An easy stove-top pot roast recipe. You could probably do it in a crock pot too but I've never tried it that way...

2 tablespoons oil
3 lbs beef chuck roast or 3 lbs round roast
2 tablespoons grated gingerroot
1/2 cup sherry wine
1/4 cup soy sauce
1/2 cup water
3 tablespoons chopped green peppers
3 green onions
1 teaspoon salt
1/2 teaspoon anise seed, crushed

Steps:

  • Heat the oil in a roasting pan. Add the beef roast and gingerroot and cook the roast until brown on all sides. Drain.
  • Add sherry and soy sauce. Cook 5 minutes, stirring occasionally.
  • Add the water, chopped green pepper, whole green onions, salt, and crushed anise seeds. Mix well.
  • Cover and cook over low heat for 3 hours or until beef is done to your liking. Stir and baste occasionally during cooking.

CHINESE-STYLE BRAISED BEEF ONE-POT

Great for casual entertaining, when you fancy a warming beef stew but with some more vibrant flavours

3-4 tbsp olive oil
6 garlic cloves, thinly sliced
good thumb-size piece fresh root ginger, peeled and shredded
1 bunch spring onions, sliced
1 red chilli, deseeded and thinly sliced
1 ½kg braising beef, cut into large pieces (we used ox cheek)
2 tbsp plain flour, well seasoned
1 tsp Chinese five-spice powder
2 star anise (optional)
2 tsp light muscovado sugar (or use whatever you've got)
3 tbsp Chinese cooking wine or dry sherry
3 tbsp dark soy sauce, plus more to serve
500ml beef stock (we used Knorr Touch of Taste)
steamed bok choi and steamed basmati rice, to serve

Steps:

  • Heat 2 tbsp of the oil in a large, shallow casserole. Fry the garlic, ginger, onions and chilli for 3 mins until soft and fragrant. Tip onto a plate. Toss the beef in the flour, add 1 tbsp more oil to the pan, then brown the meat in batches, adding the final tbsp oil if you need to. It should take about 5 mins to brown each batch properly.
  • Add the five-spice and star anise (if using) to the pan, tip in the gingery mix, then fry for 1 min until the spices are fragrant. Add the sugar, then the beef and stir until combined. Keep the heat high, then splash in the wine or sherry, scraping up any meaty bits. Heat oven to 150C/fan 130C/gas 2.
  • Pour in the soy and stock (it won't cover the meat completely), bring to a simmer, then tightly cover, transfer to the oven and cook for 1½-2 hrs, stirring the meat halfway through. The meat should be very soft, and any sinewy bits should have melted away. Season with more soy. This can now be chilled and frozen for up to 1 month.
  • Nestle the cooked bok choi into the pan, then bring to the table with the basmati rice straight away and tuck in.

4 teaspoons peanut oil, divided
2 1/2 lbs sirloin tip roast, trimmed
1 teaspoon Chinese five spice powder
1/4 teaspoon kosher salt
5 cups low sodium beef broth
1/2 cup dry sherry
1/4 cup fresh ginger, peeled and thinly sliced
3 tablespoons low sodium soy sauce
1/4 teaspoon crushed red pepper flakes
4 garlic cloves, crushed
3 star anise
2 cups shiitake mushroom caps, sliced
2 cups carrots, julienne cut, about 2 large
4 cups baby bok choy, halved lengthwise, about 1 3/4 lb
12 ounces Chinese egg noodles, fresh, uncooked
1/4 cup green onion, sliced

Steps:

  • Heat 2 t oil in large Dutch oven over med high.
  • Sprinkle roast evenly with five spice powder and salt.
  • Add meat to pan; cook 5 min, turning to brown on all sides.
  • Add broth and next 6 ingredients to pan; bring to a simmer.
  • Cover, reduce heat and simmer 3 1/2 hours or til meat is tender.
  • Remove meat from pan.
  • Cover and keep warm.
  • Strain cooking liquid through a sieve over a bowl; discard solids.
  • Heat the remaining 2 t oil in pan over med high.
  • Add mushrooms and carrot to pan; saute 5 minute
  • Add bok choy and 4 c reserved cooking liquid to pan.
  • Cover and cook 5 min or til bok choy is tender.
  • Cook noodles according to pkg directions. Drain.
  • Divide noodles evenly among 8 bowls.
  • Shred meat with 2 forks; arrange 3 oz meat over each serving.
  • Top each serving with 2 T veggies and 1/2 c broth.
  • Place 1 bok choy half on each serving.
  • Sprinkle each serving with 1 1/2 t green onions.

2 tablespoons vegetable oil
1 (3 pound) beef chuck roast
1 red onion, chopped
4 cloves garlic, crushed
4 stalks celery, chopped
1 tablespoon dried basil
salt and pepper to taste
6 medium red potatoes, quartered
6 turnips, peeled and cut into chunks
6 carrots, peeled and cut into chunks

Steps:

  • Heat the oil in a large pot or Dutch oven over medium-high heat. Place the roast in the pot, and quickly brown on all sides.
  • Fill the pot with enough water to cover the roast. Add the onion, garlic, celery, basil, salt and pepper. Bring to a boil, then reduce heat to low and simmer for 2 hours and 15 minutes, adding water if needed to keep the roast covered. Add potatoes and turnips; simmer for an additional 15 minutes. Add carrots; simmer for 30 minutes, or until roast can be pulled apart with a fork. Taste, and adjust salt and pepper if needed before serving.
