Chocolate Chip-Cherry Bars image

Take the chocolate-cherry combo to the max with these decadent bars, both filled and topped with the delicious pairing. It's a true chocolate-cherry indulgence!

1 jar (10 oz) maraschino cherries
1 cup powdered sugar
1 cup butter or margarine, softened
1 teaspoon vanilla
2 eggs
2 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips (6 oz)
1 cup semisweet chocolate chips (6 oz)
1 cup powdered sugar
2 tablespoons butter or margarine, softened
Reserved cherry juice

Steps:

  • Heat oven to 325°F. Grease bottom and sides of 13x9-inch pan with shortening or cooking spray. Drain maraschino cherries, reserving juice for drizzle; set juice aside. Finely chop cherries; pat dry with paper towel.
  • In large bowl, beat 1 cup powdered sugar and 1 cup butter with electric mixer on medium speed until well mixed. Beat in vanilla and eggs. On low speed, beat in flour, baking soda and salt. Stir in 1 cup chocolate chips and the cherries. Spread in pan.
  • Bake 30 to 35 minutes or until top is golden brown. Immediately sprinkle with 1 cup chocolate chips. Let stand 5 minutes or until chocolate in softened. Spread chocolate evenly over crust.
  • In small bowl, mix 1 cup powdered sugar, 2 tablespoons butter and 2 to 3 tablespoons reserved cherry juice until smooth and thin enough to drizzle. Drizzle over chocolate. Cool completely, about 45 minutes. For bars, cut into 8 rows by 4 rows.

I've been making bars since I was in third grade, but these are special. I bake them for the church Christmas party every year... and folks always rave about them and ask for a copy of the recipe.

2 cups all-purpose flour
2 cups quick-cooking oats
1-1/2 cups sugar
1-1/4 cups butter, softened
1 can (21 ounces) cherry pie filling
1 teaspoon almond extract
1/4 cup semisweet chocolate chips
3/4 teaspoon shortening

Steps:

  • In a large bowl, combine the flour, oats, sugar and butter until crumbly. Set aside 1-1/2 cups for topping. Press remaining crumb mixture into an ungreased 13-in. x 9-in. baking dish. Bake at 350° for 15-18 minutes or until edges begin to brown., In a small bowl, combine pie filling and extract; carefully spread over crust. Sprinkle with reserved crumb mixture. Bake 20-25 minutes longer or until edges and topping are lightly browned. , In a microwave, melt chocolate chips and shortening; stir until smooth. Drizzle over warm bars. Cool completely on a wire rack.

3/4 cup butter or margarine, softened
3/4 cup sugar
1 egg
2 1/4 cups Gold Medal™ all-purpose flour
1/4 teaspoon salt
1/4 cup Jell-O™ cherry-flavored gelatin (from 4-serving-size box)
3/4 cup semisweet chocolate chips
3/4 teaspoon vegetable oil

Steps:

  • Heat oven to 350°F. In large bowl, beat butter and sugar with electric mixer on medium speed until creamy. Beat in egg until well blended. On low speed, beat in flour, salt and dry gelatin until soft dough forms. Press dough in bottom of ungreased 13x9-inch pan.
  • Bake 11 to 14 minutes or until center is set. Cool completely, about 30 minutes.
  • In resealable freezer plastic bag, mix chocolate chips and oil; seal bag. Microwave on High 30 to 45 seconds, squeezing chocolate in bag every 15 seconds, until smooth. Cut 1/4-inch tip from corner of bag; drizzle chocolate over bars. Let stand about 1 hour or until chocolate is set. For bars, cut into 8 by 4 rows; cut each bar in half diagonally to make triangles.

1 can (21 oz) cherry pie filling
2 eggs, beaten
1/2 bag (12-oz size) miniature semisweet chocolate chips (1 cup)
1 container Betty Crocker™ Whipped chocolate frosting

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease and flour 15x10x1-inch or 13x9-inch pan, or spray with baking spray with flour.
  • In large bowl, gently mix dry cake mix, pie filling, eggs and chocolate chips with rubber spatula; break up any undissolved cake mix by pressing with spatula. Carefully spread in pan.
  • Bake 15x10x1-inch pan 23 to 27 minutes, 13x9-inch pan 29 to 34 minutes, or until toothpick inserted in center comes out clean. Cool completely, about 1 hour. Frost with frosting. For bars, cut into 8 rows by 6 rows. Store loosely covered.

1-3/4 cups all-purpose flour
1 cup sugar
1/4 cup baking cocoa
1 cup cold butter
1 large egg, lightly beaten
1 teaspoon almond extract

1 cup chopped almonds

Steps:

  • In a bowl, combine the flour, sugar and cocoa. Cut in butter until the mixture is crumbly. Add egg and almond extract until blended. Set aside 1 cup for topping.   • Combine all the ingredients for the base except the milk in a food processor. Process until finely chopped and the mixture starts to stick together. Slowly add the milk a little at a time until the mixture becomes sticky and forms a ball in the processor.
  • Line an 8x8 baking dish with parchment paper and transfer the base mixture to the dish. Spread the mixture evenly into the corners of the dish pressing down with wet fingers to help spread it out. Place the dish in the refrigerator while you make the middle layer.
  • Combine all the ingredients for the middle layer in the food processor and process until smooth. Remove the baking dish from the refrigerator and pour the cherry mixture on top of the base mixture. Place the dish in the freezer and freeze until set, about 2 hours.
  • Melt the chocolate and coconut oil for the topping in a small bowl and stir until combined. Remove the baking dish from the freezer and drizzle the chocolate over the top with a spoon.

Beat 1 cup whipping cream with electric mixer on high speed until stiff peaks form. Fold whipping cream and cherry pie filling into chocolate-cream cheese mixture until well blended.   • To make the chocolate drizzle: Microwave 1 cup chocolate chips in a microwave safe bowl stirring every 30 seconds until smooth. Drizzle melted chocolate on top of bars.
