1 cup all-purpose flour
1/2 cup whole wheat flour
1/4 cup flax seed meal
1 tablespoon baking powder
1/2 teaspoon salt
2 cups milk
1/3 cup vegetable oil
2 eggs

Steps:

  • Heat up your waffle iron.
  • Mix dry ingredients.
  • blend in wet ingredients.
  • Pour about 3/4 cup (depending on your waffle iron) onto iron & cook according to manufacturer's directions.
  • I also usually add chocolate chips.

1 cup teff flour
1 cup all-purpose flour
1/4 cup flax seed meal
sugar, see notes
1 tablespoon baking powder
1 teaspoon sea salt
1/4 cup vegetable oil
2 eggs
1 tablespoon vanilla
1 cup whole milk
fruit, your choice

Steps:

  • Mix dry ingredients together, add in eggs, oil, and a half cup of the milk, mix. Then add in your choice of fruit, add in the rest of the milk until you get a good consistency, I go for a thickish cake batter consistency usually. Add more flour if your batter is too thin.
  • Note: I like to keep this recipe low in sugar so I usually add in a couple tablespoons of coconut sugar, but you can add whatever kind of sugar you want and however much you want.
  • Note: I usually go with a 6oz. box of fresh raspberries which I blend well into the batter with my mixer, or I go with half a box of fresh strawberries which i smoosh with my garlic press, as I hate big chunks of fruit in things.
  • Depending on what kind of fruit you use, you may need to use less milk or add in more flour.

Make a big batch to freeze. Pop them into the toaster for a quick breakfast. Substitute Flax oil for the butter if you like.

4 cups quick oats
4 cups bread flour
1 cup flax seed meal
1/2 cup ground pecans
5 teaspoons baking soda
3 teaspoons baking powder
5 teaspoons salt
1/2 cup sugar
8 eggs
8 cups buttermilk
1/2 cup butter
1/4 cup flax seed oil
4 teaspoons vanilla

Steps:

  • grind oats.
  • grind pecans.
  • sift together all dry ingredients.
  • beat eggs, buttermilk and vanilla then add melted butter & oil.
  • gradually add dry ingredients to just moistened.
  • let mixture set for 15 minutes.
  • bake in waffle iron.

The original recipe was made by my nana for years and years. Then my mom made it for me growing up, and now I make these waffles myself (but with a couple of healthy changes) They still taste just as good as the did when I was a kid. We serve them sometimes for breakfast, but in our family waffles have almost always been served for dinner. When you can't think of anything else to make.

1 1/2 cups whole wheat flour
1 1/2 cups white flour
1/2 teaspoon stevia or 4 tablespoons sugar
6 teaspoons baking powder
4 tablespoons flax seeds
1/2 teaspoon salt
4 eggs
3 cups milk
1/4 cup olive oil or 1/4 cup melted butter

Steps:

  • Mix dry ingredients.
  • Mix wet ingredients separately.
  • Mix dry and wet together whisk until smooth.
  • Pour about 3/4 of a cup of batter at a time onto the waffle iron.
  • You will begin to see steam coming out of the iron.
  • Cook the waffles until the steam is almost gone.
  • Any waffles we don't eat right away get put into the freezer, and we pop them in the toaster for a quick breakfast or snack.
