2 pkg Mahatma® Yellow Seasoned Rice
3 ¼ cups water
2 Tbsp olive oil
¼ cup onion, chopped
½ lb cooked sausage, sliced
1 lb cooked shrimp, peeled and deveined
½ cup frozen peas, thawed
2 each green onions, sliced
roasted red pepper strips, optional

Steps:

  • In a large saucepan add rice mixes, water, oil, onion and sausage. Bring to a boil. Cover, reduce heat and simmer 20 minutes. Step 2
  • Remove from heat and stir in shrimp, peas and green onions. Cover and let stand 5 minutes. Step 3
  • Serve garnished with pepper strips, if desired. Rice Cooker Version Step 1
  • Combine all ingredients, except shrimp, peas, green onions and peppers in a rice cooker. Step 2
  • Follow the manufacturer's instructions for white rice. When the cooking cycle is finished, stir in shrimp, peas and green onions. Close the lid and let stand 5 minutes. Step 3
  • Served garnished with peppers, if desired.

Easy Spanish Yellow Rice image

I'm a lazy cook so when I had a craving for my grandmother's yellow rice, I figured out a recipe that would taste the same and be simple. Amounts and ingredients can be changed according to your tastes and it keeps well too! This is a kind of spanish rice that my Domincan grandmother makes, using tumeric instead of saffron to give the rice its color, with peas, shallot/onion, and garlic.

Number Of Ingredients 9

2 tablespoons shallots or 2 tablespoons yellow onions, chopped
2 teaspoons vegetable oil or 2 teaspoons butter
1 -3 garlic clove (depending on taste)
1 1/2 cups long grain white rice, rinsed
2 1/4 cups chicken broth or 2 1/4 cups water
1 teaspoon salt
1/2 teaspoon turmeric
frozen peas (amount to taste)
cilantro

Steps:

  • Heat oil in a medium saucepan on medium-high heat.
  • Add the shallots and garlic and cook until they start to brown, around 2-3 minutes.
  • Add rice, broth, tumeric, and salt. Add frozen peas; I usually add enough to cover the surface of the broth (you can gauge this by adding them little by litte, they usually float to the top). Bring to a boil; this may take a few minutes.
  • Reduce heat to medium-low, cover, and simmer until tender and liquid is absorbed, this takes anywhere from 15 to 20 minutes depending on tastes and your stove!
  • Sprinkle with fresh cilantro for a little extra flavor.

This is my husband's favorite rice. It took me awhile to finally come up with this version. One can add chicken, tuna, ham, etc., to make it a one dish meal. It is also great for rice patties. The vinegar is traditional in rice in Spain; it keeps the rice fluffy.

2 cups water
1 tablespoon vegetable oil
1 tablespoon minced garlic
2 teaspoons apple cider vinegar
2 teaspoons ground turmeric
1 teaspoon salt
1 cup long grain white rice
1 cup frozen peas and carrots, thawed

Steps:

  • Stir water, vegetable oil, garlic, vinegar, turmeric, and salt together in a 2-quart saucepan. Place a cover on the saucepan and bring the mixture to a boil.
  • Slowly stir rice into the boiling mixture. Replace cover, reduce heat to low, and simmer rice mixture until the liquid is absorbed, about 20 minutes.
  • Transfer rice to a large bowl. Gently fold peas and carrots into rice.

Yellow rice is a beloved dish among many cultural traditions. A staple side in Latin American kitchens, arroz amarillo appears in various iterations across the region. The appeal of yellow rice extends to Central and South Asia, and South Africa, and its brilliant hue achieved with saffron, turmeric or achiote. This version uses widely available and economical ground turmeric, and is a canvas upon which you can incorporate other ingredients and spices. Consider adding a bell pepper to the onion and garlic, or stir in a cup of frozen peas at the very end. The amount of cooking liquid you use depends on the type and quality of your rice, and be mindful to cut down on salt if you use a salted broth. Typically served as a side dish, the dish can also be served on its own.

2 cups white basmati rice (or jasmine rice)
1/4 cup extra-virgin olive oil
1 small yellow onion, finely chopped (about 1 cup)
4 garlic cloves, finely chopped
2 1/2 teaspoons kosher salt (such as Diamond Crystal)
1 teaspoon ground turmeric
3 cups water, chicken broth or vegetable broth for basmati rice (or 2 2/3 cups, if using jasmine rice)
Handful of cilantro leaves, for garnish (optional)

Steps:

  • In a fine-mesh sieve, rinse the rice until the water runs clear, then set aside to drain.
  • In a medium saucepan or pot, heat the oil over medium. Add the onion and garlic, and cook, stirring frequently, until softened and fragrant, about 5 to 7 minutes. Take care not to burn the garlic by reducing the heat slightly if necessary.
  • Add the rice and sprinkle it with the salt and turmeric. Stir to combine, then cook the rice and spices in the oil for about 1 minute. Add the water, bring to a lively boil over high heat and then immediately cover and reduce the heat to low. Cook for about 15 minutes, until the water has been absorbed. Turn off the heat and allow the rice to continue steaming, covered, for another 10 minutes.
  • Gently fluff with a fork or a slotted spatula, taking care not to break too many grains. Garnish with the cilantro, if using, and serve.
