IRISH MEATLOAF WITH CABBAGE CREAM SAUCE



Irish Meatloaf with Cabbage Cream Sauce image

Number Of Ingredients 24

5 pounds ground beef
2 pounds ground lamb
1 pound Irish white pudding, diced
2 cups shredded Irish Cheddar
2 tablespoons Montreal steak seasoning
2 tablespoons granulated onion
2 tablespoons black pepper
1 tablespoon dried basil
1 tablespoon curry powder
1 tablespoon dried oregano
1 tablespoon salt
6 eggs
1 onion, diced fine
6 to 7 cups panko breadcrumbs
Cabbage leaves, for cooking
Celery sticks, for cooking
Cabbage Cream Sauce, recipe follows
2 tablespoons canola oil
2 tablespoons chopped garlic
1/2 head green cabbage, shredded
2 cups sherry
6 cups heavy cream
Salt and pepper
1 stick (8 tablespoons) butter

Steps:

  • Preheat the oven to 400 degrees F.
  • Mix together the ground beef, lamb, white pudding, Cheddar, Montreal seasoning, granulated onion, pepper, basil, curry powder, oregano, salt, eggs and onions until well mixed. Add the breadcrumbs and mix well. Let stand for 5 to 10 minutes. Shape into a log.
  • On a baking sheet, put some large cabbage leaves down for the meatloaf to cook on. Place some celery sticks on top of the meatloaf (to keep the aluminum foil off of the top of the meatloaf), cover with foil and bake for 45 minutes. Remove the foil and continue to bake to let it crisp up, about 15 minutes more.
  • Slice and serve with the Cabbage Cream Sauce on the side.
  • Heat a medium pot and add the oil. Brown the garlic, and then add the cabbage and saute until translucent. Deglaze the pot with the sherry, and then simmer until reduced by about half. Add the heavy cream and reduce by half again. Add salt and pepper to taste. Fold in the butter and serve hot.

Stout Meatloaf with Irish Cheddar & Oats image

This stout meatloaf is possibly the juiciest meatloaf you will ever eat. Shredded Irish cheddar and whole grain rolled oats join stout ale and ground pork and beef for an incredibly moist loaf.

1 lb ground pork
1 1/2 lbs ground beef, lean
1 cup onion, diced small
3 cloves garlic, minced
2 tbsp fresh parsley, finely chopped
2 tsp thyme
1 egg
1 1/4 cup grated Irish cheddar
1 cup rolled oats
1/2 cup stout*, possibly increase amount by 1-2 tbsp, as needed
1 tsp sugar (more if your beer has a lot of roasted barley)
2 tsp ground caraway seeds, more if you like this spice, sub with cumin if you don't like it
2 tsp salt
1 tsp pepper
chopped parsley for garnish
cooking oil to grease parchment paper lined loaf pan

Steps:

  • Heat the oven to 350°F.
  • Line a 5 x 9.5 inch loaf pan (or similar) with parchment paper and grease it well with cooking oil. Set aside.
  • In a large mixing bowl combine the ground pork, ground beef, egg, grated Irish cheddar, onions, garlic, parsley, thyme, oats, stout, sugar, ground caraway seeds, salt and pepper.
  • Roll up your sleeves and get to work - mix all the ingredients until very well incorporated. There should not be any excess moisture, nor should the mixture be sticky.
  • Transfer the mixture to the lined, greased loaf pan and press it down to assist it to take the shape of the loaf pan.
  • Bake at 350°F for at least 50 minutes, most likely a full hour. When the internal temp of the loaf reaches 155°F it is done. Use a food thermometer (http://amzn.to/2oKbVoY).
  • Remove the stout meatloaf from the oven and carefully pour out and reserve the abundant juices that will be surrounding it in a small bowl or a ramekin. (You can either thicken the reserved juices in a sauce pan with some flour for a gravy or simply drizzle over the slices of meatloaf when serving.)
  • Let the meatloaf rest for 5-10 minutes before removing it from the loaf pan and slicing. While slicing, more delicious liquid will gently ooze out from the stout meatloaf.
  • Serve garnished with chopped parsley.

2 large eggs
3/4 cup 2% milk
2/3 cup seasoned bread crumbs
2 teaspoons dried minced onion
1 teaspoon salt
1/2 teaspoon rubbed sage
1-1/2 pounds ground beef
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce

Steps:

  • Cut two 25x3-in. strips of heavy-duty foil; crisscross so they resemble an X. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., Combine the first 6 ingredients. Crumble beef over mixture and mix lightly but thoroughly. Shape into a round loaf; place in center of strips in slow cooker. Cook, covered, on low 5-6 hours or until a thermometer reads at least 160°. , In a small bowl, whisk ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over meat loaf. Cook until heated through, about 15 minutes longer. Using foil strips as handles, remove meat loaf to a platter. Let stand 10-15 minutes before slicing.

3 thick slices white bread, torn into large pieces
2 garlic cloves, chopped
1 medium onion, chopped
1 celery stalk, chopped
1 medium carrot, chopped
1/2 cup flat-leaf parsley
12 ounces ground beef chuck (90 percent lean), preferably pasture-raised
12 ounces ground pork, preferably pasture-raised
12 ounces ground veal, preferably milk-fed
1 large egg
3/4 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
Coarse salt and freshly ground pepper
2 tablespoons light-brown sugar

Steps:

  • Preheat oven to 375 degrees. Pulse bread in a food processor until finely ground. (You should have about 2 1/2 cups breadcrumbs.) Transfer to a medium bowl.
  • Pulse garlic, onion, celery, carrot, and parsley in food processor until finely chopped. Add to breadcrumbs. Add meats, egg, 1/4 cup ketchup, the mustard, Worcestershire sauce, 1 tablespoon salt, and 1/2 teaspoon pepper; mix together using your hands. Transfer mixture to a 5-by-9-inch loaf pan.
  • Stir together remaining 1/2 cup ketchup and the brown sugar until smooth; brush onto meat. Set pan on a rimmed baking sheet, and bake until an instant-read thermometer inserted into the center reaches 160 degrees, about 1 hour 20 minutes. Let cool slightly.

1/2 lb ground pork
2 cups breadcrumbs
1 egg
1/2 cup onion, minced
3/4 cup milk
2 teaspoons salt
1 1/4 teaspoons ginger
2 large cooking apples, chopped
1 1/2 cups mashed potato flakes
1 (10 ounce) package frozen broccoli, chopped, cooked and drained
1/2 cup cheddar cheese, shredded

Steps:

  • In a bowl blend ground meats together and add bread crumbs, egg, onions, milk, salt and ginger. Lightly mix to blend and stir in apples.
  • On a jelly roll pan shape into loaf. Bake in a preheated oven 350ºF. for 45 minutes. Drain off excess fat.
  • Prepare potato flakes according to package directions. Combine potato and broccoli.
  • Frost loaf with potato mixture and sprinkle top with Cheddar cheese and bake an additional 15 minutes.
  • Let stand 5 minutes before removing to a warmed serving platter.
