You will need a wok and a bamboo steamer to make this recipe.

3 quarts cold water
3 (6-inch) pieces dried kelp (kombu), wiped of dirt
1 1/2 cups dried bonito flakes
2 tablespoons light miso
8 ounces shiitake mushrooms, stems removed, halved
2 (6-ounce) center-cut black sea bass fillets, skin on
Sea salt and freshly ground black pepper
2-inch piece fresh ginger
1 handful fresh cilantro, plus more for garnish
2 heads baby bok choy, halved lengthwise
1 pound fresh udon noodles
2 green onions, white and green part, chopped
Several shakes chili-sesame salt

Steps:

  • To make the dashi (Japanese soup stock): Combine the water, kelp, and bonito flakes in a 4-quart saucepan and place over medium-low heat. Allow the water to slowly come to a simmer; this should take about 10 minutes. Turn off the heat immediately just as the stock reaches a boil. Let the stock sit for 1 to 2 minutes and then strain out the solids. Reserve 2 quarts of the dashi to use in the future as a base for soups and stews (it will keep for 1 week in the refrigerator or frozen for several months), and the remaining quart to prepare the miso soup.
  • Pour the dashi into a wok and place over medium heat. Whisk the miso into the dashi, stirring until smooth. Toss in the mushrooms.
  • Lightly coat the bottom of a 12-inch bamboo steamer with non-stick cooking spray. Season both sides of the fish fillets with salt and pepper; lay them side by side in the steamer, skin-side up. Cut the ginger lengthwise in strips and put it on top of the fish so the flavor can permeate; put the cilantro on top. Nestle the bok choy in the steamer, side by side, and cover with the bamboo lid. Set the steamer inside the wok, and steam for 15 to 20 minutes until the fish is cooked. Carefully remove the bamboo steamer and add the udon noodles and green onions into the soup. Cook for 1 minute or until the noodles are tender.
  • To serve: Ladle the miso soup into 2 wide shallow bowls, scoop the noodles into the soup and lay the bok choy and fish on top of that. Garnish with more cilantro and sprinkle lightly with the chili-sesame salt and serve.

SLOW COOKER CHICKEN NOODLE SOUP

This slow cooker version of the classic soup is super easy to make. We used chicken thighs because they're less expensive than breasts and tend not to dry out. If you like, skip the noodles and stir in your favorite cooked grain at the end.

8 ounces carrots, sliced 1/4 inch thick (about 3 large carrots)
6 ounces celery, sliced 1/4 inch thick (about 5 large stalks)
1/4 small onion, peeled and root end intact
2 large sprigs parsley, plus 1/4 cup chopped leaves
2 large sprigs thyme
1 bay leaf
Kosher salt
2 pounds bone-in, skin-on chicken thighs (about 6 thighs)
8 cups low-sodium chicken broth
6 ounces wide egg noodles (about 4 cups)
1 to 2 tablespoons freshly squeezed lemon juice
Freshly ground black pepper

Steps:

  • Toss the carrots and celery together in the slow cooker. Add the onion, sprigs parsley, thyme, bay leaf and 1 teaspoon salt.
  • Rub the chicken thighs all over, including under the skin, with 1 teaspoon salt total, and put them on top of the vegetables. Add the chicken broth. Cover, and cook on low for 8 hours. During the last 15 minutes of cooking, remove the chicken and stir in the noodles.
  • While the noodles cook, remove and discard the chicken skin and bones and shred the chicken-it will mostly fall apart on its own. When the noodles are done, turn off the cooker, remove the parsley and thyme stems, and add the shredded chicken and 1 tablespoon lemon juice. Taste, and add more lemon juice and salt as needed. Stir in a good amount of pepper and the chopped parsley, and serve hot.

HUNGARIAN-ISH MINI-DUMPLING AND EGG NOODLE SOUP

This soup is so light yet hearty it really is great in any season for any reason, but it is especially delish on cold, snowy days. Plus, it's made from many items you can keep on hand.

8 cups chicken stock (recommended: Kitchen Basics, 2 (1-quart) boxes
1 pound ground chicken or ground turkey breast (I keep an extra pack of both in the freezer; they are both so lean and easy to work with!)
1 egg
1 cup plain bread crumbs
1/4 teaspoon freshly grated nutmeg, eyeball it
1 teaspoon smoked sweet paprika
Handful parsley leaves, finely chopped
Salt and pepper
1 1/2 cups thin egg noodles
1/2 cup pequillo Spanish peppers or roasted red peppers, quartered lengthwise, very thinly sliced
6 scallions, cut into 2-inch pieces then shredded into thin sticks
Handful fresh dill, finely chopped, about 3 tablespoons

Steps:

  • Heat stock to a boil and reduce heat to simmer. Mix the chicken with egg, bread crumbs, nutmeg, smoked sweet paprika, parsley, salt and pepper. Roll the meat into 1-inch dumplings and add to simmering stock. Wash up and let the dumplings cook 3 to 4 minutes alone. Add the egg noodles, peppers and scallions and stir. Cook another 4 to 5 minutes until noodles are just tender. Stir in dill. Season soup with salt and pepper to taste and serve immediately.

