LAMB STEAKS WITH HUMMUS NEW POTATOES

Steps:
- Cook the potatoes in boiling salted water for 15 mins or until tender. Meanwhile, heat the grill or a griddle pan. When the potatoes are almost ready, season the lamb steaks, rub with a little oil, then griddle or grill for 3-4 mins on each side until they are cooked to your liking, adding the tomatoes halfway through until juicy and bursting.
- When the potatoes are ready, drain well, then return to the pan and gently crush with a fork or potato masher. Stir through the hummus, olives and parsley, then season well. Serve the crushed potatoes with the lamb and the tomatoes.

Steps:
- Cut potatoes in half and saute them in butter in a heavy, nonstick, large saute pan, Dutch oven or electric skillet, until golden and beginning to crisp on the outside, about 25 minutes.
- Add the rosemary and scallions to the pan and stir well.
- Saute contents gently for another 10-15 minutes or until potatoes are tender.
- Season, to taste, with salt and pepper and serve warm.

- Cook the new potatoes in a large pan of boiling water until tender, about 10 minutes, depending on size.
- Drain thoroughly and set to one side.
- Pour the oil into a small bowl add the finely grated zest and juice of the lemon and the honey. Whisk.
- Using the end of a rolling pin or a large wooden spoon, roughly crush the potatoes, not so they are completely broken up but just enough so their skins split and the flesh is exposed so it soaks up some of the dressing.
- Finely chop the red onion and sprinkle over the potatoes.
- Chop the mint and crumble the feta and add to the potatoes, drizzle over the dressing and toss to mix, season well with black pepper and salt if desired, not forgetting the feta can be a bit salty.
- Serve with salad leaves.

- Scrub and wash the new potatoes and place into a saucepan. Cover with the water and then add the rest of the ingredients, except the butter and final seasoning.

- Place potatoes in a large stockpot and fill with water until the potatoes are covered. Bring to a boil over high heat. Then reduce heat to medium and simmer for 20-30 minutes, or until a fork will go gently through the potatoes. Remove from heat and drain the water.
- Return pot to the burner. Pass potatoes through a food mill or ricer, or use a potato masher to mash the potatoes until smooth. Turn off heat, and add in butter, hummus, salt, and pepper. Stir until combined. Season with additional salt and pepper if needed. Then top with garnishes if desired.
