DELIA'S RHUBARB ICE CREAM WITH CRUMBLE



Delia's Rhubarb Ice Cream with Crumble image

A rhubarb lover's ice cream dream come true!

Provided by slightly adapted from a recipe by Delia Smith

Number Of Ingredients 7

1 lb (about 4 large stalks) fresh, trimmed rhubarb
1 cup (6 oz) sugar
1 tbsp fresh lemon juice
2 cups (16 oz) heavy whipping cream (try to find cream with no additives, or as few as possible)
2/3 cup (3 oz) flour
1/4 cup (2 oz) butter
1/4 cup (1 oz) brown sugar

Steps:

  • Preheat the oven to 375°F (190°C)
  • Make the crumble by rubbing the flour, butter and brown sugar together until it forms pea-like crumbs, then put onto a baking sheet. Set aside.
  • Wash the rhubarb and cut into bite sized pieces and put into a shallow baking dish along with the lemon juice and sugar; mix well.
  • Place this dish in the lower part of the preheated oven, and the crumble on a higher shelf. Bake the crumble for about 10 to 12 minutes, then remove from the oven. Continue to bake the rhubarb for another 15 to 20 minutes, or until it is soft, then remove from the oven and allow to cool.
  • When the rhubarb is cool, use a stick blender or food processor to puree the fruit until it is smooth. Place in a covered bowl in the refrigerator until needed.
  • Break up the crumble into pieces and set aside about one quarter of the crumbs for topping the ice cream.
  • When you are ready to process the ice cream, mix the cream into the rhubarb puree and pour into the prepared ice cream maker* and process according to manufacturer's directions (or until it looks like soft whipped cream).
  • Add the crumble pieces at the last minute of processing; when mixed well, stop the machine and put the ice cream in a container that can be frozen. Place in freezer for a minimum of 4 to 6 hours before serving. I like to add some of the reserved crumble to the top of each serving.
  • * If you don't have an ice cream maker, freeze the cream and rhubarb (without the crumble) for 3 or 4 hours, then beat and freeze for 2 more hours. Beat again and this time add the crumble, freeze for 4 to 6 hours, then serve.

3 cups sliced fresh or frozen rhubarb
2 cups sugar
1 cup milk
1 cup heavy whipping cream
2 teaspoons lemon juice
1 teaspoon minced fresh gingerroot

Steps:

  • Preheat oven to 375°. Place rhubarb in an ungreased 13x9-in. baking dish. Sprinkle with sugar; toss to coat. Cover and bake 30-40 minutes or until tender, stirring occasionally. , Cool slightly. Process rhubarb in batches in a food processor; transfer to a bowl. Cover and refrigerate until chilled., In a large bowl, combine milk, cream, lemon juice and ginger; stir in rhubarb., Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer's directions. (Refrigerate any remaining mixture until ready to freeze.) Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm. Repeat with any remaining ice cream mixture.

This super easy, lightly spiced crumble can be prepared ahead of time - a comfort food favourite that makes a great budget-friendly dinner party dessert

75g butter
100g golden caster sugar
2 vanilla pods , seeds scraped out
3 Bramley apples , peeled and chopped
600g rhubarb , cut into even chunks
100g stem ginger , finely chopped
clotted cream sprinkled with ground ginger, to serve
200g plain flour
100g cold butter , diced
85g jumbo rolled oats
85g light brown soft sugar
100g shelled pistachios , chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. First, make the topping. In a bowl, rub the flour and butter together with your fingertips until it resembles fine breadcrumbs. Add in the oats and sugar, and stir with a wooden spoon to form a coarse crumble.
  • Spread out the crumble in an even layer on a baking tray and bake in the centre of the oven for 15 mins until golden, with larger clusters of crumble formed. Once the mixture has cooled slightly, stir through the nuts.
  • Next, make the crumble filling. Melt the butter in a heavy-based saucepan, then add the sugar and vanilla, and give everything a good stir. Tip in the apple and cook for 5 mins, stirring constantly, until the apples have turned into a thick purée. Once the apples have broken down, add the rhubarb and ginger. Stir well, then simmer for 5 mins until the rhubarb has just begun to soften. Pour the filling into a bowl and leave to cool.
  • Once ready to eat, divide the crumble filling into six individual pie dishes, or one larger dish if you prefer, then top with the crumble topping. Can be assembled a day ahead and kept in the fridge, or frozen. To reheat from frozen, cook for an extra 15 mins until piping hot throughout. Bake in the centre of the oven for 15 mins, until bubbling throughout. Serve with the clotted cream.