All you need to fake the flames is sugar, water, a candy thermometer, and food coloring. Let the candy cool, and sink the hardened pieces in for a dessert that'll go down in a blaze of glory.

3 sticks unsalted butter, softened, plus more for pans
1 cup boiling water
3/4 cup Dutch-process cocoa powder
4 ounces bittersweet chocolate, chopped (3/4 cup)
3 1/2 cups unbleached all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1 1/2 teaspoons kosher salt (we use Diamond Crystal)
2 cups packed light-brown sugar
4 large eggs, room temperature
2 teaspoons pure vanilla extract
1 cup sour cream
1 1/4 cups granulated sugar
5 large egg whites
3 sticks unsalted butter, room temperature
9 ounces bittersweet chocolate, melted and cooled
1 cup granulated sugar
Yellow and red gel-paste food coloring
4 ounces semisweet chocolate, chopped (3/4 cup)
Pinch of kosher salt (we use Diamond Crystal)
1/2 cup heavy cream

Steps:

  • Cake: Preheat oven to 325°F. Butter two 9-inch round cake pans. Line bottoms with parchment rounds; butter parchment. Combine boiling water, cocoa, and chocolate in a bowl; stir until chocolate has melted. Let cool 10 minutes. Meanwhile, in another bowl, whisk together flour, baking powder, baking soda, and salt.
  • Beat butter with brown sugar on medium-high speed until light and creamy, 2 to 3 minutes. Beat in eggs, one at a time, blending well after each addition. Beat in vanilla, then chocolate mixture to combine. Reduce speed to low; beat in flour mixture in two additions, alternating with sour cream, until just combined.
  • Divide batter evenly between prepared pans, smoothing tops with an offset spatula. Bake until a tester inserted into centers comes out clean, 35 to 40 minutes. Let cakes cool in pans on a wire rack 20 minutes. Turn out cakes and place on rack, top-sides up; let cool completely. With a serrated knife, trim tops of cakes so they are level.
  • Buttercream: In the bowl of a mixer, whisk together granulated sugar and egg whites. Place over (but not in) a pot of simmering water; continue whisking constantly until sugar has completely dissolved and mixture is warm, 2 to 3 minutes. Place bowl in mixer fitted with the whisk attachment and beat on high speed until thick, glossy, and cool, 8 to 10 minutes.
  • Switch to paddle attachment. Beat in butter, 2 tablespoons at a time, on medium-high speed until combined. Beat in chocolate. Reduce speed to low and continue beating until air bubbles are gone, 1 to 2 minutes more.
  • Flames: Line several baking sheets with parchment. In a small saucepan, combine granulated sugar and 1/4 cup water over medium-high heat, stirring until sugar has dissolved. Bring to a boil and cook, swirling pan occasionally, until mixture registers 300° to 310° (hard-crack stage) on a candy thermometer, 6 to 8 minutes. Swirl in a drop or two of yellow food coloring, then pour syrup into a glass measuring cup.
  • Working quickly, pour lengths of syrup (each between 1 and 3 inches long) onto prepared sheets, dragging the tip of a knife through in random places to create flame shapes. If desired, add a drop of red food coloring to the last few tablespoons of syrup to create redder flames. Let stand until hardened, about 5 minutes.
  • Assembly: Place one cake layer on a stand, trimmed-side up, and spread 1 1/2 cups buttercream evenly over surface. Top with remaining cake layer, trimmed-side down. Spread a thin layer of buttercream over top and sides. Refrigerate until firm, about 30 minutes (this ensures a crumb-free finish). Spread remaining frosting evenly over top and sides of cake, keeping top as flat and level as possible.
  • Ganache: Place chocolate in a small heatproof bowl; add salt. Bring cream just to a boil over medium-high heat. Pour over chocolate. Let stand 10 minutes, then whisk until smooth and shiny. Let cool a few minutes. Pour half of warm ganache over center of cake, then slowly but steadily pour remaining ganache around edges, allowing it to drip down sides. Refrigerate until set, about 1 hour. (At this point, cake can be refrigerated up to 1 day; bring to room temperature before serving.)
  • To garnish, press candy flames into top of cake, arranging lighter flames toward back and darker flames toward front.
