup canola oil, 2 tablespoons water and 2 tablespoons of the dry mix.

ITALIAN SALAD MIX
This is a great salad served in Italian and French restaurants in South Louisiana. It was known by another name, but most restaurants changed the name because it might offend. Some Italian restaurants refuse to do so and say that since they are Italian and are not offended, they will do what they want. This is my husband's favorite salad.

- Mix ingredients and store in an air-tight container.
- Will keep for several months.
- To use in an oil-and-vinegar dressing: Mix 1 Tbsp mix with 1/4 cup vinegar, 2 Tbsp water, and 2/3 cup oil (or a combination of oils to equal this amount) in a covered container.
- Shake vigorously.
- To use with mayonnaise or yogurt as a salad dressing: Mix 1 Tbsp mix with 1/4 cup mayonnaise and 1 Tbsp water in a covered container.
- Shake vigorously.
- To use with mayonnaise, yogurt or sour cream as a dip: Mix 1 Tbsp mix with 1/4 cup of spread.
- (You can also add some Dijon mustard and other herbs to your preference.) Serve with raw vegetables.

- Mix all the dry ingredients together.
- Keep in airtight package until ready to use (The dressing is intended so that you can make several "packets" to keep on hand. The "packet" refers to one recipe of the seasoning mix)
- Can be stored for up to 6 months.
- When salad dressing is needed, combine 1 packet of mix with oil, viegar and ketchup in a blender at high speed for about 7 seconds.
- Pour into a 2-cup container with tight fitting lid and allow to stand at room temperature for about 5 hours.
- Refrigerate 30 minutes before serving.
- Pour over salad and enjoy.