The combination of rhubarb and ginger is sharp and cleansing - an ideal way to finish a dinner party

800g best-quality rhubarb , sliced into thumb-size chunks
100ml dessert wine (optional)
300g caster sugar
2 oranges , zest removed in large strips
200g stem ginger , very finely chopped, plus a few tsp of syrup
250ml full-fat milk
4 egg yolks
85g caster sugar
300ml double cream
shortbread rounds (optional), to serve

Steps:

  • Make the ice cream: tip the ginger and syrup into a pan with the milk, bring to the boil, then remove from the heat. Allow to cool and infuse, then taste - add more ginger if you like a stronger flavour.
  • Bring the milk and ginger back to the boil. In a separate bowl, mix the yolks with sugar. Pour on the boiled milk, stirring non-stop, until completely mixed, then pour back into the pan. Cook over a gentle heat, stirring constantly, until it thickens and coats the spoon. Remove from the heat and stir in the cream. Pour through a sieve to remove the ginger, cool, then churn in an ice-cream maker. Freeze.
  • Tip the rhubarb into a baking dish, pour over the wine (if using) and scatter over the sugar and zest. Cover with baking paper and bake in a low oven at 140C/ 120C fan/gas 1 for 1 hr or until tender. This slow method keeps the rhubarb's shape and texture. Can be prepared the day ahead and left at room temperature. Serve the rhubarb and its juices along with a couple of scoops of ice cream.

3 cups diced fresh rhubarb or sliced frozen rhubarb
2/3 cup sugar plus 3/4 cup sugar, divided
2/3 cup water
1 tablespoon butter
1/3 cup quick-cooking oats
1 tablespoon brown sugar
1/4 teaspoon ground cinnamon
1-1/2 cups heavy whipping cream
1-1/2 cups half-and-half cream
1 teaspoon vanilla extract

Steps:

  • Place rhubarb, 2/3 cup sugar and water in a small saucepan; bring to a boil, stirring occasionally. Reduce heat; simmer, until rhubarb is softened and mixture is thickened, 8-10 minutes. Cool completely., In a small skillet, melt butter over medium-high heat. Add oats, brown sugar and cinnamon; cook and stir until oats are coated, 45-60 seconds. Remove to a bowl; cool completely., In a bowl, whisk together both creams, vanilla and remaining sugar until sugar is completely dissolved. Fill cylinder of an ice cream maker no more than two-thirds full. Freeze according to manufacturer's directions. During the last 5 minutes of processing, add oat mixture, breaking up any large crumbles before adding., Transfer half of the ice cream to a 1-quart freezer container; drizzle with half of the rhubarb mixture. Using a knife, cut through mixtures in a zigzag pattern to swirl. Repeat with remaining ice cream and rhubarb. Freeze, covered, until firm, about 4 hours.

2 tablespoons candied ginger, finely chopped (or to taste)
1 lb rhubarb, cut into 2-inch pieces
1/4 cup brown sugar
1/2 teaspoon ginger
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon orange rind, grated
1 tablespoon butter
1/2 cup oatmeal
1/2 cup flour
1/2 cup brown sugar
1/2 teaspoon kosher salt
1/4 cup butter

Steps:

  • Ice Cream: Soften ice cream. Beat in candied ginger and refreeze.
  • Preheat oven to 375.
  • Combine rhubarb, brown sugar, ginger, cinnamon, nutmeg, grated orange rind and butter in a bowl. Spoon mixture into 4 well buttered 1 cup dishes.
  • Combine oatmeal, brown sugar and salt in a medium bowl. Cut in butter until mixture resembles coarse bread crumbs. Sprinkle generously over fruit.
  • Bake for 30 - 40 minutes or until top is golden and juices are bubbling.
