S'mores Ice Cream image

S'mores Ice Cream celebrates summer in all the best ways. Slightly charred, ooey-gooey, melted marshmallows swirled into a rich vanilla ice cream with chocolate and graham crackers. Get ready to eat the perfect summertime treat!

Number Of Ingredients 11

For the ice cream base:
2 cups heavy cream
2/3 cup whole milk
1 teaspoon vanilla extract
1/2 teaspoon salt
6 egg yolks
1/3 cup sugar
For the add-ins:
6 ounces chocolate (about 1 cup chocolate chips)
2 cups mini marshmallows
6 graham crackers, broken into small pieces

Steps:

  • Freeze the ice cream bowl: Place the ice cream maker churning bowl in the freezer the day before you want to make ice cream. (Most manufacturers recommend that the churning bowl be frozen for 24 hours before making ice cream.)

3/4 cup marshmallow creme
1/2 cup plus 2 tablespoons chilled heavy cream
1 cup crushed graham crackers, plus 1 graham cracker sheet, broken into rectangles, for garnish
1 1/2 cups chocolate pudding
4 jumbo marshmallows
4 rectangles from a 1.55-ounce chocolate bar

Steps:

  • Put the marshmallow creme and 2 tablespoons of the heavy cream in a large chilled bowl. Use a hand mixer to beat until the creme is loosened, smooth and shiny. Add the remaining 1/2 cup heavy cream to the bowl and whip to medium peaks, starting on low and then changing to medium speed.
  • Put 2 tablespoons of crushed graham crackers in the bottom of each of four 9-ounce plastic tumbler cups. Top with 3 tablespoons marshmallow whipped cream, then 3 tablespoons chocolate pudding. Repeat so you have another layer of each ingredient. Refrigerate until ready to serve.
  • When ready to serve, place the marshmallows onto skewers. Toast the marshmallows over a hot grill (or on the stove top).
  • Place a toasted marshmallow on top of each s'mores cup. Garnish each with a piece of chocolate bar and graham cracker.

  • If your Toasted Marshmallow Ice Cream is very firm, you may wish to set it out on your counter for about 10-15 minutes to soften it.
  • Line 12 muffin tins with good quality paper cupcake liners or foil cupcake liners. Sprinkle a bit of crushed graham crackers in the bottom of each cupcake liner.
  • Melt chocolate chips and coconut oil in the microwave in a microwave-safe bowl on medium. Microwave for 30 seconds and stir. Continue microwaving at 15-30 second intervals, stirring after heating each time, until chocolate is melted and smooth.
  • Spoon about 1 teaspoon of melted chocolate in the bottom of each cupcake liner, directly on top of crushed graham crackers. Spoon just enough chocolate to cover the bottom of each liner. Place pan in refrigerator until chocolate has set.
