Italian sausage, pepperoni, banana peppers, mozzarella, and pizza sauce make for great nachos.

1 pound bulk Italian sausage
1 (7-1/2 ounce) bag tortilla chips
1 (2 ounce) package sliced pepperoni
½ pound shredded mozzarella cheese
½ cup banana peppers, drained
1 ¼ cups pizza sauce

Steps:

  • Preheat your oven's broiler.
  • Crumble the sausage into a large skillet over medium heat. Cook and stir until no longer pink; drain.
  • Arrange the tortilla chips on a baking sheet. Top with sausage, pepperoni, mozzarella cheese, and banana peppers. Place nachos under the preheated broiler until the cheese is melted, 5 to 8 minutes. Serve with pizza sauce for dipping.

Delicious Italian twist on nachos! These hot appetizers made using Italian sausage are ready in just 35 minutes!

28 slices (1/4 inch thick) baguette French bread (from 12-oz loaf, 2 to 2 1/2 inches in diameter)
Olive oil cooking spray
1/2 lb bulk hot Italian sausage
2/3 cup Alfredo pasta sauce
1 teaspoon Italian seasoning
1 large tomato, seeded, chopped (1 cup)
1 can (2 1/4 oz) sliced ripe olives, drained
1 1/2 cups shredded mozzarella cheese (6 oz)
Chopped fresh parsley, if desired

Steps:

  • Heat oven to 400°F. Line large cookie sheet with foil. On cookie sheet, arrange bread slices with sides touching. Spray tops of bread slices lightly with cooking spray. Bake 6 to 8 minutes or until light golden brown.
  • Meanwhile, in 10-inch skillet, cook sausage over medium-high heat 5 to 7 minutes, stirring occasionally and breaking into small pieces, until no longer pink; drain. Stir in Alfredo sauce and Italian seasoning.
  • Spoon sausage mixture evenly over bread slices. Sprinkle evenly with tomato, olives and cheese. Bake about 6 minutes or until cheese is melted. Sprinkle with parsley. Serve hot.

We haven't met a plate of nachos we didn't like and we fell in love with this Italian twist. All the ingredients hit the spot with their Italian flavors. Sweet, tangy, and cheesy, this is a fun and easy snack recipe.

1 package(s) (of 2) garlic or original naan flatbreads
2/3 cup(s) alfredo sauce or other white cheese sauce
1 cup(s) shredded mozzarella or Italian blend cheese
1 cup(s) sliced grilled chicken
1/4 cup(s) sliced black olives
1/4 cup(s) sliced pepperoncini peppers
1/4 cup(s) sweet banana pepper rings
1/4 cup(s) marinated red pepper strips
1/2 cup(s) thinly sliced red onions
1/2 teaspoon(s) Italian or bruschetta seasoning

Steps:

  • Preheat oven to 375 degrees. Spray the two naans on both sides with a little cooking spray. Cut each naan into 10 triangles.
  • Place the triangles on a large baking sheet. Place in 375 degree oven for 8-10 minutes or until lightly brown and crispy.
  • Remove from oven and arrage the naan chips on an oven-safe skillet or dish. Drizzle with the alfredo sauce. Sprinkle with half of the shredded cheese. Arrange chicken on top of the cheee.
  • Sprinkle with black olives, peppers, and onions.
  • Sprinkle with the remaining cheese.
  • Place back in 375 degree oven, for about 8-10 minutes, until cheese is melted and lightly browned.

12 wonton wrappers
1 egg white, frothed
2 tablespoons olive oil
1/2 teaspoon oregano or 1/2 teaspoon italian seasoning mix
1/2 lb Italian sausage, cooked and crumbled
1 (10 ounce) container refrigerated four cheese pasta sauce or 1 (10 ounce) container alfredo sauce
1/2 cup chopped tomato
1/4 cup sliced green onion
1 (2 1/4 ounce) can sliced ripe olives
2 tablespoons pickled jalapeno peppers (more to taste) or 2 tablespoons banana peppers, chopped
1 cup shredded mozzarella cheese
1/4 teaspoon red pepper flakes

Steps:

  • Cut wontons into 4 triangles each and toss lightly in olive oil.
  • Cover a cookie sheet with a single layer of wontons. Brush with egg white and sprinkle with oregano or Italian seasoning.
  • Bake at 400ºF for 6 minutes or until lightly browned.
  • Meanwhile, heat the sauce, brown the Italian sausage and drain fat.
  • On a platter layer the pasta chips, sausage, and sauce. Top with the tomato, onions, olives and peppers. Finish with shredded cheese and red pepper flakes.
  • Place in warm oven for 5 minutes to melt cheese and serve.

