EMERALD RICE

2 cups cooked long-grain white rice
2 tablespoons unsalted butter, melted
1/4 cup finely chopped fresh cilantro leaves
1/4 cup finely chopped flat-leaf parsley
1/2 teaspoon lime zest
1/4 cup finely grated Parmesan
Salt and freshly ground black pepper

Steps:

  • Preheat your broiler to high.
  • Heat the rice in your microwave until it's warmed through. Place the rice in a flameproof casserole or baking dish and toss with the melted butter, the chopped cilantro, parsley, lime zest and Parmesan. Place the dish under the broiler for 5 to 7 minutes, until the cheese is browned. Season with salt and pepper and serve.

CARAMELIZED ONIONS AND LENTIL RICE



Caramelized Onions and Lentil Rice image

1 tablespoon unsalted butter
2 tablespoons olive oil
1 medium yellow onion, thinly sliced
1 teaspoon sugar
Kosher salt and freshly ground black pepper
2 garlic cloves, minced
2 cups long-grain white rice
1 quart water
1 (15.5-ounce) can lentils, drained and rinsed
1/4 teaspoon ground cumin

Steps:

  • Melt the butter with the oil in a medium skillet over medium heat. Add the onions, sugar, and some salt and pepper. Cook until the onions become deep brown and sticky, about 20 minutes, stirring every 4 or 5 minutes (if the onions color too quickly, reduce the heat to medium-low).
  • While the onions caramelize, make the rice. Heat the remaining tablespoon of oil in a saucepan over medium heat. Add the garlic and cook, stirring, until fragrant, 30 seconds to 1 minute. Add the rice and stir, cooking it until the grains begin to turn opaque, about 2 minutes. Add the water, lentils, and cumin; season with salt and pepper. Increase heat to medium-high and bring to a boil. Reduce the heat to low, cover, and cook until the rice is tender and has absorbed all of the liquid, about 20 minutes. Serve topped with the caramelized onions.

COFFEE AND COLA PORK LOIN



Coffee and Cola Pork Loin image

1 cup warm water, plus 1 cup cold water
1 cup cider vinegar
1/2 cup sugar
2 tablespoons salt
1 (2 1/2 to 3-pound) pork loin
1/4 cup ground coffee beans
3 tablespoons dark brown sugar
2 tablespoons whole peppercorns
3 whole star anise
1 (1/2-inch) piece cinnamon stick broken into small pieces
3 tablespoons unsalted butter
3 tablespoons canola or vegetable oil
1/2 pound bacon, diced
2 cups demi-glace or 1 package demi-glace mix dissolved in 1 cup water
1 cup red wine
1 cup pineapple juice, from canned pineapple tidbits
1/2 cup pineapple tidbits
1 cup cola

Steps:

  • Preheat your oven to 350 degrees F.
  • Combine 1 cup of warm water with the vinegar, sugar and salt in a medium bowl, whisking until the sugar and salt are dissolved. Transfer to a large resealable gallon-sized plastic bag. Add 1 cup of cold water and the pork loin, seal, and refrigerate overnight.
  • Pulse the coffee, brown sugar, peppercorns, star anise and cinnamon stick in a coffee or spice grinder until they become a fine powder. Remove the pork loin from the brine and pat dry with paper towels. Rub with the spice mix, transfer the pork to a baking sheet and set it aside at room temperature.
  • In a large skillet melt the butter with the oil over medium-high heat. Add the pork loin and brown for 5 minutes, turning to brown all sides. Transfer the pork to a baking sheet and roast until the temperature reads 160 degrees F on an instant-read thermometer, about 1 hour. Remove the roast from the oven, cover loosely with aluminum foil, and let it rest for 10 minutes before slicing.
  • In a medium saucepan over medium heat, cook the diced bacon until crispy. Remove any excess fat from the pan and add the demi-glace, red wine, cola, pineapple juice and pineapple tidbits. Bring back to a simmer over medium-high heat for 10 minutes, until the sauce has reduced by half. Slice the pork loin and serve with the sauce on the side.

GREEN RICE

2 cups chicken stock, warm
2 poblano chile peppers
1 bunch cilantro, leaves chopped (about 1 cup)
Salt
3 tablespoons corn oil
1 medium yellow onion, finely diced (about 2 cups)
1 cup medium or long-grain white rice
3 cloves garlic, minced
Freshly ground black pepper
4 scallions, white and pale green parts only, sliced, optional

Steps:

  • In a blender combine, warm chicken stock, poblano peppers, cilantro and 1 teaspoon salt.
  • Blend until smooth.
  • In medium saucepan heat olive oil over medium heat. Saute onion until soft, about 2 to 3 minutes. Add rice and garlic and stir for another minute. Add chili puree, cover and bring to a boil. Reduce heat to low, cooking until liquid is absorbed and rice is tender, about 15 minutes.
  • Remove from heat, fluff with a fork. Season with salt and black pepper, to taste. Garnish with scallions and serve.

COCONUT RICE (ARROZ CON COCO)



Coconut Rice (Arroz con Coco) image

3 cups long-grain white rice
6 cups light coconut milk
1 tablespoon, plus 1 1/2 teaspoons sugar
1 teaspoon salt
1/2 cup raisins
1/2 cup toasted coconut flakes

Steps:

  • Place the rice, 3/4 cup of water, the coconut milk, sugar and the salt in a medium saucepan and stir to combine. Bring the rice to a boil, then reduce the heat to medium-low and simmer until the water has evaporated to just below the level of the rice and little holes begin to form on the surface, stirring occasionally so that the rice doesn't stick to the bottom of the pan and burn. Reduce the heat to the lowest setting, cover the saucepan and continue to cook until the rice is tender, 20 to 25 minutes.
  • Fluff the rice with a fork and stir in the raisins. Cover the saucepan and let it sit off of the heat until the raisins are plump and warm, 10 minutes. Sprinkle the rice with the toasted coconut and serve.

Ingrid Hoffman's Coca-Cola Rice image

This is a super-easy recipe, from the former Food Network host, for a savory rice dish. In spite of the cola it is not a sweet rice. This rice, says Hoffman, is a classic recipe in Columbia where she is from. The rice pairs well with pork loin or chicken or spicy whole fish. She gives an important hint for success: During cooking, when the liquid has almost completely evaporated there will be tunnels in the rice. That is the time to add the raisins and almonds. But, says Hoffman, resist the urge to stir them in. This is a mistake. Simply add them to the top of the rice, cover and finish cooking. Reicpe was posted on the Coca-Cola website.

2 cups long-grain rice
1/2 teaspoon salt
3 1/2 cups Coca-Cola
1/4 cup raisins
3 tablespoons almonds, sliced or 3 tablespoons almonds, slivered and lightly toasted

Steps:

  • Heat the oil in a large pot over medium-high heat for 1 minute. Add the rice and cook until it is opaque, about 2 minutes, stirring often.
  • In a separate bowl, add the salt to the cola. Stir until dissolved. The cola will fizz up releasing some of the carbonation. Then add the cola to the rice.
  • Bring to a boil, then reduce heat to medium-low, cooking until the liquid has almost completely evaporated, about 15 minutes.
  • Add the raisins and almonds over the top of the rice and reduce the heat to the lowest setting. Cover and cook until the rice is tender, about 10 more minutes. Uncover, fluff with a fork and serve.
