1 cup sugar
1/4 cup butter
3/4 cup heavy cream, whipping
ice cream, of your choice
Hershey's Hugs chocolates, chocolates with almonds
hershey's chocolate kisses with almonds
whipped topping
maraschino cherry

Steps:

  • SAUCE:.
  • Stir in sugar and butter in a saucepan over low heat until caramel-color; about 10 minutes.
  • Heat cream until warm.
  • Slowly stir in cream.
  • Boil 1 minute to thicken.
  • Let cool.
  • TO ASSEMBLE SUNDAE:.
  • Put scoops of ice cream into a bowl.
  • Drizzle with 2 tablespoons caramel sauce; sprinkle with hershey's candy.
  • Top with whipped topping and a cherry.

3 scoops friendly's forbidden chocolate chocolate ice cream (any other chocolate ice cream would also work)
1/4 cup hot fudge
1 tablespoon chocolate sprinkles
whipped cream (homemade or canned)

Steps:

  • Heat hot fudge to taste.
  • When fudge is hot, put ice cream in serving dish or bowl.
  • Top with hot fudge.
  • Dollop on whipped cream.

VOLCANO ICE CREAM SUNDAE

Another cooking class recipe. This recipe is a real show. One of those "ooh" and "ahh" kinda recipes. Enjoy! Also, it's been suggested that you could possibly make individual volcanoes with paper cups filled with ice cream and following the technique below. (All ingredients are estimates. Sorry, this is just one of those as much as you think kind of recipes)

5 quarts pail ice cream (vanilla or your choice)
12 ounces magic shell chocolate fudge topping
11 1/2 ounces hot fudge (not too thick)
4 sugar cubes
1 teaspoon lemon extract (orange extract works too)
4 maraschino cherries

Steps:

  • Run a knife around the edge to get the ice cream out in one piece. You may have to dip the container in hot water.
  • Place ice cream upside down on a platter.
  • Cut sharp edges from the top and sides to slope the ice cream in the shape of a mountain.
  • Pour shell over the top. Let harden and then add hot fudge (this will run off the mountain and give the lava flow effect to around the bottom of the volcano).
  • In a little bowl, take 3 or 4 sugar cubes and pour lemon extract over the cubes.
  • Open 3 or 4 cherries and stick one of those sugar cubes in each one.
  • Put the sugar cube/cherry in the center on the top of chocolate covered "volcano".
  • Light sugar cubes with a match to set fire.
  • Voila!

3 (12 ounce) bottles root beer (I use diet)
1/4 cup sugar (I use Splenda)

Steps:

  • Bring root beer and sugar (or Splenda) to a boil in heavy medium saucepan over high heat.
  • Reduce heat to low and simmer for 45 minutes or until mixture has reduced by 3/4 and is syrupy.
  • Remove from heat and allow syrup to cool to room temperature.
  • Serve on top of vanilla ice cream.( I use no sugar added ice cream).
  • Serving suggestion: top with crushed hard root beer candy, whipped cream and a cherry.
  • I think I shall try this with Diet Orange Cream Soda also!

This is my take on a recipe by Chef Andrew Sutton....his is so much more complex. I broke this down into many steps for ease of understanding but it is really a simple preparation.

19 7/8 ounces brownie mix
3 1/2 cups fresh strawberries, cleaned and sliced, divided
1/2 gallon low-fat vanilla ice cream, soften
1/2 cup caramel sauce
1/2 cup chocolate syrup
1/4 teaspoon vanilla extract
1 teaspoon lemon juice, fresh
1/8 teaspoon salt
1/2 cup sugar, substitute*

Steps:

  • Prepare brownie mix following package directions or make your own. Do not add any extra ingredients, such as nuts or chips.
  • Bake and set aside to cool.
  • In small saucepan, place 1 cup strawberries, sugar, vanilla, juice, and salt.
  • Bring to a boil for 2 minutes, then pour over 21/2 cups of sliced strawberries and allow to macerate for about one hour.
  • Cut brownies into bite-size cubes.
  • In bottom of clear glass bowl, place 2 cups of strawberries. Follow with the cubed brownies.
  • Add 1/2 half of the soften ice cream over brownies and spread to seal.
  • Place bowl in refrigerator or freezer until ice cream is firm (freezing is not needed).
  • Drizzle caramel sauce over top.
  • Add rest of ice cream, sealing top.
  • Drizzle chocolate sauce over top. Freeze.
  • When ready to serve, top with rest of berries and some whipped topping as desired.
  • * Make sure to read box for directions as to how much equals 1/2 cup.

2 cups great value ice cream (Cowmooflage)
1 eggs, yolk discarded or 1/4 cup egg white
2 cups corn flakes, finely crushed
1 tablespoon sugar
1 teaspoon cinnamon
vegetable oil (for frying)
1 cup whipped topping
1 1/3 cups pineapple tidbits
1 1/3 cups raspberries

Steps:

  • Line a rimmed baking sheet with plastic wrap.
  • Using a scoop, place 4, ½-cup balls of ice cream onto the prepared baking sheet. Freeze for 1 hour. Once hardened, shape ice cream with hands to round out bottoms.
  • Whisk egg white until frothy in a medium bowl. Place Corn Flakes in a shallow dish. Dip ice cream in egg to coat completely and then coat in corn flakes. Return to prepared pan and freeze for 4 hours.
  • Stir sugar and cinnamon in a small bowl.
  • Heat 2 inches of oil in medium, heavy-bottomed saucepan to 375⁰F. Add ice cream in batches of 2 and fry for 15 seconds, turning gently with a slotted spoon. Remove with slotted spoon.
  • Remove and place in 4 bowls, adding a ¼ cup of whipped topping on each. Distribute pineapple and raspberries evenly among the bowls. Sprinkle each sundae with 1 tsp cinnamon sugar.
  • Tip: To make this dish even more authentic, drizzle with chocolate sauce and dulce de leche.
