HULA PIE RECIPE BY TASTY
Our version of hula pie, a Hawaiiian-inspired dessert, is made with the traditional chocolate cookie crust and coffee-flavored ice cream loaded with macadamia nuts. Using a bowl and softened ice cream, we freeze the ice cream into a dome shape, then invert it onto the crust for a dessert that is as tall as it is delicious. It's all topped with a rich chocolate fudge sauce and served with homemade whipped cream and more toasted macadamia nuts for added crunch.

Steps:
- Make the crust: Add the chocolate sandwich cookies to a food processor and process into fine crumbs.
- Add 2 tablespoons of butter to a medium microwave-safe bowl. Microwave until melted, about 30 seconds.
- Add the cookie crumbs to the melted butter and stir until well combined.
- Transfer the cookie crumb mixture to a 9-inch pie pan and use a flat-bottomed measuring cup to pack tightly against the bottom and sides of the pan. Freeze overnight.
- Make the ice cream dome: Remove the ice cream from the freezer and let soften for 5-10 minutes. Transfer the ice cream to a large bowl and stir until it reaches a thick, frozen yogurt consistency. Add ½ cup of the macadamia nuts and mix until well combined.
- Line an 8-inch bowl with plastic wrap and grease with nonstick spray.
- Scoop the ice cream into the prepared bowl and smooth the top. Cover and freeze overnight.
- Remove the ice cream dome and chocolate cookie crust from the freezer. Unwrap the bowl with the ice cream and carefully place upside-down over the crust. Remove the bowl and plastic wrap. Freeze again while you make the fudge sauce.
- In a small saucepan, combine the remaining 2 tablespoons butter, ⅔ cup cream, the corn syrup, brown sugar, cocoa powder, and salt. Bring to simmer over medium heat and cook for 3-5 minutes, stirring constantly, until the butter melts and the mixture is smooth. Remove the pan from the heat and add the chocolate chips and vanilla. Stir to melt the chocolate chips. Chill the fudge sauce in the refrigerator for 60 minutes before using.
- Spread about 1 cup of the cooled fudge sauce over the ice cream dome. Freeze again until the fudge is firm, 30 minutes.
- Make the whipped cream: Add the remaining cup of heavy cream and the powdered sugar to a large bowl. Whip with an electric hand mixer on high speed until medium-stiff peaks form, about 1 minute.
- Remove the pie from the freezer and cut into 6 slices. Garnish each slice with whipped cream and the remaining macadamia nuts.

DUKE'S HULA PIE RECIPE (COPYCAT)
This Hula Pie is just like the original from Duke's without the expensive flight to the islands! It's like having a little slice of Hawaii in your home.

Steps:
- Prepare Oreo pie crust and place in freezer. Remove ice cream from freezer and allow to soften for 10-15 minutes. You do NOT want it to melt so keep a close eye on it.
- When the ice cream has softened enough to remove from the container, place it in a stand mixer bowl along with the dough hook attachment. Turn mixer to "low" and allow the ice cream to be mixed until it reaches a thick frozen yogurt consistency. Add coconut extract and macadamia nuts and mix for another minute or so.
- Find a mixing bowl where the rim will easily fit inside the Oreo pie crust (if using a 9" pie crust, find a bowl where the rim is under 9"-- remember you will be placing the bowl upside down inside the crust). Line the bowl with plastic wrap, spray with cooking spray, and scoop ice cream into the bowl. Cover and freeze overnight.
- Remove ice cream and Oreo crust from freezer. Carefully place the bowl upside-down over the crust and pull at the plastic wrap until ice cream settles onto the crust.
- Remove bowl and plastic wrap from ice cream.
- Spoon fudge topping over the ice cream "dome" (do not heat the fudge-- you don't want it to melt the ice cream. If you must heat to soften, only do it for a few seconds until soft enough to remove from the container) and spread evenly until ice cream in covered in fudge. Freeze again until fudge becomes firm.
- Remove from freezer and cut into slices. Top each slice with whipped cream, hot fudge (it's ok for this fudge to be hot), and macadamia nuts.

DUKE'S HULA PIE
This is an imitation of the real thing, which can be had at Duke's Canoe Club on Oahu. My family always makes it a point to grab a huge slice (each) of this! Adaptation from Lynn & Rick Carlton.

Steps:
- Bring topping to room temperature.
- Crush macadamia nuts.
- Scoop ice cream into bowl and mix in crushed macadamia nuts.
- Scoop ice cream into pie shell, smoothing into mound (it needs to be a ridiculous 6-8" high at center).
- Warm a bit of milk and use it to dilute the chocolate topping, then use a warmed knife to spread chocolate topping over mounded ice cream.
- Place in freezer until ready to serve.
- HINT: Cover top of pie with whipped cream design before serving.

- Grind cookies to the consistency of ground coffee. Blend in butter. Press firmly onto the bottom of a 9-inch springform pan or cake pan. Freeze until hard.
- Soften ice cream until you can mold it with a spatula or large "putty knife." Fill cake pan evenly, molding an even dome of ice cream. Freeze 4 hours or until very hard. Spread with dark fudge topping (use hot water to smooth it) as thick as you like. Freeze for 1 hour, unmold, cut with hot, wet knife and garnish with nuts and whipped cream.

HULA PIE
This copycat Hula Pie is a favorite every time we are in Hawaii. Now you can make it from the comfort of your own home when you're missing your favorite island! ;)

- Preheat oven to 325 degrees.
- In a small bowl, mix together oreos and butter and press them into the bottom of a greased 9" pie pan. Bake for 10-12 minutes. Remove from oven, and let it cool completely.
- In a large bowl, mix together softened vanilla ice cream and macadamia nuts. Pour ice cream mixture into pie pan, then top with drizzled hot fudge, whipped cream, and a few more macadamia nuts.
- Place in the freezer for 3-4 hours, letting it thaw for about 5-10 minutes before serving (that will make it a lot easier to cut!).
