ROASTED GARLIC, CHICKEN AND SPINACH WHITE PIZZA



Roasted Garlic, Chicken and Spinach White Pizza image

So amazingly cheesy with just the right amount of garlic. You can save the leftover garlic for later use!

Yield 6 servings

Number Of Ingredients 15

3 tablespoons olive oil, divided
8 ounces boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper, to taste
4 cups chopped spinach
Pinch of crushed red pepper flakes, optional
1 cup ricotta cheese
1/2 teaspoon dried thyme
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 cup yellow cornmeal
1 (13.8-ounce can) refrigerated classic pizza crust
8 (1-ounce slices) fresh mozzarella cheese
1 head garlic
2 tablespoons olive oil
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Preheat oven to 400 degrees F. Cut head of garlic, about 1/4-inch, to expose tops of garlic cloves. Place garlic head, cut side up, in a sheet of foil. Drizzle with olive oil; season with salt and pepper, to taste. Fold up all 4 sides of the foil and cover tightly. Place into oven and roast until cloves are golden brown and tender, about 35-40 minutes. Let cool before squeezing cloves from skin; reserve and mince 8 garlic cloves.* Preheat oven to 450 degrees F. Lightly coat a baking sheet or pizza pan with olive oil. Heat 2 tablespoons olive oil in a large skillet over medium high heat. Season chicken with salt and pepper, to taste. Add chicken to the skillet and cook, flipping once, until cooked through, about 3-4 minutes per side. Let cool before dicing into bite-size pieces. Heat remaining 1 tablespoon olive oil in the skillet. Stir in spinach until wilted, about 2-3 minutes; season with red pepper flakes, salt and pepper. Set aside. In a small bowl, whisk together ricotta cheese, thyme, oregano, basil and reserved garlic cloves; season with salt and pepper, to taste. Working on a surface that has been sprinkled with cornmeal, roll out the pizza into a 12-inch-diameter round. Transfer to prepared baking sheet or pizza pan. Top with mozzarella, dollops of ricotta mixture, chicken and spinach. Place into oven and bake for 15-20 minutes, or until the crust is golden brown and the cheeses have melted. Serve immediately.

A quick and easy dinner that can be thrown together in a matter of minutes using pre-made ingredients. With white sauce, grilled chicken, and loaded with veggies, it's a hit with kids AND adults.

1 (16 ounce) refrigerated pizza dough
1 pound grilled chicken (sliced into small pieces)
1 cup Alfredo sauce
1 cup baby spinach (washed and chopped thin)
2 Roma tomatoes (finely chopped)
1 green pepper (finely chopped)
Chopped onion, optional topping
2 cups Mozzarella Cheese
Parmesan cheese, for topping
Olive oil, for topping
Garlic salt, for topping

Steps:

  • Roll out pizza dough according to directions on package (mine was on a 15x10x1" baking sheet) and cook for about 5 minutes at 375 degrees (if the directions differ on your pizza dough packaging, follow those directions instead).
  • Take pizza dough out of oven and spread Alfredo sauce over the entire top of dough. Sprinkle cheese, toppings, and chicken over the top of the sauce.
  • Brush some olive oil (a used not quite a tablespoon) around the crust edges and sprinkle with Parmesan cheese and garlic salt (I also sprinkled the entire pizza with a little bit of Parmesan cheese and garlic salt).
  • Put pizza in oven and bake for another 10 minutes (or until cheese is melted and crust is done).

I created this recipe for my husband who loves BBQ flavored pizza and he absolutely loved it. We basically tried a variety of pizzas and made a list of the ingredients that were working well together and the ones that weren't and here we are.

¼ cup olive oil
1 red onion, sliced
6 slices bacon
1 (10 ounce) container refrigerated pizza crust
¾ cup barbeque sauce
2 cooked chicken breast halves, shredded
¼ cup crumbled Gorgonzola cheese
1 jalapeno pepper, seeded and diced, or to taste
1 tablespoon paprika
1 tablespoon garlic powder
2 cups shredded mozzarella cheese

Steps:

  • Heat the oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more.
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate; crumble when cool.
  • Preheat an oven to 425 degrees F (220 degrees C). Grease a baking sheet.
  • Press the refrigerated pizza crust onto the baking sheet to fit the size of the pan. Spread the barbeque sauce evenly over the dough, and sprinkle with the shredded chicken, caramelized onion, bacon, Gorgonzola cheese, and diced jalapeno pepper. Season with paprika and garlic powder. Top with the shredded mozzarella cheese.
  • Bake in the preheated oven until the cheese has melted and is bubbly and the pizza dough is golden brown on the bottom, 15 to 17 minutes.

I decided to combine my love for pizza and my husband's favorite meal, Chicken Parmesan. It was easy and delicious and is definitely a keeper in my book!

1 (13.8 ounce) can refrigerated pizza crust
½ cup marinara sauce
2 cups Kraft Italian blend cheese
8 breaded chicken strips (cooked and sliced)
1 Tablespoon Italian seasoning

Steps:

  • Heat oven to 400 degrees.
  • Roll dough onto a greased cookie sheet and use a rolling pin to reach desired thickness.
  • Spread marinara on top of dough.
  • Sprinkle on cheese, chicken and Italian seasoning.
  • Bake for 18-20 minutes or until the crust is golden brown.
