Monte Cristo Party Bites with Raspberry-Malbec Jam image

2 cups fresh or frozen raspberries
1/2 cup granulated sugar
2 tablespoons Alamos Malbec
2 eggs
4 slices Challah bread (crusts removed, if desired)
2 tablespoons Dijon mustard
3 ounces sliced deli ham
3 ounces sliced deli turkey
2 ounces sliced Fontina cheese
Nonstick cooking spray

Steps:

  • Make the Raspberry-Malbec Jam: In medium saucepan, stir together raspberries, sugar and wine. Heat to boiling over medium-high heat. Reduce head to medium; cook 8 to 10 minutes or until mixture is thickened to an almost jam-like consistency (mixture will continue to thicken as it cools). Serve slightly warm or cover and refrigerate up to 3 days. Makes about 3/4 cup jam.
  • Make the Monte Cristo Party Bites: Heat griddle or large nonstick skillet over medium heat. In wide, shallow bowl, whisk eggs until well beaten. Place bread on work surface; spread each slice with mustard. Build sandwiches by layering two bread slices with ham, turkey, cheese, and remaining bread.
  • Lightly spray griddle with cooking spray. Gently press sandwiches; dip all sides in egg, letting excess egg drip off. Place sandwiches on griddle; cook 8 to 10 minutes or until bread is golden brown and fillings are warm, gently flipping halfway through cook time. Transfer sandwiches to cutting board; cut each sandwich into quarters and serve with Raspberry-Malbec Jam.

8 slices good quality white bread
1/2 cup fig or plum preserves
8 slices mild provolone or fontina cheese
8 slices prosciutto cotto with rosemary (recommended: Citterio)
1/4 cup Dijon mustard
3 eggs
1/2 cup milk or cream
1/2 cup grated Parmigiano-Reggiano, a couple handfuls
1/4 cup chopped fresh flat-leaf parsley
1 tablespoon butter
6 cups arugula or baby arugula
1 lemon, juiced
2 tablespoons extra-virgin olive oil, eyeball it
Salt and freshly ground black pepper

Steps:

  • Heat a large griddle or cast-iron skillet over medium heat.
  • Prepare the sandwiches by spreading 4 slices of the bread with preserves. Top with a slice of cheese, 2 slices of folded prosciutto, then another slice of cheese. Spread the remaining bread slices with Dijon and set in place over the cheese.
  • In a large shallow bowl, beat the eggs with the milk or cream, Parmesan, and parsley. Nest the butter in a paper towel and wipe it across the hot pan. Dip the sandwiches into the egg mixture and cook the sandwiches until deep golden, about 3 to 4 minutes on each side.
  • Toss the arugula with the lemon juice, extra-virgin olive oil, and salt and pepper, to taste, in a large serving bowl. Cut the sandwiches from corner to corner and serve alongside the salad.

1/2 cup seedless red raspberry jam
2 tablespoons Dijon mustard
1/2 teaspoon chopped fresh rosemary
8 slices brioche bread
8 thin slices Swiss cheese
16 thin slices prosciutto cotto
4 large eggs, at room temperature
3/4 cup heavy cream, at room temperature
1/8 teaspoon kosher salt
2 tablespoons extra-virgin olive oil
3 tablespoons powdered sugar

Steps:

  • In a small bowl, mix together the jam, mustard and rosemary. Lay out the slices of bread. Divide the mustard mixture evenly over the 8 slices of bread and spread almost to the edges. Put a slice of cheese on each piece of bread, followed by 2 slices of prosciutto. Put together 2 of the bread slices for each sandwich.
  • In a medium bowl, whisk together the eggs. Add the heavy cream and salt and whisk to combine.
  • Heat a large skillet over medium heat. Add the oil to the pan and heat for 1 minute. Working with one sandwich at a time, dip both sides of the sandwich in the batter and place directly into the hot pan. Repeat with the remaining sandwiches. Cover with a lid and allow to cook until the first side is golden brown, 3 to 4 minutes. Remove the lid, flip each sandwich and continue to cook on the remaining side until golden brown and the cheese is melted, approximately another 4 minutes. (Or cook in batches if needed.)
  • Sprinkle one side of each sandwich with powdered sugar and serve warm.

