SPICY INDONESIAN PEANUT DIP image

Number Of Ingredients 9

2 green onions chopped
2 garlic cloves, chopped
2 Tbsp lime juice
1 Tbsp soy sauce, light
1/2 tsp hot chili oil
1/4 tsp sesame oil
1/4 tsp lime peel, grated
2/3 c unsweetened coconut milk room temp.
1/2 c chunky peanut butter room temp.

Steps:

  • 1. Place all the ingredients in a food processor, or blender and process to a smooth paste.
  • 2. Transfer to a bowl and serve with large cooked shrimp or vegetable crudites.

I asked my friend, Bets, for this recipe after tasting it at an annual Christmas ornament exchange open house. The ladies were standing around the table practically inhaling this stuff! Its great with an assortment of raw veggies including snow peas, red pepper strips, cauliflower, carrots, celery or pita crisps. Be careful tho... it's very addictive! Chilling time not included in prep time.

Number Of Ingredients 5

2/3 cup chunky peanut butter
1/2 cup brown sugar, tightly packed
1/2 cup fresh lemon juice (about 3 lemons)
1/4 cup chili paste with garlic
2 teaspoons soy sauce

Steps:

  • Whisk all ingredients together to blend well.
  • Cover and chill 24 hours.
  • Serve with the raw veggies of your choice, or crackers.

1 cup peanut butter (preferable crunchy)
1/4 cup soy sauce
1/4 cup brown sugar, packed
1 -2 teaspoon crushed red pepper flakes (or to taste)
2 tablespoons chili sauce (or ketchup)
1 lemon, juiced

Steps:

  • Mix all the ingredients in a small bowl until well combined. Serve immediately, or cover and chill for up to 1 week. Bring to room temperature before serving.
