¾ cup mayonnaise
½ cup grated Parmesan cheese
¾ teaspoon garlic powder
¾ cup Italian seasoned bread crumbs
4 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a bowl, mix the mayonnaise, Parmesan cheese, and garlic powder. Place bread crumbs in a separate bowl. Dip chicken into the mayonnaise mixture, then into the bread crumbs to coat. Arrange coated chicken on a baking sheet.
  • Bake 20 minutes in the preheated oven, or until chicken juices run clear and coating is golden brown.

3/4 cup fat-free ranch salad dressing
4 garlic cloves, minced
2 boneless skinless chicken breast halves (5 ounces each)
1/2 cup seasoned bread crumbs
3 tablespoons grated Parmesan cheese
1/4 teaspoon pepper

Steps:

  • In a large resealable plastic bag, combine salad dressing and garlic; add the chicken. Seal bag and turn to coat; refrigerate for at least 30 minutes., Meanwhile, in a small shallow bowl, combine the bread crumbs, Parmesan cheese and pepper. Drain and discard marinade. Roll chicken in crumb mixture. Place in an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 325° for 20-25 minutes or until chicken juices run clear.

A basic lightly breaded seasoned and sautéed chicken breast that can be served as is with rice and a vegetable, or topped with tomato sauce and mozzarella and briefly baked for chicken parmesan, or put in Italian bread, with or without cheese, with tomato sauce, pesto or mayo, and enjoyed as a sandwich.

4 boneless skinless chicken breasts
1 cup dry breadcrumbs
1/2 cup grated romano cheese or 1/2 cup parmesan cheese
2 tablespoons chopped parsley (fresh is best but dried works in a pinch)
1/2 cup flour
salt and pepper
1/4 teaspoon garlic powder
1 egg
2 -3 tablespoons olive oil

Steps:

  • Clean breasts of visible fat and tendons. Pound each with the flat side of a mallet until evenly 1/4 inch thick. (You may want to cut large cutlets in half).
  • Mix breadcrumbs in flat bowl with cheese and parsley.
  • Mix flour in another flat bowl with salt, pepper and garlic powder.
  • Beat egg and water in another flat bowl.
  • Dredge each piece in flour, then egg, then dip in egg and coat with breadcrumbs. Set on a piece of wax paper for 5 minutes to let breading adhere.
  • Heat olive oil in pan over medium heat. Add chicken cutlets and cook about 4 minute per side until nicely browned.

Italian Chicken Cutlets (The Best!) image

My family's Italian Chicken Cutlets are the best! I'm giving up all our secrets so you can make breaded chicken cutlets that are juicy, tender and delicious.

3/4 cup plain bread crumbs (ideally homemade) ((see notes))
1/4 cup grated Pecorino Romano cheese ((use freshly grated for best results))
1/4 cup grated Parmesan cheese ((use freshly grated for best results))
1/3 teaspoon dried basil
1/3 teaspoon garlic powder
1/3 teaspoon black pepper
1/4 teaspoon salt
1 pound thin, boneless, skinless chicken breast cutlets ((or 3 skinless, boneless chicken breasts) )
2 extra large eggs
1/4 teaspoon salt
1/4 teaspoon black pepper
6 tablespoons olive oil (divided use) ((for pan frying; see notes))

Steps:

  • Grate the cheeses, if needed. Mix the bread crumb ingredients in a bowl.
  • If starting with thin chicken cutlets, proceed to the next step of pounding them. If starting with thick chicken breasts, you'll need to slice them thinly. On a large cutting board, use a large, straight-edged knife to thin the chicken breasts by slicing through them to cut them in half. (See the photo in the post.) It helps to place one hand flat on top of the chicken breast, while using the other hand to hold the knife while cutting through the chicken with a sawing motion. You will end up with two halves connected in the middle like a butterfly. Vertically slice through the center to separate the two halves.
  • To pound your chicken cutlets, cover them with a large sheet of plastic wrap (to prevent a mess). Use a meat mallet or the bottom of a heavy frying pan to pound the chicken so that it is no more than 1/4 inch thick. (It might be a bit thinner than that.) Lift the plastic, flip the chicken over, cover it again with plastic wrap, and pound the other side. Discard the plastic wrap and wash your hands well if you touched the raw meat.
  • Crack your two eggs and add them to a small bowl, such as a pasta dish. Season the eggs with the salt and pepper and beat the eggs with a fork.
  • Set up an assembly line from left to right with your chicken, the bowl of eggs, your bread crumb mixture and a clean platter. Use a fork to pierce a cutlet, dip it in the egg, then in the bread crumbs. Cover the breast with the bread crumbs and pat them onto the chicken with the fork or your hands. Flip the chicken over and bread the other side. Place the breaded cutlet onto the platter and continue until you have breaded all of your chicken. Discard any leftover egg mixture and any breadcrumbs that had raw chicken dipped in it.
  • On the stove, heat your largest skillet on medium high. Add 3 tablespoons of olive oil to the pan and let it get hot. When the oil is sizzling, add some chicken cutlets to the pan in a single layer. You will probably need to cook them in two batches, since they won't all fit. Cook the chicken on the first side for almost three minutes, then flip the chicken over and cook it for another two minutes. The chicken should be golden brown on both sides.
  • Transfer the cooked chicken to a clean platter. (You can cut into one to make sure it's done. It should not be pink inside.) Cover the chicken loosely with foil.
  • If the olive oil has turned dark after cooking the first batch, remove the pan from the heat and wipe out the pan with paper towels. Add another 3 tablespoons of olive oil so you can cook the next batch of cutlets in clean oil.
  • Continue cooking the rest of the cutlets. Let the cutlets rest under the foil for at least five minutes before serving, to help keep them juicy.
  • Store leftover Italian chicken cutlets in the refrigerator for 3-4 days. The leftovers are great in sandwiches.

3 -4 boneless chicken breasts
1 packet dried Italian salad dressing mix
1 1/2 cups breadcrumbs
1 carton Egg Beaters egg substitute (or other egg substitute)
1/2 teaspoon pepper
1/2 teaspoon seasoning salt

Steps:

  • Preheat oven to 375 degrees.
  • Cut chicken breasts in half.
  • Lay chicken on large cutting board, cover with plastic wrap, and pound with meat mallet till about 1/4 inch thick.
  • In medium bowl, mix egg beaters, salt, and pepper.
  • On large plate, mix breadcrumbs and salad dressing mix.
  • Dip chicken in egg mixture, then roll in breadcrumb mixture.
  • Arrange on baking sheet.
  • Bake for 25-30 minutes.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a bowl, blend the olive oil and garlic. In a separate bowl, mix the bread crumbs, Parmesan cheese, basil, and pepper. Dip each chicken breast in the oil mixture, then in the bread crumb mixture. Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture.
  • Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

  • In three separate shallow bowls place the beaten eggs, flour and cornstarch, and bread crumbs. Dry the chicken and season with salt and pepper. Dip the chicken in the flour and set aside on a separate plate. Then, one by one, dip the chicken breasts in the egg and lastly, the bread crumbs. If you want a thicker coating you may repeat the egg and bread crumb mixture again. This will give a thicker crust. OPTIONAL: Before cooking let chicken sit for 30 minutes, on a plate, to dry and let crust mixture harden a bit.
  • Heat large skillet (make sure the skillet is large enough to fit the four chicken breasts without them overlapping) on medium high heat. Add olive oil and butter. Brown chicken for 4-5 minutes on each side. DO NOT turn or touch the chicken in between turning. after browned on both sides turn heat to medium- low. Cook an addition 5 minutes until the chicken is cooked all the way through reaching an internal temperature of 160 degrees F. Take of heat and let it rest for 10 minutes before serving. The internal temperature will then rise an extra 5 degrees F reaching a final temp of 165 degrees F.
  • Enjoy with a squeeze of lemon and an extra sprinkle of kosher salt and fresh ground pepper if desired.