2 package(8 ounces ea) refrigerated crescent rolls
1/2 pound sliced deli salami
1/2 pound sliced provolone cheese
1/2 pound capicola
7 eggs
1 cup grated Parmesan cheese
1 can (28 ounces) Muir Glen Organic fire roasted tomatoes, drained & sliced thin

Steps:

  • Heat oven to 350 degrees. Coat a 13 x 9 x 2 - inch glass baking dish with nonstick cooking spray. Unroll 1 package of the crescent rolls and use dough to line the bottom of the prepared baking dish. Pinch seams together with fingers. Cover rolls with half of the salami, provolone and capicola. Lightly beat together 6 of the eggs and the Parmesan; pour half evenly over top. Top with half of the roasted tomatoes. Repeat layering with remaining salami, cheese, capicola, egg mixture and tomatoes. Top with remaining package of crescent rolls. Lightly beat remaining egg and brush over top. Cover dish with foil; bake at 350 degrees for 30 minutes. Uncover and bake 30 more minutes. Cool for 1 hour; cut into 32 squares and serve.

Unsalted butter, for griddling
12 slices Texas toast
French Toast Custard, recipe follows
18 slices Swiss cheese
18 ounces shaved ham
16 ounces premade pancake batter
Strawberry-Rhubarb Syrup, recipe follows
6 large eggs
1 cup sugar
3/4 cup milk
1 tablespoon vanilla extract
4 ounces fresh strawberries, stemmed and quartered
4 ounces fresh rhubarb, large dice
1/2 cup sugar
2 ounces maple syrup

Steps:

  • Preheat a griddle and deep fryer to 350 degrees F.
  • Butter the griddle. Dunk the Texas toast on both sides in the French Toast Custard and grill until golden brown. Flip and add 1 slice Swiss cheese to each slice of toast. Then add 3 ounces ham on top of 6 of the toast slices, then top the ham with another slice of Swiss cheese. Top each ham and cheese toast with a cheese only toast, to form 6 sandwiches. Cook until the cheese melts, then remove from griddle and cool. Dunk the cooled sandwiches in the pancake batter until fully covered and put into the fryer. Cook until golden brown on both sides, about 8 minutes. Serve with the Strawberry-Rhubarb Syrup.
  • Beat the eggs well, then add the sugar and mix until emulsified and all the sugar has dissolved. Add the milk and vanilla and whisk until combined.
  • Add the strawberries, rhubarb, sugar and maple syrup to a saucepot. Place over medium heat and cook until fruit is soft, about 20 minutes. Let cool slightly, then carefully puree with a hand blender.

2 sheets puff pastry, thawed
½ cup raspberry jam
1 cup shredded Gruyère
10 slices ham, halved
1 large egg, beaten
powdered sugar, for dusting

Steps:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Roll out the puff pastry, then cut into 1½-inch-wide strips.
  • Brush the raspberry jam over each strip.
  • Arrange a layer of half-slices of ham on a pastry strip with the straight edges at the center of the strip and the curved edges hanging over the edge of the pastry. Fold the exposed pastry over the ham. Sprinkle some Gruyère cheese over the ham. Starting from one short end, roll the pastry into a tight spiral. Secure the end with a toothpick, if desired. Transfer to the prepared baking sheet and repeat with the remaining ingredients.
  • Brush the pastry roses with the beaten egg.
  • Bake for 12-15 minutes, until golden brown.
  • Transfer the pastry roses to a serving platter and dust with powdered sugar.

8 slices whole wheat bread
6 ounces mozzarella cheese, cut into 4 slices
1 tomatoes, cut into 8 thin slices
1/3 cup yellow cornmeal
2 tablespoons parmesan cheese, freshly grated
1 teaspoon dried basil or 1 tablespoon fresh basil, chopped
3 large eggs, beaten
1/4 cup milk
2 tablespoons butter, divided
1 cup marinara sauce, warmed for dipping

Steps:

  • On 4 of the slices of bread, place 1 cheese slice and 2 tomato slices.
  • Top with remaining bread slices.
  • On a sheet of wax paper/parchment paper combine together cornmeal, Parmesan cheese, and basil.
  • In a shallow bowl, combine the eggs and the milk, mix well.
  • In a large nonstick griddle or skillet melt 1 Tbs of butter over medium - medium high heat.
  • Dip sandwiches in egg mixture, then coat with the cornmeal mixture. Do this 2 sandwiches at a time.
  • Place 2 sandwiches on the griddle/skillet and cook for 3 min on each side or until golden.
  • Repeat with last 2 sandwiches.
  • Cut sandwiches in half; serve warm with marinara sauce for dipping.