8 piquante peppers, seeded and diced (recommended: Peppadew)
4 Roma tomatoes, seeded and small diced
1/3 cup minced red onion
1/4 cup chopped Italian parsley leaves
2 tablespoons capers, 1 tablespoon roughly chopped, 1 tablespoon whole
2 tablespoons piquante pepper juice
1 tablespoon minced garlic, about 2 cloves
1 tablespoon extra-virgin olive oil
1 teaspoon freshly cracked black pepper
Pinch kosher salt
1 tablespoon extra-virgin olive oil, divided
1/2 pound ground beef (80/20 lean muscle to fat ratio)
1/2 pound Italian turkey sausage, casings removed
1/4 yellow onion, small diced, about 1/4 cup
1 tablespoon minced garlic
1/4 cup ricotta cheese
1/4 cup sour cream
8 ounces mozzarella, grated
2 ounces hard salami, julienned
1 tablespoon julienned basil leaves
4 green onions, thinly sliced
2 tablespoons sliced pepperoncini, optional

Steps:

  • Salsa:
  • Combine all the ingredients in a nonreactive bowl. Set aside and allow the flavors to marry.
  • Filling:
  • In a medium-sized saute pan over medium-high heat, add half of the olive oil. Cook both the ground beef and turkey sausage until cooked through, then remove them from the pan to a plate. Add the remaining olive oil to the pan and saute the onion until it turns opaque, about 4 to 5 minutes. Stir in the garlic and cook for 2 minutes longer while preventing it from burning. Return the meat mixture to the pan. Combine the ingredients well and set the filling aside.
  • Toppings:
  • Combine the ricotta cheese and sour cream in a small food processor or blender. Mix well and pour it into a resealable bag.
  • Prepare the remaining toppings and hold until you are ready to assemble the nachos.
  • Chips: In a heavy skillet, over medium heat, heat the oil to 350 degrees F. Carefully lower the wonton wrappers into the oil, in batches, since they cook extremely fast. As soon as they puff up, make sure you flip them over. Once they start to brown, remove them to a plate lined with a paper towel. Sprinkle them with salt as soon as they are out of the oil.
  • Nachos:
  • Preheat the oven to a low broil and position a rack approximately 9 inches below the burner.
  • In a large oven-safe dish, arrange a layer of chips, a layer of meat mixture, (reheat if necessary), and sprinkle everything with some mozzarella. Repeat this action with the second half of the ingredients, and again finish with the cheese. Put the dish under the broiler until the cheese has melted, (keep a close eye on this). Remove the nachos from the oven and top with the salami, fresh herbs and salsa. Take the bag holding the ricotta/sour cream mixture, and create an instant pastry tip by cutting a hole in the corner of the bag. Drizzle the sauce over your nachos, sprinkle with the green onions and pepperoncini, if using, and serve immediately.

1/2 cup-extra-virgin olive oil, eyeball the amount
2 cloves garlic, cracked
4 slices Tandoori Naan Bread or Mediterranean flat bread or large pita bread
1 cup grated Parmesan
1 teaspoon poppy seeds
1 teaspoon crushed red pepper flakes, 1/3 handful
A handful chopped parsley leaves
1 teaspoon coarse salt
1 1/2 cups shredded sharp cheddar
1 can chick peas, drained
1/2 lemon, juiced
1 teaspoon ground cumin
1/4 teaspoon ground cayenne pepper or 1 teaspoon crushed red pepper flakes
Salt
1/3 seedless cucumber, skinned and chopped
1 vine ripe red tomato, seeded and chopped
1/2 green bell pepper, seeded and chopped
1 shallot, finely chopped
2 tablespoons chopped flat-leaf parsley
3 tablespoons fresh mint leaves, from 5 or 6 sprigs, chopped
1 lime, juiced
1 teaspoon coarse salt

Steps:

  • Preheat oven or toaster oven to 400 degrees F.
  • Heat oil and garlic in a small pot over medium low heat to infuse garlic flavor into oil. Pull the oil off the heat when garlic speaks by sizzling in oil.
  • Brush the breads with half of the garlic oil and reserve the remainder. Cut breads into tortilla-chip-size wedges. Sprinkle bread "chips" with Parmesan, poppy seeds and red pepper flakes. Bake breads to toast, about 5 minutes. Remove bread from oven and sprinkle bread chips with and parsley and salt. Pile chips on a platter and cover with cheddar cheese. Place platter under broiler and melt cheese.
  • In a food processor, combine chick peas, lemon, cumin, cayenne and remaining garlic and oil. Season spread with salt, to your taste.
  • In a bowl, combine cucumber, tomato, pepper, shallot, parsley, mint, lime juice, salt.
  • To assemble, top naan-chos with chick pea spread and a layer of cucumber salsa. Serve.
