I saw a recipe on another website which stimulated my imagination and I made this new creation instead. It was super easy and quick. But the best thing is that it is also delicious!

Number Of Ingredients 7

1/2 cup Italian seasoned breadcrumbs
1/2 cup freshly grated parmesan cheese (you can use the green stuff if you want but fresh is better!)
2 large eggs
1 teaspoon black pepper, divided
2 chicken breast halves
3 tablespoons olive oil
3 tablespoons butter

Steps:

  • Blend the bread crumbs & the cheese together with 1/2 of the teaspoon of black pepper and set aside.
  • Beat the eggs together and add the other 1/2 teaspoon of black pepper.
  • Split each breast in half width wise so that you will have 4 thin pieces of chicken.
  • Heat the olive oil and the butter in a large skillet until medium hot.
  • Dip each piece of chicken into the egg mixture then into the breading mixture, being sure to put as much breading as possible on each side -- patting helps.
  • Place the chicken in the skillet.
  • Brown well on both sides, cooking time is a approximate depends on size of meat.
  • Drain on Paper Towels & Enjoy.
  • Because the chicken pieces are thin they will cook quickly and be done in a very short time.

I developed this recipe to serve at weddings and women's luncheons. It's easy to prepare, and utilizes just a few ingredients. I serve it with noodles or long grain and white rice.

4 boneless skinless chicken breasts
1/2 cup Wishbone Italian dressing
1/2 cup Italian seasoned breadcrumbs
1/4 cup 4-cheese Italian cheese blend or 1/4 cup shredded parmesan cheese
1 lemon, zest of
1 tablespoon fresh parsley, minced
salt & fresh ground pepper
1 tablespoon butter or 1 tablespoon olive oil
extra cheese
paprika

Steps:

  • Marinate the chicken breasts in the dressing for four hours in the refirgerator.
  • Heat the oven to 350 degrees.
  • Mix the coating ingredients together.
  • Melt the butter in the bottom of a baking pan, then place the coated chicken breasts in the bottom of the pan.
  • Cover and cook for 20 miutes.
  • Uncover the chicken and cook another 10 minutes.
  • Remove from the oven, and top with extra cheese and paprika.

1 cup shredded light mozzarella cheese, divided
2 ounces light cream cheese, softened
1/4 cup finely chopped red pepper
1/4 cup chopped oregano leaves
1/4 teaspoon garlic salt
4 small boneless skinless chicken breast halves, pounded to 1/4-inch thickness (1 lb.)
1 cup spaghetti sauce or 1 cup tomato sauce

Steps:

  • PREHEAT oven to 400°F.
  • Mix 1/2 cup of the shredded cheese, the cream cheese, peppers, oregano and garlic salt until well blended.
  • Shape into 4 logs.
  • Place 1 log on one of the short ends of each chicken breast; press into chicken lightly.
  • Roll up each chicken breast tightly, tucking in ends of chicken around filling to completely enclose filling.
  • PLACE, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray. Spoon spaghetti or tomato sauce evenly over chicken; cover with foil.
  • BAKE 35 minute or until chicken is cooked through (170°F).
  • Remove foil; sprinkle chicken with remaining 1/2 cup shredded cheese.
  • Bake an additional 3 to 5 minute or until cheese is melted.
