Spicy Raw Vegan Gluten-Free Mango-Ginger Soup image

This cold soup recipe is suitable for those on a gluten-free or raw-food diet, as it is vegetarian, vegan and uses all fresh, raw food ingredients.

1 large mango (peeled and destoned)
1/2 onion ( chopped )
1/2 cup cold water
1 to 2 small chili peppers ( minced )
Juice from 1 lime
1/2 tsp. ginger (grated or minced)

Steps:

  • Gather the ingredients.
  • Process all ingredients together in a blender until smooth and creamy, adding a bit more or less water as needed.
  • Chill for at least 1 hour before serving.
  • Enjoy!

Tried this several years ago on a cruise and have been trying to make it ever since. Finally found the recipe, ready for summertime!

2 cups mango ice cream
3/4 cup heavy cream
3 cups milk
1 ounce fresh ginger, minced
1 mango, peeled and cubed
mint sprig
1 dash nutmeg

Steps:

  • Combine ice cream, cream, milk, ginger, and mango in blender. (Reserve cubes or slices of mango to garnish if desired).
  • Blend well.
  • Serve immediately in chilled soup bowls, garnished with a dash of nutmeg, mint sprig, and additional mango.

1 tablespoon ginger
2 tablespoons mango juice
1 black tea bag
frozen peach

Steps:

  • Add ¼ peaches to an iced tea glass
  • Mash the peaches and add 1 tablespoon ginger to it
  • Add two tablespoons of mango juice and add 1-2 black tea bags to the mixture
  • Pour water in it and strain the iced tea.
  • Add frozen peaches to the iced tea and serve it chilled
  • Enjoy!

4 to 6 ripe mangoes, peeled, pitted and chopped, or 4 cups frozen mango, thawed
1 cup milk
1 cup plain yogurt
1 cup unsweetened coconut milk
1 tablespoon ancho or other mild chili powder, or to taste
1/4 teaspoon cayenne, to taste
1/4 cup chopped fresh mint leaves, plus a few sprigs, for garnish, optional

Steps:

  • Purée mango in food processor or blender, adding enough milk to let the machine easily do its work. (Work in batches, if necessary.) Add the remaining milk, the yogurt, coconut milk, chili powder and cayenne, and process until smooth. Taste and adjust seasoning.
  • Transfer soup to bowl and refrigerate 1 hour. Ladle into bowls, garnish and serve.

2 ripe mangoes (about 1 pound each), peeled and cubed
1/2 cup chopped shallots
1 large clove garlic, chopped
1 teaspoon finely grated ginger
1/2 teaspoon curry powder (or more to taste)
1/2 teaspoon salt
1 can (13.6 ounces) light coconut milk
1/2 cup coconut water
3 1/2 tablespoons fresh lime juice (or more to taste)
1 cup cooked, diced shrimp
3 tablespoons chopped fresh cilantro

Steps:

  • Pulse mangoes, shallots, garlic, ginger, curry powder and salt in a food processor until pureed. Add coconut milk; pulse until well combined. Transfer mango mixture to a bowl; stir in coconut water and lime juice. (Thin with tap water if desired.) Cover and chill until cold, 1 hour. Divide among 4 bowls; garnish with shrimp and cilantro before serving.
