ITALIAN BEEF SOUP (BRODO DI CARNE)



Italian Beef Soup (Brodo di Carne) image

Italian Beef Soup (Brodo di Carne) with Orzo is filled with tender, slow-cooked chuck roast, vegetables, and herbs simmered in a rich, flavorful broth. Make it even heartier by adding orzo or pastina and topping with finely grated Parmigiano-Reggiano. Cook this soup low and slow for hours, resulting in mouthwatering broth and fall-apart beef.

Number Of Ingredients 10

2 lb Chuck roast
3 carrots (cut in 2-inch pieces)
3 celery stalks (cut in half widthwise)
2 Roma tomatoes (cut in half)
½ medium onion (or one small onion, cut in half)
1 bunch parsley
2 tbsp kosher salt
3½ qt water
1 lb Orzo
Parmigiano-Reggiano

Steps:

  • Add water to a large pot or dutch oven and cook on medium heat.
  • Add kosher salt, vegetables, parsley, and beef to the pot.
  • Once the water reaches a boil, turn the heat down to low-medium and allow the soup to simmer for 4 hours with the lid on, giving the soup an occasional stir.
  • At the 3 hour mark, remove the lid and allow the soup to simmer for one more hour.
  • Once the soup is done cooking, remove the soup from the heat. Remove the onion, celery, and parsley from the soup.
  • Carefully take the beef out and place it in a large shallow bowl. Place two forks in a portion of the meat facing away from each other. Gently pull the forks in opposite directions, breaking up the meat into shards with each pull. Place the meat back into the soup.
  • Add orzo to the soup bowls, then use a ladle to serve soup to each bowl.
  • Serve immediately with finely grated Parmigiano-Reggiano.
  • As the soup finishes cooking, take large saucepan or pot and add 4 - 6 quarts of water. Bring the water to a rolling boil and add a pinch of salt. Add orzo to the pot and stir gently. Allow the water to return to a boil. Cook until al dente, or about 8-9 minutes, stirring occasionally. Drain the orzo and set aside.

2 medium green peppers, cut into 1-inch chunks
1 medium onion, cut into chunks

1 can (6 ounces) tomato paste
1 tablespoon brown sugar
2 to 3 teaspoons Italian seasoning
1 teaspoon salt
1/4 teaspoon pepper
2 cups uncooked spiral pasta
Croutons, optional

Steps:

  • In a Dutch oven, cook the beef, green peppers and onion over medium heat until meat is no longer pink. Add garlic, cook 1 minute longer. Drain. Add the water, tomatoes, tomato paste, brown sugar, Italian seasoning, salt and pepper. Bring to a boil. Add pasta. , Cook for 10-14 minutes or until pasta is tender, stirring occasionally. 1-1/2 pounds beef shanks or meaty beef soup bones
1 tablespoon canola oil
6 cups water
2 medium carrots, sliced
2 celery ribs, diced
1 medium red potato, cut into 1/2-inch cubes
1 small onion, chopped
1 garlic clove, minced
1 bay leaf
1 teaspoon salt
1 teaspoon dried basil
1 teaspoon dried thyme
1/4 teaspoon pepper
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 medium zucchini, diced
1/2 cup uncooked elbow macaroni

Steps:

  • In a pressure cooker over medium-high heat, brown beef on both sides in oil. Add the water, carrots, celery, potato, onion, garlic and seasonings. Close cover securely; place pressure regulator on vent pipe. Bring cooker to full pressure over high heat. Reduce heat to medium-high and cook for 15 minutes. (Pressure regulator should maintain a slow steady rocking motion; adjust heat if needed.), Remove from the heat. Immediately cool according to manufacturer's directions until pressure is completely reduced. Discard bay leaf. Remove beef with a slotted spoon; when cool enough to handle, remove meat from bones. Discard bones and dice the meat., Return meat to pan. Add the beans, tomatoes and zucchini. Bring soup to a simmer. Stir in macaroni. Cook, uncovered, for 8-10 minutes or until macaroni and zucchini are tender.

  • In a tall stock pot over medium high heat, add the beef chuck, stock, and hot water, making sure you don't fill your pot more than 3/4 full. (When the liquid starts to boil, lower the heat to a simmer.) During the first 20 minutes of cooking, use a spoon to skim off the foam that comes to the surface and discard it.
  • While the beef is cooking, prepare your vegetables. Peel and quarter your onion. Wash the celery, trim off the ends, and cut into 1-inch pieces. Rinse the carrots and trim off the ends. Peel the carrots and cut them in half horizontally. Rinse the parsley and remove the stems (with scissors, if you have them). Peel and smash your garlic. Rinse your basil and remove the leaves.
  • After 20 minutes, add your onion, garlic, tomatoes, vegetables, herbs and seasonings to the pot and give it a quick stir. Cover the pot and keep the heat on low. Cook the soup for four hours, but remove about half of the carrots after 35 minutes. (You can refrigerate them after they cool and start bringing them to room temperature an hour before serving the soup.)
  • When the soup is done, remove the meat to a bowl to shred or cut into chunks. Strain the soup into another pot (place a strainer over the empty pot and pour your soup through the strainer to remove the vegetables.) Discard the peppercorns. The vegetables in the strainer will be mushy, but you can save them to eat with salt and pepper if you wish.
