PEACH MOONSHINE
This Peach Moonshine is one of my favorite cocktails!

Steps:
- In a large pot, bring juice, peaches w/ syrup, sugar, and cinnamon sticks to a boil.
- Reduce heat and simmer for 45 minutes.
- Remove from stove and allow mixture to cool to room temperature, then add the peach schnapps and grain alcohol. **CAUTION: Do not add alcohol near a flame or heat source. It is highly flammable. Make sure mixture is completely cooled before adding alcohol.
- Stir well, then pour through a strainer layered with a cheesecloth to remove peaches and any pieces of the cinnamon sticks.
- Divide peaches and cinnamon sticks evenly between the jars.
- Ladle moonshine into clean mason jars, leaving a 1/2 inch head.
- Place lids on jars and allow to sit in a cool, dry place for 8 weeks before enjoying.

Peach Cobbler Moonshine is a tasty cocktail with fresh peaches, warm cinnamon & two different alcohols. It's perfect for football games and hunting season.

Steps:
- Add juice, brown sugar, peaches and cinnamon sticks to a large pot.
- Bring to a low boil and boil 3 to 4 minutes or until brown sugar is dissolved.
- Allow to sit until room temperature.
- After mixture is cool, add Everclear and peach schnapps and stir.
- If you're serving within 24 hours, pour into an airtight container and refrigerate.
- If you're allowing to sit a couple of days before serving, strain peaches and reserve peaches for a cobbler or cake. Pour liquid into an airtight container and refrigerate.
- Serve over ice with a garnish of peach and sprig of mint.

I've been experimenting with cobbler for some time and this recipe is the final result. Loved by all. Use fresh Georgia peaches, of course!

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
- Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

- Preheat oven to 375°. Place peaches in a greased shallow 2-1/2-qt. Dutch oven, cast-iron pan or 2-1/2-qt. ovenproof baking dish. In a small bowl, combine brown sugar, flour, lemon juice, zest and cinnamon; sprinkle over the peaches. , Combine flour, sugar, baking powder, salt and nutmeg. - In large pot, combine juice, sugar, sliced peaches, cinnamon sticks and 1/2 cup of Schnapps. Bring to boil, reduce heat and let simmer on medium low for 30-45 minutes covered.Remove from heat and let cool to room temperature. Add Everclear, vanilla vodka and other 1/2 of peach Schnapps. Pour into mason jar with one of cinnamon sticks and peach slices from mixture. Refrigerate for at least a week. Drink over ice or as shots for party. Moonshine will mellow over time, so let sit for at least a week. Your patience will be rewarded.
