CREAM OF PEA SOUP

Velvety smooth Cream of Pea Soup recipe using fresh or frozen peas. This beautiful green soup is creamy, healthy and easy to make on the stove top!

2 tablespoons butter
1 small yellow onion (chopped)
2 cloves garlic (minced)
3 cups vegetable broth
3 cups fresh shelled green peas
1/2 teaspoon salt
1/3 teaspoon pepper
1/4 cup heavy whipping cream

Steps:

  • Melt the butter in a large soup pot over medium high heat. Add chopped onion and minced garlic and cook until soft, stirring frequently so they don't burn, about 5 minutes.
  • Add vegetable broth, peas, salt and pepper. Bring to a boil and then cover and simmer until the peas are soft, about 15-20 minutes.
  • Using a immersion blender, blend the soup until creamy. Alternatively you could use a blender. If using a blender, carefully put soup in blender in batches, and pulse until creamy, being careful as the soup is very hot. Put soup back in pot if using a blender.
  • Add in heavy cream and stir to thicken up. Season with salt and pepper to taste and serve. Optional - add some fresh parsley or mint on top before serving.

1 teaspoon olive oil
1 large onion, sliced (about 1 1/2 cups)
2 1/2 cups low-sodium chicken broth
3/4 teaspoon dried tarragon
1/2 teaspoon salt
Freshly ground black pepper
1 (10-oz) bag frozen peas
4 teaspoons plain nonfat yogurt, optional

Steps:

  • In a large pot, heat the olive oil over moderately-low heat. Add the onion, cover and cook, stirring occasionally, until softened, about 5 minutes. Add the broth, tarragon, salt and a few turns of freshly ground black pepper and bring to a boil. Add the peas and cook just until defrosted.
  • In a blender, puree the soup in 2 batches until very smooth. If serving hot, return the soup to the pot and bring just to a simmer. If serving cold, transfer to the refrigerator to chill. Ladle into bowls. Stir the yogurt so that it is smooth and top each serving with a swirl of yogurt.

Recovering from surgery and a bad case of strep throat, I threw this together to aid my body through recovery. Eating this soup is a great way to pack in the nutrients. Light, clean, filling, and full of flavor. My kids love it. I just add a little milk to cool it down so they can eat it right away.

1 onion, chopped
2 cloves garlic, chopped, or more to taste
2 (16 ounce) packages frozen peas
½ teaspoon dried dill, or to taste
1 (900 ml) carton chicken broth, or as needed
⅓ cup milk
salt and ground black pepper to taste

Steps:

  • Melt butter in a large pot over medium-high heat. Saute onion in hot butter until golden and translucent, about 10 minutes. Stir garlic into onions and saute until fragrant, about 1 minute.
  • Stir peas and dill into onion mixture and pour in enough chicken broth to cover. Bring to a boil, reduce heat to medium-low, and simmer until hot, 10 to 15 minutes. Stir milk into soup.
  • Puree soup with an immersion blender or pour pea soup into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Season with salt and pepper.

Apparently what distinguishes Irish Pea Soup from German Pea Soup is the addition of a potato and optional cream!

1 c split peas, picked through and rinsed
1 small onion, diced
1 medium carrot, chopped
1 stalk(s) celery, chopped
1 Tbsp crumbled bacon bits (the real kind)
1 1/2 c chicken stock or water
1 sprig(s) fresh thyme (or 1/2 tsp. dried)
1 bay leaf
1 medium potato, diced
4 oz ham, diced (or smoked pork chop- if there's a bone, cut off the meat and put the bone in the soup while it simmers)
1/2 c half and half (or evaporated milk) optional
salt and pepper, to taste

Steps:

  • 1. Spray your pan with Pam® or similar.Add the onion, carrots, and celery to the pan and cook for 3 to 4 minutes until the onion is soft but not brown. Add the bacon crumbles to the pan with the water.
  • 2. Add the peas to the pan with the thyme, bay leaves, potato, and ham or pork bone if you have one and bring to a boil. Lower the heat, cover, and simmer for 1 hour. (Check to see if more water needs to be added.)
  • 3. Remove the thyme, bay leaves and bone. Process the soup with an immersion blender or food processor until desired texture. Return the mixture to the pot, add half and half, if using, and the diced ham/smoked pork. Reheat gently. Season with salt and black pepper. Ladle into soup bowls and serve.

IRISH GREEN PEA SOUP

The peas traditionally used in this soup are those dried jade coloured peas found in most supermarkets; drying lends them a pleasant flavour utterly different from fresh peas. The stock used should be left over from cooking smoked ham or corned beef; in a pinch, chicken stock will do.

6 ounces dried whole green peas
1 teaspoon baking soda
4 cups boiling water
3 cups ham stock
1/2 teaspoon dried sage
1 -2 cup ham stock
salt and black pepper
2 tablespoons diced browned salt pork or 2 tablespoons bacon

Steps:

  • Soak peas overnight by adding baking soda and pouring boiling water over them.
  • Bring ham stock to a boil. Drain peas and put in boiling stock, bring to a boil again, add sage and reduce heat to simmer.
  • When peas are very soft, puree by forcing them through a sieve, or use a food processor or hand blender.
  • Return puree to saucepan and reheat. Add sufficient stock to give consistency of whipping cream. Season with salt and pepper. Garnish with diced ham or diced salt pork or bacon. Serves 4.

