1/2 cup sugar
1/2 cup water
2 cups fresh blueberries
1 cup dried blueberries
2 peaches

Steps:

  • In a heavy-bottomed saucepan, combine the sugar and water and bring to a boil over medium-high heat. Add the fresh and dried blueberries and stir to combine. Turn the heat down to low and simmer for 20 minutes, stirring once or twice. remove from the heat and set aside.
  • Meanwhile, bring a small pot of water to a rolling boil and lower in the peaches. Cook for several minutes, just until the skins split. Remove and immediately plunge them into an ice-water bath. peel the peaches, remove the pits, and, working over a dish to retain the juices, cut the peaches into small chunks. Fold the peaches and juice into the blueberry mixture. Serve warm with pancakes. Tip: Add a little finely grated lemon zest to your pancake batter. Enjoy!

This is a chilled soup combining some of my FAVORITE flavors...blueberries, peaches, and vanilla. I look for foods that are simple to shop for, prepare, and healthy to eat. Oh and they need to taste AWESOME! I originally saw recipe #430720 for Iced Blueberry-Peach Soup and wanted to make it a bit healthier. So MUCH THANKS to Chef #1365024 for my inspiration!

Number Of Ingredients 5

10 ounces frozen peaches
10 ounces frozen blueberries
8 ounces fat free Greek yogurt (I used vanilla flavor)
1/4-1/2 teaspoon cinnamon
5 g sugar substitute (I used 4 packets of SunCrystals brand)

Steps:

  • Measure out 10 ounces of each frozen fruit. Allow to thaw a bit either on the countertop or microwave on 50% power for 2 minutes. Do not drain off the small amount of liquid that you will see in the slightly thawed fruit unless it is more than 2T. Combine all ingredients in a food processor and blend to desired consistency.

10 ripe peaches, peeled and sliced (preferably white)
1/2 cup powdered sugar
2 oranges, juice of
2 lemons, juice of
2 cups prosecco wine
30 mint leaves, torn into pieces
1 pint blueberries

Steps:

  • In large bowl, mix peaches with sugar.
  • Mix juices with the prosecco; pour over peaches.
  • Add half the mint leaves and let marinate in refrigerator 20 minutes.
  • Stir in blueberries.
  • Garnish with the remaining mint.

8 cups fresh peaches, peeled and sliced or 2 lbs frozen peaches
1/2 cup orange juice
1/2 cup pineapple juice
1/4 cup lime juice
plain yogurt
1/2 cup whipping cream
powdered sugar
1/2-1 teaspoon fresh gingerroot, grated
1/2 cup fresh blueberries
fresh mint sprig (optional)

Steps:

  • In a blender or food processor, combine peach slices, juices, yogurt and cream. Process or blend at high speed until mixture is smooth.
  • Add powdered sugar and ginger root to taste.
  • Cover and chill.
  • Just before serving, gently stir in blueberries. Garnish each serving with mint sprigs and a dollop of yogurt.

2 tablespoons balsamic vinegar
3 cups blueberries (about 1 lb)
1 lb peaches or nectarines, sliced
1/2 teaspoon black pepper (optional)

Steps:

  • Boil 3 tablespoons sugar with vinegar, and 1 cup blueberries in a 1- to 1 1/2-quart heavy saucepan, stirring, 1 minute. Remove from heat.
  • Combine remaining 2 cups blueberries with peach slices in a large bowl. Toss with hot blueberry syrup and black pepper, then add sugar to taste. Let stand, tossing occasionally, 30 minutes.
