Celebrate the season with cranberry bars! They're super easy to make and can be cut into mini squares, just right for a dessert tray.

2 1/2 cups Gold Medal™ all-purpose flour
1 cup sugar
1/2 cup ground slivered almonds
1 teaspoon baking powder
1/4 teaspoon salt
1 cup cold butter
1 egg
1/4 teaspoon ground cinnamon
4 cups fresh or frozen cranberries
1 cup sugar
Juice of 1/2 orange (4 teaspoons)
1 tablespoon cornstarch
1 teaspoon vanilla

Steps:

  • Heat oven to 375°F. Grease 13x9-inch pan with butter or cooking spray.
  • In large bowl, mix flour, 1 cup sugar, the almonds, baking powder and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse crumbs. Stir in egg. Press 2 1/2 cups of crumb mixture in bottom of pan. Stir cinnamon into remaining crumb mixture; set aside.
  • In medium bowl, stir all filling ingredients. Spoon evenly over crust. Spoon reserved crumb mixture evenly over filling.
  • Bake 45 to 55 minutes or until top is light golden brown. Cool completely. Refrigerate until chilled. Cut into 6 rows by 4 rows. Store tightly covered in refrigerator.

2 cups quick-cooking oats
1 cup old-fashioned oats
½ cup hulled pumpkin seeds
½ cup slivered almonds
1 cup mixed nuts
1 cup dried cranberries
1 (14 ounce) can sweetened condensed milk

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line a 13x9-inch pan with lightly-greased parchment paper; an inch or so of parchment paper should stick up on 2 sides to form lifting handles.
  • Mix the quick-cooking oats, old-fashioned oats, pumpkin seeds, almonds, mixed nuts, cranberries, and sweetened condensed milk together in a bowl; spread into the prepared pan, evenly pressing into the corners and out to the sides.
  • Bake in the preheated oven until the edges are golden brown, 20-25 minutes, using slightly less time for chewier bars and slightly more time for crunchier bars.
  • Allow the the bars cool for 5 minutes in the pan before using the parchment paper to lift them from the pan. Use a sharp knife to cut into bars. Let the bars cool completely and store in an airtight container.

1 1/2 cups confectioners' sugar
6 ounces (1 1/2 sticks) unsalted butter
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1 egg
2 1/2 ounces (5 tablespoons or a little over 1/2 stick) unsalted butter
2 tablespoons plus 1 teaspoon all-purpose flour
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/3 cup dark corn syrup
1 egg
1/2 teaspoon vanilla extract
2/3 cup whole, fresh cranberries
2/3 cup walnut pieces

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the sweet dough: Place the sugar, butter, and vanilla extract in the bowl of an electric mixer. With the paddle attachment, beat the ingredients until creamy. Add flour and salt and mix until just combined. Add egg and again mix until just combined. Alternately, this can be done in a food processor. Form a disk out of the dough, wrap in plastic wrap and refrigerate for about 1/2 hour. When dough is slightly chilled, lay it between 2 sheets of plastic wrap, and with a rolling pin, roll it out into a round ? about 1/8-inch in thickness. Remove the top layer of plastic wrap and flip the dough into an ungreased tart or pie pan. With the plastic wrap still on the dough, gently press the dough into the bottom and sides of the pan. Use the rolling pin to roll across the top of the tart pan, cutting off excess dough. Remove plastic wrap and set lined pan aside while making the filling. Excess unbaked dough can be rolled out, sprinkled with sugar, and baked as sugar cookies or can be wrapped and frozen for another day.
  • Preheat the oven to 350 degrees F.
  • To make the Cranberry Walnut Filling: Melt butter and set aside. In a bowl, blend together flour, brown sugar, and cinnamon. Add the rest of the ingredients, including the butter, and stir until well combined.
  • Pour into tart shell and bake for approximately 30 minutes, until tart is light brown and the filling has set. Cool and remove tart from ring. Serve at room temperature or refrigerate. Tart keeps for about 1 week in the refrigerator. It can be well wrapped and frozen for later use.

1 cup sugar
1 cup flour
1/3 cup butter, melted
1 1/4 cups fresh cranberries
1/2 cup chopped walnuts

Steps:

  • Heat oven to 350° and grease an 8-inch baking pan.
  • Beat eggs in a medium mixing bowl until thick, gradually add sugar, beating until thoroughly blended; stir in flour and melted butter; blend well.
  • Add cranberries and walnuts, mixing gently just until combined then spread mixture evenly in prepared pan.
  • Bake for 40-45 minutes or until golden brown and a toothpick inserted into the center comes out clean.

