- You'll Need:Small saucepan, baking sheet Directions: Preheat oven to 400 degrees. 1.Melt garlic butter in saucepan on LOW; remove from heat as soon as it is melted. 2.Combine melted butter and bread crumbs in a small bowl; mix well. Add cheese, mixing well. 3.Coat baking sheet thinly with basting oil. Place tilapia on baking sheet; season with salt and pepper. 4.Top each fillet with about 3 Tbsp of bread crumb mixture; press to cover entire top of fillet. 5.Bake 12-15 min or until internal temp of fillets reaches 130 degrees (check by inserting thermometer halfway into thickest part of tilapia). Remove from oven; let rest 2 min. 6.Serve with bouillabaisse sauce.
BAKED PARMESAN TILAPIA
Steps:
- Preheat an oven to 425 degrees F (220 degrees C).
- Line an 11-17-inch baking sheet with aluminum foil and lightly spray with cooking spray.
- Mix milk and ranch dressing in a shallow bowl. Place flour in a separate shallow bowl; set aside.
- Whisk together bread crumbs, Parmesan cheese, seasoned salt, black pepper, celery salt, garlic powder, onion powder, paprika, parsley, and basil in a bowl.
- Spray bread crumb mixture with cooking spray until damp, then whisk bread crumbs. Repeat spraying and whisking 3 more times to lightly moisten crumb mixture with cooking spray.
- Transfer crumb mixture to a large resealable plastic bag.
- Gently press tilapia fillets into the flour to coat, and shake off the excess flour.
- Dip the fillets into the ranch dressing mixture.
- Place all the fillets into the resealable plastic bag; seal bag and shake to coat fish with bread crumb mixture.
- Arrange tilapia on prepared baking sheet. Lightly spray the breaded fish with cooking spray.
- Bake in the preheated oven until the fish is easily flaked with a fork, 20 to 25 minutes.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Whisk Parmesan cheese, paprika, parsley, salt, and pepper together in a shallow dish.
- Coat tilapia fillets with olive oil and press into the Parmesan cheese mixture. Arrange coated fillets on the prepared baking sheet.
- Bake in preheated oven until the fish flakes easily with a fork, 10 to 12 minutes.

GARLIC PARMESAN ENCRUSTED TILAPIA
I recently came up with this recipe for our Memorial Day weekend barbecue since we were sick of the same old stuff. It went over extremely well and everyone that was there has demanded the recipe. It's good cooked in the oven, but much better grilled!

Steps:
- Preheat the grill or oven to 350°F and spray the baking sheet with non-stick cooking spray.
- Divide the filets into two parts, then rinse with water and pat dry.
- Combine the parmesan cheese, garlic, paprika, parsley, salt, pepper on a large plate.
- On another plate, pour the olive oil.
- Dip the filets in the olive oil, then in the parmesan mixture.
- Optional: let the flavors combine for about 4 hours. If you're taking it to a picnic, just put inside a ziplock bag.
- Place on a baking sheet. For the barbecue, I use non-stick aluminum foil (Reynolds brand works great).
- Bake/grill for about 20 minutes or until opaque in the middle and crispy on the edges. Do not overcook. The fish should be very moist with a crisp bottom and edges. Enjoy!

This is an easy recipe that I made up myself. It can be used when there are not too many ingredients available to make a big dinner. Can be served with mashed potatoes, pasta or rice. This will always be your favorite!!!

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- In a medium bowl, mash together the garlic and tomato. Stir in the sour cream and season with salt and pepper. Place the fish fillets in a shallow baking dish.
- Bake fish for 10 minutes in the preheated oven, until about halfway done. Remove from the oven, and pour the tomato sauce over it. Return to the oven, and cook for 10 more minutes, or until fish flakes easily with a fork.

- Preheat the oven to 400°F. Coat a shallow baking pan with nonstick spray and arrange the fish fillets in a single layer.
- In a small bowl, combine the breadcrumbs, garlic, 1 tablespoon of the olive oil, salt, pepper and parmesan cheese.