2 tablespoons unsalted butter
2 cups chopped leeks, white and light green parts (2 leeks)
1 cup chopped yellow onion
4 cups chicken stock, preferably homemade
5 cups freshly shelled peas or 2 (10-ounce) packages frozen peas
2/3 cup chopped fresh mint leaves, loosely packed
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup creme fraiche
1/2 cup freshly chopped chives
Garlic croutons, for serving

Steps:

  • Heat the butter in a large saucepan, add the leeks and onion, and cook over medium-low heat for 5 to 10 minutes, until the onion is tender. Add the chicken stock, increase the heat to high, and bring to a boil. Add the peas and cook for 3 to 5 minutes, until the peas are tender. (Frozen peas will take only 3 minutes.) Off the heat, add the mint, salt, and pepper.
  • *Puree the soup in batches: place 1 cup of soup in a blender, place the lid on top, and puree on low speed. With the blender still running, open the venthole in the lid and slowly add more soup until the blender is three-quarters full. Pour the soup into a large bowl and repeat until all the soup is pureed. Whisk in the creme fraiche and chives and taste for seasoning. Serve hot with garlic croutons.

4 cups (or more) vegetable broth
3 tablespoons chopped fresh tarragon, divided
Plain nonfat yogurt, stirred
Small fresh pea sprouts*

Steps:

  • Place 1 cup peas in microwave-safe bowl; set aside. Heat oil in heavy large saucepan over medium-high heat. Add shallots and sauté until golden and almost tender, about 7 minutes. Add remaining peas, 4 cups broth, and 2 tablespoons tarragon; bring to boil. Reduce heat to medium and boil until flavors blend and peas are tender, about 7 minutes. Cool slightly. Working in batches, puree soup in blender until completely smooth. Return soup to same saucepan. Bring to simmer and thin with more broth by 1/4 cupfuls, if desired. Stir in remaining 1 tablespoon tarragon. Season with pepper.
  • Cook reserved 1 cup peas in microwave until warm, about 1 minute.
  • Ladle soup into 6 bowls. Drizzle lightly with yogurt. Sprinkle whole peas over and garnish with pea sprouts.

10 cups fresh or frozen peas or petits pois (small, young green peas), divided
6 cups water, divided
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1/2 teaspoon ground mace
2 cloves
2 teaspoons dried thyme
1 teaspoon dried marjoram
4 tablespoons unsalted butter
3 to 4 green onions, trimmed and sliced crosswise into 1/2-inch pieces
1/4 pound fresh baby spinach, coarsely chopped
2 teaspoons minced fresh mint
3 tablespoons all-purpose flour
Diced toast for garnish (optional)
Shredded fresh calendula blossoms for garnish (optional)

Steps:

  • 1. Put 8 cups of the peas and 4 cups of the water in a large saucepan or Dutch oven. Add the salt, pepper, mace, cloves, thyme, and marjoram, cover, and bring to a boil. Reduce the heat, and simmer for about 45 minutes, until the peas are very tender.
  • 2. Drain the peas, reserving the cooking liquid in the sauceupan. Puree the peas in a food processor or with a food mill. If using a food mill, discard the skins. Press the puree through a sieve into the reserved liquid, stirring to combine thoroughly. Cover and set aside to keep warm.
  • 3. Combine the remaining 2 cups of peas with the remaining 2 cups of water in a medium saucepan. Cover and bring to a boil. Reduce the heat and simmer for 20 to 25 minutes, until the peas are just tender.
  • 4. While the second batch of peas is cooking, melt the butter in a sauté pan. Add the green onions, and sauté for about 2 minutes. Add the spinach and mint and stir together, cooking until the spinach has just wilted. Blend in the flour, and cook for about 1 minute.
  • 5. Drain the peas, reserving the cooking liquid, and stir the peas into the warm soup along with the spinach mixture. Heat until it begins to simmer, adding the reserved pea-cooking liquid-a little at a time-if the soup is too thick. Season with additional salt and pepper, if necessary.
  • 6. Pour the soup into a tureen, and garnish with diced toast and shredded calendula blossoms, if desired.

FRESH PEA SOUP

This soup is known in France as Potage Saint-Germain, a name that comes from a suburb of Paris where peas used to be cultivated in market gardens. If fresh peas are not available, use frozen peas, but thaw and rinse them before use. Croutons make an excellent garnish!

1 large onion, diced (about 1 1/2 cups)
2 1/2 cups low sodium chicken broth
3/4 teaspoon tarragon

fresh ground pepper
1 (10 ounce) bag frozen peas
1/2 cup chopped ham
4 teaspoons plain nonfat yogurt (optional)

Steps:

  • .Heat olive oil in a large pot over low-med. heat. Add onion, cover and cook until onions are softened (stir occasionally) about 5 minutes Then add broth, salt, a few turns of freshly ground black pepper and the tarragon, bring to a boil. Add the frozen peas and cook until they are defrosted.
  • In a blender, puree the soup in 2 batches until very smooth (or you can leave it just so ham is a little chunky or not).
  • return to the pot and just simmer.
  • Ladle into bowls while hot and finish off by puttin a swirl of smooth yogurt on top.
  • Or, you can put in the fridge and chill - if you like cold soup.
  • I serve oyster crachers or saltines with it or better yet? A nice crusty piece of bread.
  • and butter (oops--better not - it adds more calories) oh well your choice.