1 (12 ounce) package whole cranberries
1 cup white sugar
¾ cup water
1 (18.25 ounce) package yellow cake mix
¾ cup butter, melted
2 eggs
1 cup rolled oats
¾ cup packed light brown sugar
1 teaspoon ground ginger
1 teaspoon ground cinnamon

Steps:

  • In a saucepan over medium heat, combine the cranberries, white sugar, and water. Cook, stirring occasionally until all of the cranberries have popped, and the mixture is thick, about 15 minutes. Remove from heat, and set aside to cool.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together the cake mix, melted butter, and eggs. Stir in the oats, brown sugar, ginger and cinnamon. Set aside about 1 1/2 cups of the mixture, and spread the rest into the bottom of a 9x13 inch baking dish. Pack down to form a solid crust, getting it as even as possible. Spread the cooled cranberry mixture over the crust. Pinch off pieces of the remaining mixture and place evenly over the cranberry layer.
  • Bake for 35 to 40 minutes in the preheated oven, until the top is lightly browned. Cool in the pan for about 40 minutes before slicing into bars.

1 cup pecan or walnut halves
Butter and flour for greasing pan
1 cup cranberries
1/4 cup sugar
1/4 cup water
1 cup quick-cooking oatmeal
1/2 cup flour
1 cup brown sugar, firmly packed
1 stick (4 ounces) unsalted butter

Steps:

  • Preheat the oven to 375 degrees. Spread the nuts on a cookie sheet and place them in the oven to toast. Grease and flour a nine-inch-square brownie pan and set aside.
  • Rinse the cranberries well under running water; pick them over and discard any that are spoiled. Place the cranberries, sugar and water in a small saucepan and bring to a boil over medium heat. As soon as the cranberries have popped, remove from the heat and set aside.
  • When the nuts are toasted, remove them from the oven and, as soon as they are cool enough to handle, chop them coarsely or process them in a food processor.
  • In a bowl, mix together the chopped nuts, oatmeal, flour and brown sugar. Add the butter, cut in small pieces, and using the fingers or a wooden spoon, work the butter into the dry ingredients until you have a crumb-textured mixture.
  • Place half the oatmeal mixture in the bottom of the brownie pan, smoothing it out to the edges of the pan. Cover the oatmeal mixture with the cranberry sauce and top the sauce with the remaining oatmeal mixture.
  • Place in the preheated oven and bake for about 45 minutes, until the top is nicely browned. Cut in bars and serve immediately with vanilla ice cream. Keep any leftovers in a sealed cookie tin.

1/4 cup orange juice

CRUST:
2 cups all-purpose flour
1/4 teaspoon salt
1-1/4 cups cold butter

  • In a saucepan, bring sugar and water to a boil. Add cranberries and cook until they pop, about 4-6 minutes. Add orange juice, orange zest, butter, cinnamon and salt. 2 cups flour, sifted
1/2 cup sugar
12 tablespoons unsalted butter, chilled
1 large egg, beaten
2 tablespoons milk
3/4 cup walnut halves
12 ounces fresh cranberries, picked over
1 cup water
1 1/4 cups sugar
2 tablespoons unsalted butter
1 tablespoon almond liqueur (optional)
1 teaspoon sugar, to sprinkle over top crust

Steps:

  • CRUST:.
  • Combine flour and 1/2 cup sugar in a mixer, blender or food processor. Add butter in small pieces and blend quickly, just until mixture resembles coarse meal.
  • Blend egg and milk together, pour into flour mixture and mix just until dough comes together. Divide dough into 2 equal portions.
  • Wrap dough in plastic and refrigerate 1 hour.
  • FILLING:.
  • Preheat oven to 300 degrees Fahrenheit (149 C).
  • Spread walnuts on a baking sheet and toast in oven for 5 minutes (less if using pre-chopped walnuts - they can burn easily). Remove walnuts from oven.
  • Increase oven temperature to 375 F (190 C).
  • In a medium saucepan, bring cranberries, water and sugar to a boil.
  • Reduce heat and simmer until berries have broken down and syrup has thickened, about 15 minutes.
  • Remove pan from heat and stir in butter. Add almond liqueur, if desired. Cover pan and set aside to allow berries to cool and thicken.
  • Coarsely chop walnuts and stir into cranberries.
  • Lightly grease a 9x13-inch baking pan. Remove dough from refrigerator and work with hands until pliable.
  • On a floured surface, roll one half into a 10x14 rectangle. Lift it by wrapping around the rolling pin, then unroll over prepared pan. Press dough evenly over bottom and 1/2-inch up sides. Repair any cracks by pressing together with fingers.
  • Pour cooled cranberry mixture over bottom crust. Roll remaining dough as above and place over filling. Trim away excess dough. Press down on top layer gently to fuse the layers. Sprinkle with 1 teaspoon sugar.
  • Bake on middle rack in oven until edges are golden brown and center is light brown, 25-30 minutes. Cool and cut into squares.
